Today  I found  some great German (almost) bratwurst at my grocer’s. Good looking, fresh and at $6.00 bucks for a pack of five, who could say no…..
At first I wanted to prepare them in the typical German style, sautéed or grilled whole, served with a leaf salad, potato salad and mustard on the side. But then I realized that I am more in the mood for a big bowl of composed salad, so this rustic beauty is what resulted.
Verdict : Prepared this way is much better than served the traditional way 🙂

Curried Garbanzo And Potato Wrap With Raita

Curried  garbanzos (chickpeas) are one of my favorite snacks. They are quick and easy to prepare and their heat (add as much chile flakes or cayenne pepper as you can handle) makes for a great snack when boring pretzels just won’t do.
Today I prepared one of the hybrids of curried garbanzos I make on hot days – curried garbanzo salad, this time wrapped in sun dried tomato wraps.
As a general rule, when preparing curried garbanzos to be served hot, I add more ghee, about 4 tblsp for 16 oz of garbanzos. If serving as a cold (room temperature) salad, I reduce the amount of ghee by 3 tblsp and replace with that 2 tblsp mayo and 1 tblsp ketchup.

While  ” Just A Salad ” usually does not do it for me, this one certainly did 🙂
Consisting of just a few simple ingredients, the quality and richness they possessed made this a complete, delicious and utterly satisfying meal.
The tomatoes were super ripe and super sweet, the cucumbers crispy and fresh, the sprouts added a new texture and the parmigiano reggiano was as perfect as can be.

Steak Salad – Just A Bit Different

We  have come to expect a steak salad to be mostly beef and greens, usually with an afterthought of a few cucumbers, tomatoes and onions thrown in. (Myself – guilty) 🙂 😦
So today I went into a different direction, with a salad of pickled artichokes, sliced red onions, diced tomatoes, black beans and garbanzos in a delicious sweet chili, garlic confit and cilantro vinaigrette .
The result was a spectacular dish, outstanding in looks, taste and texture.
Definitely a permanent addition to my personal repertoir.

When  you decide to make tostadas, the biggest decision will be if you want to prepare  your own tortillas and fry them to a flat crisp or buy packaged tostada shells, which you can buy in any supermarket nowadays’, most of excellent quality. After that, the most sensible thing is to put the tostadas on a platter in the center of the table, arrange all the toppings in bowls around them and let everybody assemble their own favorite. Traditionally, refried beans, cotija cheese, a simple salsa and sometimes seafood are the main ingredients/toppings.
But, as you can imagine, tostadas, like most other dishes with a long culinary history, have evolved and advanced to be more adventurous and varied. Anything you fancy is allowed to grace your tostada, as long as it is delicious and makes you smile 🙂
Refried beans, shredded lettuce, sour cream, any cheese, any seafood, sausage, meat, grilled vegetables, any salsa, guacamole, etc, etc.
I happened to have some fresh Swai fillets at hand as well as white cabbage for a tasty cabbage slaw.  Added some guacamole, salsa Mexicana and a bit of sour cream and BINGO ! – exiting lunch served in a snap 🙂

It is a bit more labor intensive than the usual culprit of a couple of slices of cheese slapped between two slices of wonderbread, but the extra few minutes it takes to prepare are absolutely worth it 🙂

Toast two slices of the bread on one side only.

Spread mayo on the un-toasted sides of the 2 slices bread which were toasted on one side only.

Brush garlic oil on the two toasted sides of the bread which were toasted on one side only.

Toast one slice bread on both sides.

Spread mustard on both sides of the bread with was toasted on both sides.

Slice the cucumber and tomato thinly, season with kosher salt and cayenne pepper.

To assemble, place one slice of the bread with the mayo and garlic with the mayo-side down on the work surface.

Add a generous amount of grated cheese.

Add the cucumber slices, sprinkle with grated cheese.

Add the tomato slices, sprinkle with grated cheese.

Top with the slice of bread with the mustard on both sides.

Add a generous amount of grated cheese.

Top with the second slice of the bread with the mayo and garlic, mayo side up.

Grill or griddle very slowly on one side until golden, turn, cover and cook on the other side until golden and all cheese has melted.

Once  in a while my friends honor me with gift’s of food 🙂
The gift of choice used to be booze, but nowadays I don’t drink alcohol, so the generosity now manifests itself with gifts of special, sometimes hard to come-by  food 🙂
Last week Dieter brought me two bags with original German-made weisswurst and bratwurst.
Yesterday, Rubelio and his wife Maria gave me fresh organic raw honey from their own bee hives, honey comb and all.
So, thinking like any normal person, the first dish to prepare with fresh honey that came to my mind was shrimp/potato salad 🙂
Maybe a bit unusual, I admit – but I like to make this great dressing with mayo, yogurt and honey, so there it was – my honey-segway.

Today  I got up early (7.00 am) and was determined to do exactly as I had planed last night – sort-out long overdue paperwork, do some spring cleaning, walk for hours with Bella on the beach and eat nothing but salad and fruits.
Well, I guess all of this will have to wait at least another day 😦
I did neither of the housecleaning chores I had planed for today and the walks were a few half-hour walks around the neighborhood instead of hours on the beach. Most significant, I naughtily ignored all my good intentions to eat sensible. Rather, I had blueberry waffles for breakfast, naan pizza for lunch and pork chops with penne and mustard sauce for dinner. While the food was spectacular, so was the rise in my blood sugar level. Tomorrow – salad and fruits only……….

If  you never tried  Panzanella, chances are that a dish using stale bread is on the bottom of your “must try this” list.
After all, nowadays stale bread is usually used either for bread pudding, bread dumplings, or, most likely of all – thrown into the garbage bin.
Now, I have to admit that most bread you can buy is best thrown away after a few days, since it was nothing special to begin with. But if you are a fan of really good bread, it would pain you to throw away some of it just because it has survived a few more days than usual and has become a bit stale. If this happens in my kitchen, I usually slice the bread thick and grill it, which will revive it beautifully and will give a loaf at least another 4 days of good use.
Or, surprise surprise – I’ll make  Panzanella.
The first written recipe for  Panzanella dates to the 15th century. Originally, stale bread was soaked in water, onions added, then dressed with olive oil, salt and vinegar. This eventually morphed into the modern  Panzanella through the addition of cucumbers and, later-on, tomatoes.
Later still, lettuce, olives, mozzarella, white wine, capers, anchovies, celery, carrots, red wine, red onion, cucumber, tuna, parsley, boiled eggs, mint, bell peppers, lemon juice, and garlic were sometimes added, although traditionalists still prefer the simple version of soaked bread, onions, olive oil, salt, tomatoes and sometimes fresh basil.
If I prepare  Panzanella as a main dish, I usually add boiled eggs, anchovy fillets, capers, garlic paste, roasted marinated peppers and lots of chives and fresh basil and oregano. I don’t soak my Panzanella  in water but rather in a generous amount of dressing of good olive oil, white balsamic vinegar, kosher salt and freshly ground black pepper. I let the salad sit for at least 30 minutes before I dig into it, by which time the dressing has been soaked up by the bread. Usually, I over-eat on this stuff because once I start, I can’t stop until it’s all gone 😦 🙂
However, since I had grilled pork chops with this one, I kept it simple and used only bread, onions, cucumbers, tomatoes, basil and dressing. What a wonderful meal this was…….
So, I hope that next time you have some good, rustic bread which has seen better days, you will give this delicious dish a try 🙂
