The key to the success of this dish are, as usual, the best quality ingredients you can find and afford.

P.S.
Please don’t shy back from the whole garlic cloves confit – they are slowly cooked in duck fat until VERY mild and VERY soft.
While eating, mash them with your fork or knife into the cheese and tomatoes (a bit of interaction there) 🙂
But, if you must, puree them into the dressing 😦

Today,  let’s make a salad that is both full of flavor and easy to prepare.
Curried lentils are of course one of my favorite lentil recipes, served either hot or cold (vinaigrette added), by them self as salad or as a sexy side dish (again, either hot or as salad). And tandoori chicken?- well, anytime, please 🙂
While I don’t have a tandoori oven in my kitchen (neither do you, I guess), cooking the chicken without fat in a VERY hot cast iron pan will give satisfying, similar results.

This  beauty of a salad will conclude Week One of “Hans’ Lighter, Healthier Comfort Food” meal plan. (There will be an initial 4 week plan)
For everybody not yet interested in a bit of a healthier lifestyle, I suggest you try this salad anyway. Healthier and lighter food in my case does certainly not mean tasteless and boring. 🙂  (As is the case with so many other lifestyle food suggestions out there) 😦
Now, I understand that sardines are not everybody’s favorite seafood, but as usual, feel free to replace them with the seafood of your preference, such as shrimp, lobster, sole, salmon, clams, mussels, scallops, crab meat, etc.

P.S.
So far I have lost 12 lbs in two weeks of “Hans’ Lighter, Healthier Comfort Food” meal plan.
I feel much better, sleep much better and on top of all the benefits of living a bit more on the sensible side of life, I eat as much as I want. (Except on the two days of the week which allow me a dinner of anything I crave, although in much smaller portions).

Today  is one of the few days when I don’t feel like cooking at all. I had store-bought brownies and coffee for breakfast, I will have Brie sandwiches for dinner and my lunch was this simple, albeit delicious and sexy, salad.
Conclusion: Even without the pleasure of cooking every single day, I will survive 🙂

Easy Does It # 13 – Asian Style Pickled Cucumber Ribbons



This  is one of the most ingenious, simple, delicious, economical and pretty dishes out there.
Serve it as side dish, part of a fancy or simple salad, or as a snack.
Season it mild, medium or fiery hot.
Either way, I am sure you will love it and it may even become one of your go-to standby’s. 🙂

Calamari Rellenos – Stuffed Fried Squid

The  first time I ate this dish was in 1974 in Vigo, Spain. I was in Spain for the very first time and I fell head over heels in love with the country, the food, the wine, the culture, the music and, of course, the women 🙂  I remember many things from these first visit’s to this beautiful, fascinating country. However, what stands out from all these memories is my first lunch with friends at a small restaurant on the pier in the port of Vigo. Most of my friends had fried calamari, the way we were all  familiar with, fried breaded rings which are probably the most widely known calamari dish of all. I however wanted to try something I never had before, so I ordered the “Calamar Relleno”.
To this day I can recall the platter that was served to me and how much I admired the dish, so much richer and tasty compared to the fried rings I was used to. They were served with a simple salad and lemon wedges. No fancy sauce, garnish or other fru fru that would have destracted from the wholesomeness of this amazing dish.

Jägerschnitzel Mit Nudeln Und Romaine (Hunter’s Schnitzel With Noodles And Romaine)


Today  was the first time in four year’s that something actually went my way, unconditionally and perfect. A feeling of relief not experienced for such a long time.
To celebrate, I prepped for myself this comforting, traditional Swabian dish of Jägerschnitzel, something I grew up with and although simple and down to earth, still gives me great pleasure and culinary satisfaction 🙂
