This  beauty of a salad will conclude Week One of “Hans’ Lighter, Healthier Comfort Food” meal plan. (There will be an initial 4 week plan)
For everybody not yet interested in a bit of a healthier lifestyle, I suggest you try this salad anyway. Healthier and lighter food in my case does certainly not mean tasteless and boring. 🙂  (As is the case with so many other lifestyle food suggestions out there) 😦
Now, I understand that sardines are not everybody’s favorite seafood, but as usual, feel free to replace them with the seafood of your preference, such as shrimp, lobster, sole, salmon, clams, mussels, scallops, crab meat, etc.

P.S.
So far I have lost 12 lbs in two weeks of “Hans’ Lighter, Healthier Comfort Food” meal plan.
I feel much better, sleep much better and on top of all the benefits of living a bit more on the sensible side of life, I eat as much as I want. (Except on the two days of the week which allow me a dinner of anything I crave, although in much smaller portions).

Grilled Portuguese Sardines

During  the time Maria and I were living in Madeira, Portugal,  we usually had grilled sardines at least twice a week. There was this beautiful restaurant, built into a cave in the rock’s below our apartment building, just a three minute walk, which served these wonderful, fresh, juicy, tasty sardines off a wood fired grill. Adorned with just lemon wedges, a small green salad with onions and rustic sour dough bread, this was the perfect meal every time and I remember them very fondly, both for the great food, as well as the romance the surroundings provided to Maria and I.
I usually had all my dinner’s in Madeira with a bottle (or two) of Gatão Vinho Verde, while Maria usually stuck to her diet coke.
While shopping for food on saturday, I came across these great looking (frozen) Portuguese sardines and I just had to get them. I prepared them the way they are usually prepared in simple restaurant’s and homes by the sea – some sea salt inside and out, brushed with olive oil and quickly grilled or sauteed. Then a squirt of lemon or lime and voilà – sardine heaven.

Tv  snacks at 4.00 pm.
Seafood & artichoke – canapés, iced tea and “The Great Gatsby” on the screen.
Toasted bread, garlic & herb butter, “Iberia” octopus, “Iberia” marinated mussels,
“Vigo” artichokes, “Vigo anchovies with capers and “Beach Cliff” spicy sardines.
– Sometimes, a simple sandwich just won’t do 🙂

” Seafood Salad “

seafood  you ask ? 

If it is not fresh it doesn’t hit my plate you say ?

Of course, I agree that fresh seafood is heaven on earth
when properly prepared, But sometimes in the real world
you come home late and want something tasty and don’t
feel like cooking. Here is what I did last night :

The result ?
A great salad done in 10 minutes ( Hard boiled egg‘s take their time )


Ingredients:

Fresh / canned seafood of your liking  (What’s in your cupboard)
Cucumber, salted for 5 minutes, rinsed
Hard boiled egg’s, diced
Radish, julienned
Bell peppers, julienned
Chilies, julienned
Garlic, paste
Parsley, chopped

Dressing:

Olive oil
Lemon juice
Raspberry vingar
Kosher Salt
Cayenne Pepper
Maggi Seasoning
