Catalan Shrimp & Mussels Stew

Catalan Shrimp & Mussels Stew

>
Chances
are that if you love seafood and have traveled in Spain, especially in the provinces of Barcelona, Girona, Lleida, and Tarragona, you have at one point or another had an encounter with the dish featured here. It represents the philosophy of both old and new cooking styles one finds all over this area and in fact, in most parts of the Mediterranean coastline – a few first-class ingredients cooked without fuss and pronto- Life is Good !
A wonderful meal, ideally shared with great company and a glass (or two) of the local wine, and, if on top of that you are lucky enough to sit in a cozy little restaurant by the sea, life is as good as it gets.
Somebody gifted me with a small bag of mussels on Sunday, which by itself would have made a great appetizer. But because I always have shrimp in the freezer (today I had two different types,  small/ peeled,/ tail-off and large/ tail-on), and because I wanted to have something a bit more substantial for dinner, I thought this seafood stew would do the trick. And indeed, it did 🙂
Great taste, easy on the eyes and a snap to prepare, both Bella and I were completely happy with the way this turned out 🙂

Bon Appétit !   Life is Good !
>
P.S.
Since I don’t drink/use alcohol, I have started to use apple cider as a substitute where wine is called for.
Works out great for most dishes, both in the food and with the food 🙂 Cheers !

Seafood Salad

>
>
This  afternoon I went to my fishmonger with the intention to get a fresh trout or a small snapper for a light dinner of fish and salad. What I came away with instead were the following:
Caviar, snow crab legs, king crab legs, clams, mussels, shrimp and crayfish. A short trip to the grocer for some endive, iceberg, grissini and a lemon, then five minutes of preparation and BINGO ! – best meal of the month 🙂

P.S.
I got a bit carried away with the amount of pictures here, but this stuff is just too sexy and beautiful not to show off and drool over 🙂

P.P.S.
If you wonder why there is no “fru fru” on this dish – I believe these beauties need no embellishment other than them self.

Salad Portuguese

H'LHCF Logo?
?
This  beauty of a salad will conclude Week One of “Hans’ Lighter, Healthier Comfort Food” meal plan. (There will be an initial 4 week plan)
For everybody not yet interested in a bit of a healthier lifestyle, I suggest you try this salad anyway. Healthier and lighter food in my case does certainly not mean tasteless and boring. 🙂  (As is the case with so many other lifestyle food suggestions out there) 😦
Now, I understand that sardines are not everybody’s favorite seafood, but as usual, feel free to replace them with the seafood of your preference, such as shrimp, lobster, sole, salmon, clams, mussels, scallops, crab meat, etc.

P.S.
So far I have lost 12 lbs in two weeks of “Hans’ Lighter, Healthier Comfort Food” meal plan.
I feel much better, sleep much better and on top of all the benefits of living a bit more on the sensible side of life, I eat as much as I want. (Except on the two days of the week which allow me a dinner of anything I crave, although in much smaller portions).

Finkenwerder Meeresfrüchte Suppe – Seafood Soup Finkenwerder Style

Finkenwerder is part of Hamburg/Germany, famous (culinary wise) for its seafood restaurants. When I was a young cook back in the seventies, I worked part time in one of them (the name escapes me now) The restaurant was very elegant, expensive and beautiful. I remember many of the specialties we cooked there but the one outstanding dish I remember in particular was the
Finkenwerder Meeresfruechte Suppe – Seafood Soup Finkenwerder Style
A creamy soup made of roux, a bit of tomato paste, seafood stock, cognac and lots of cream, chock-full of mussels, shrimp, cockles( herzmuscheln) and scallops. Pure heaven in a bowl for seafood lovers, then and now 🙂

Saute fine diced onions in butter, add flour to make a blond roux, add a bit of tomato paste, saute another minute, add fish stock and simmer for 15 minutes, add cream and cocnac, simmer another few minutes, season with seasalt and cayenne pepper, add blanched seafodd, carefully stir and remove from heat

Chirashizushi (Scattered Sushi) (ちらし寿司

>
>
I am  trying today to continue with my quest for a healthier living.  After a substantial, healthy breakfast,  I decided that sushi will be light and healthy enough. Usually I would have been right, but there was a problem – I, as usual, was so looking forward to it that I prepared way too much and therefore ate too much, as usual 😦
But boy, was it worth the sin 🙂

The “Chirashizushi” included:

Lobster, crayfish, crab legs, octopus, mussels, shiitake mushrooms, avocado, cucumber, nori, black sesame seeds, egg, scallion, sushi rice.
