Poor Man’s Crab Meat Risotto – Kani Kama Risotto

Residing  close to Hialeah means one can buy a lot of goodies by the roadside from “flying vendors”, who sell anything from the trunk of their cars, – electronics, Christmas decorations, clothes, steaks, flowers, fruit, churros, plants, mani, limes, and of course, “fresh seafood”.
I suspect that most of this stuff comes from a “fell off the truck supplier”, but who knows 🙂
My neighbor, Maribel, showed me some of the bargains she bought yesterday from a roadside seafood dealer and asked me if I can replicate one of her favorite dishes, crab meat risotto. Of course, I was happy to do this for her and her husband, as I do cook at least twice a month for them. I asked her to bring me the crab meat; I had the rest of the ingredients in my larder and fridge, so no problem. Well, to no surprise to me, the $10.00 pack of “crab meat” turned out to be Surimi (Kani Kama). To the seller’s credit, at least it was in good shape and smelled and felt very fresh when defrosted, so I explained to Maribel that I can make a seafood risotto for her and that it would be a great dish, although with a basic seafood taste instead of crabmeat taste. And so I did, using the surimi and clam juice for flavor, and the resulting risotto looked great, tasted great and, most important, it made my neighbors happy. (I assume the “crabmeat risotto” which they usually eat at their favorite restaurant in Hialeah is not exactly loaded with “real crabmeat” either 🙂
So there you have it – a wonderfully tasty and pretty dish for the price of a basic “fish and rice” meal. Mission accomplished! 🙂

I had  these a couple of days ago and I had waffles again this morning (bacon waffles).
Waffles – my new Addiction 😦 🙂
I have made them with raspberries, bacon, shrimp, crab meat, caramelized apples, shredded chicken and caramelized onions. They are so versatile and never disappoint. Just make sure that when you make a savory version you cut 3/4 of the sugar and add kosher salt to taste.

Vanilla cream/pudding recipe:
.
1/3 cup sugar, 2 tablespoons cornstarch, pinch of salt, 2 cups milk, 2 egg yolks, slightly beaten, 2 tablespoons softened butter, a dash of vanilla extract.
.
– 1 In 2-quart saucepan, mix sugar, cornstarch, and salt. Gradually stir in milk. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir 1 minute.
– 2 Gradually stir at least half of the hot mixture into egg yolks, then stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat. Stir in butter and vanilla.

Note:
Use this cream while it is still warm as waffle or pancake topping. To enjoy as pudding, pour into molds and refrigerate.

A simple  pasta salad will, more often then not, hit the spot for a simple yet satisfying meal.

This  beauty of a salad will conclude Week One of “Hans’ Lighter, Healthier Comfort Food” meal plan. (There will be an initial 4 week plan)
For everybody not yet interested in a bit of a healthier lifestyle, I suggest you try this salad anyway. Healthier and lighter food in my case does certainly not mean tasteless and boring. 🙂  (As is the case with so many other lifestyle food suggestions out there) 😦
Now, I understand that sardines are not everybody’s favorite seafood, but as usual, feel free to replace them with the seafood of your preference, such as shrimp, lobster, sole, salmon, clams, mussels, scallops, crab meat, etc.

P.S.
So far I have lost 12 lbs in two weeks of “Hans’ Lighter, Healthier Comfort Food” meal plan.
I feel much better, sleep much better and on top of all the benefits of living a bit more on the sensible side of life, I eat as much as I want. (Except on the two days of the week which allow me a dinner of anything I crave, although in much smaller portions).

Crab-Stuffed Twice Baked Potato

This  is my answer to a few request’s I received for unusual potato dishes.
If you use extra large potatoes as I have, I suggest that you bake them for two hours at 410 F. They will have browned slightly inside the skin and have a very different taste and texture than if you cook them only for the usual one hour.
