Pangrattato  you ask ? Don’ t worry, we are just talking about sautéed breadcrumbs here, nothing complicated, but oh so good.
Most cuisines which use pasta also use pangrattato in one form or another : bread crumbs sautéed in butter, in olive oil, in schmalz or just dry toasted, seasoned with anything from salt and pepper to garlic, herbs cheese, nutmeg or whatever else is traditional in your area of the woods or whatever tickles your fancy. The main task for the bread crumbs is to add texture to your pasta. And if you can add flavor on top of that, so much the better.
Sometimes, all I want for a great meal is just perfectly cooked pasta with lot’s of tasty pangrattato and a bit of grated cheese on top. Perfection for pasta lovers, right there. But today, I made a dish with even more pizzazz by adding sautéed shrimp and scallops in herb butter to an already sexy dish. Aaahhhh,  Life is Good 🙂

Schwäbischer Sauerbraten Mit Mafaldine Und Schmelze – Braised Beef In Red Wine & Vinegar Sauce



I had  this beef marinated since last sunday, so today the day has finally come : Sauerbraten 🙂
I started cooking this at 10.30 an, so by 1 pm I was finally rewarded with this wonderful dish, which was as good as any beef dish can be.
When I was a child, you could get this in most restaurants in the area where I grew up (Baden Wurttemberg) and you could also find it in many homes as sunday lunch. It is an easy dish to prepare, but boy o boy have I been served some crap labeled “sauerbraten” in a couple of so called “German Restaurants” around the world.
However, today’s sauerbraten was just perfect. Super tender but not falling apart, tart but not sauer and although I usually serve this with Semmelknödel, the Mafaldine with Schmelze were a perfect substitute.

Today  was the first time in four year’s that something actually went my way, unconditionally and perfect. A feeling of relief not experienced for such a long time.
To celebrate, I prepped for myself this comforting, traditional Swabian dish of Jägerschnitzel, something I grew up with and although simple and down to earth, still gives me great pleasure and culinary satisfaction 🙂

Ungarischer Rinder Gulasch (Hungarian Beef Goulash)

In  my opinion, one of the best way’s to prepare a tough beef cut is to transform it into Paprika Gulasch  (Paprika Goulash or Hungarian Goulash).
While there are  many great and not so great recipes out there, the basic principle to a great goulash is simple: Same amount of onions and meat by volume, LOTS of sweet paprika, no flour to thicken (the onions will take care of that) and most important :  Goulash seasoning, which will set it’s flavor apart from any other meat stew : 1/3 finely chopped caraway seed, 1/3 finely chopped thyme, 1/3 finely chopped lemon peel.

Schwäbische Spätzle Mit Schmelze (Swabian Noodles)

One of the most common,simple, quick, delicious, economical and (in my biased eyes), one of the most beautiful dishes coming out of South Germany  (Swabia).
When I grew up, this was one of the more boring dishes for me and my brother Wilhelm to grace our dinner table, because it showed up with regularity a few times a week. Even today, spaetzle are one of the stables of south german cooking. But, alas, I have moved away from my homeland many decades ago, so now spaetzle have become a treat, truly enjoyed whenever possible.
Spaetzle are hard to come by even in German restaurants around here. This is probably due to the fact that more cooks in american German restaurants go by the name of Pepe instead of Fritz and have never seen real spaeztle, so what you mostly get are “Knoepfle”, not “Spaetzle”.
Knoepfle means little bottons, so they are a small spherical pasta, while spaetzle derives from “little spitz”, which means little penis. (Many folks believe spaetzle derives from the word spatz, which means sparrow and would makes no sense at all. Also, many Americans let their spaetzle or knoepfle brown while sauteeing, which is an absolute no no in Swabia!
So there you have it. One of the easiest and fastest pastas to make is actually difficult to come by (at least any good ones). Go figure 😦
But, there is hope ! Following is the recipe for original swabian spaetzle. Please note that there is no milk or water added, just AP flour, eggs and salt. In times past, when eggs where not as easily available and as affordable as now, folks have had to stretch the eggs by adding milk or even water. Today that is not necessary anymore, so just stick to flour,  eggs, and salt. With a little practice, it will take you less then 10 minutes to make about six portions.
Mix flour, salt, and eggs and beat the dough until it is elastic and forms large air bubbles. To shape the spaetzle, either use a “Spaetzle Brett” (spaeztle board) and a straight spatula, or, much easier, invest $ 20 and buy a “Spaetzle Press” online. If you are not so sure how to proceed with the dough and the shaping of the spaetzle, go online and check out one of the numerous good instructional videos ( But be aware, there is also a lot of crap online, so choose wisely ).

Fill the spaetzle press 3/4 with dough and press into boiling, salted water. After a minute or so the spaetzle will float at the surface. Remove to a bowl with cold water. Drain. To serve, saute in butter until hot, without allowing the spaetzle to brown. Top with “Schmelze”.

For the schmelze, melt butter and saute bread crumbs until golden.
(I like to use brown butter and add chives to my schmelze).
