Chicken Fried Steak

The  great thing about CFS is that one can utilize an economical (cheap, in plain English)  cut of beef, such as top round or cube steak and still get excellent results. However, I happened to have some leftover raw strip loin left from yesterday’s dinner, which I sliced thin, then pounded it even thinner for this CFS.
Usually the traditional side dish would be mashed potatoes, but I am trying to cut down on my starch intake, so I felt the flour from the breading and the “Gravy” was enough of that for the day.
(The rendered fat from the chorizo and the chicken fat made this southern style gravy even tastier than it’s usual version made with bacon fat)
American comfort food at it’s finest ! (Just don’t tell your cardiologist) 🙂

Cornmeal-Dusted Sauteed Pork Ribs

So who decided that the only good ribs are BBQ’d Ribs ?!
Once you have tried these here knock-out babies, you might be hooked on this very different spin on one of Americas favorite pork cut’s.
I for one prefer this preparation to the traditional way of barbequing ribs. This way you will actually be able to taste the rib meat, as well as enjoy the unique texture of the ribs, all of which is lost after hours of grilling, smoking and then drowning in a bucket-load of bbq sauce.
Of course, there are some great bbq’d ribs out there, but in my own humble opinion, they are few and far between.
So here we go, great ribs served with a wonderful German potato and cucumber salad.

Food historians tell us the history of soup is probably as old as the history of cooking. The act of combining various ingredients in a large pot to create a nutritious, filling, easily digested, simple to make/serve food was inevitable. This made it the perfect choice for both sedentary and travelling cultures, rich and poor, healthy people and invalids. Soup (and stews, pottages, porridges, gruels, etc.) evolved according to local ingredients and tastes. New England chowder, Spanish gazpacho, Russian borscht, Italian minestrone, French onion, Chinese won ton and Campbell’s tomato…are all variations on the same theme.
Soups were easily digested and were prescribed for invalids since ancient times. The modern restaurant industry is said to be based on soup. Many years ago when Maria and I visited one of my friends in Germany, Carlo (better known in Germany’s food community as  “Kräuter-Carlo” aus Trebenow), served us this great soup which has stayed in my repertoire for home cooked comfort food ever since. It is so tasty and the texture so pleasant that every time I prepare a large pot full in order to be able to re-heat it in batches in the next few days, I usually end up finishing most of the whole pot right then and there :-).

Choucroute Garnie (Kleine Schlachtplatte)

Today’s  late lunch / early dinner has send me way back to my day’s of gluttony. I will have to live on apples for the next few days to make up for today’s culinary excess, but it was well worth it 🙂
After a few days of eating mostly fruits and vegetables, my cravings for some hearty soul food got the best of me and I gave in to my innermost desires of preparing and enjoying a beautiful “Choucroute Garnie”, also known in some parts of Swabia as “Kleine Schlachtplatte”.
(A “Kleine Schlachtplatte” consists of sauerkraut, boiled pig such as belly, loin, or knuckles, sausage such as blood pudding, fresh liverwurst or knackwurst and bread or potatoes – as opposed to a real  “Schlachtplatte”, which is eaten only on the day of butchering and processing a Hog and usually consists of sauerkraut, boiled pigs head or belly, fresh liverwurst and fresh blood pudding. Obviously, I had to make do with a “Kleine Schlachtplatte” today, which nevertheless was divine and deeply satisfying.

If  you love smoked salmon as I do, but are a bit weary of it on toast or bagel for the ‘thousand’s time, you might want to try this dish. Different, super easy to prepare, very tasty, great texture and not too shabby looking either. Accompanied by “simpleton potato salad”, romaine lettuce in honey/mustard dressing and a dip of spicy ranch dressing. (3/4 ranch, 1/4 sriracha and a good dose of garlic paste)

Ever  since I have started to eat healthier, my sweet tooth has suffered.
I had no problem giving up alcohol and I had no problem to stop smoking, but giving up on cake and patisserie remains a daily challenge, I miss my sweet’s terribly.
I am eating and enjoying a ton of fruits, but sometimes that just does not do the trick. I am a fairly good cook but a lousy patissier, so my sugar-free desserts are a bit lacking in finesse and variety.
Having said that, I DO have a few great options for sugar-free or at least refined-sugar free desserts. The following is one of my favorites because of its creaminess and richness.

One
 of my favorite fruits are bananas. So, me being me, every time I buy a bunch, without fail I buy too many. In the past, I discarded them once they had too many brown spots – until I started to become a fan of smoothies.
At first, I made my smoothies like I’ve seen them being made in bars around the world: Some fruit, lots of ice, milk, lots of sugar. Wonderful concoction if you are young, healthy, slim and have a smoothie once in a while. However, if you drink a lot of the stuff you will soon realize that after standing at room temperature for a short time, all that ice will melt and you have a very watered-down mess in your glass. Also, all that sugar and full-fat milk is fattening and can be harmful if you are a bit overweight (HELLO) and a diabetic (HELLO AGAIN).
In order to remedy all that , here is my recipe for a guilt free, delicious sweet treat / great drink, which can be had any time of day, for breakfast, lunch or dinner or as a sweet treat / dessert in between or after meals:

1.)
Freeze any fruit that is on the verge of becoming overripe in airtight ziplock bags. This will save you money and it eliminates the need to add ice to your smoothie, keeping it from watering down.
2.)
Instead of full-fat milk, use fat-free milk.
3.)
Instead of sugar or artificial sweetener, use natural honey or fruit nectar (frozen into cubes) as sweetener.
4.)
For extra body, add fat free Greek yogurt.
