Pulled Hoisin-Pork Ciabatta Sandwich

Pulled Hoisin-Pork Ciabatta Sandwich

>
When it comes to pulled pork, the heavily smoked American version is a wonderful dish
– however, like everything else that has overpowering smoky smoked flavor, it is my least favorite version. I rather have a latin style pulled pork, such as Mexican, Puerto Rican or Cuban.
But on top of my list is the pulled pork featured here. The sauce is my own concoction, which grew out of my desire for a tasty, juicy and slightly Asian-inspired flavor. In my opinion, the ciabatta bread is ideal for this kind of sandwich. It is tasty and robust enough to hold its own next to the stuffing, yet slim enough to make a rich and substantial,  but not ridiculously thick sandwich. (A “modern”, bad culinary habit) 🙂

Lusting  for something creamy, cheesy and light, yet packing a hefty flavor-punch ?  Well,  you have arrived 🙂
This great concoction satisfies on so many levels. The lightness of the gnocchi, creaminess of the sauce, freshness of the spinach, the sharp punch of the ripe gorgonzola and the slightly acidic burst of the tomatoes…….
What else can I say about this lovely dish ? Simply put – Yummy taste and great looking to boost 🙂

Shrimp And Vegetable Salad With Cheese/Garlic Bread

>
>
Last  night proved to be one of these dreary nights when I am not able to sleep, so at 5.00 am I decided to give it up, get up and start the day. I had my usual breakfast of two bananas and a glass of ice-cold, reduced fat milk, which usually carries me for a few hours until the early afternoon or even early evening. Not so today. At 10.30 am I decided I needed something a bit more substantial, which lead me to prepare this great concoction. Because of the delicious but very filling large amount of  garlic/cheese bread I devoured,  I’ll be fine for the rest of the day and will probably just have a few fruits for dinner 🙂 😦

Freeze Your Bananas !!!

One
of my favorite fruits are bananas. So, me being me, every time I buy a bunch, without fail I buy too many. In the past, I discarded them once they had too many brown spots – until I started to become a fan of smoothies.
At first, I made my smoothies like I’ve seen them being made in bars around the world: Some fruit, lots of ice, milk, lots of sugar. Wonderful concoction if you are young, healthy, slim and have a smoothie once in a while. However, if you drink a lot of the stuff you will soon realize that after standing at room temperature for a short time, all that ice will melt and you have a very watered-down mess in your glass. Also, all that sugar and full-fat milk is fattening and can be harmful if you are a bit overweight (HELLO) and a diabetic (HELLO AGAIN).
In order to remedy all that , here is my recipe for a guilt free, delicious sweet treat / great drink, which can be had any time of day, for breakfast, lunch or dinner or as a sweet treat / dessert in between or after meals:

1.)
Freeze any fruit that is on the verge of becoming overripe in airtight ziplock bags. This will save you money and it eliminates the need to add ice to your smoothie, keeping it from watering down.
2.)
Instead of full-fat milk, use fat-free milk.
3.)
Instead of sugar or artificial sweetener, use natural honey or fruit nectar (frozen into cubes) as sweetener.
4.)
For extra body, add fat free Greek yogurt.
