One
 of my favorite fruits are bananas. So, me being me, every time I buy a bunch, without fail I buy too many. In the past, I discarded them once they had too many brown spots – until I started to become a fan of smoothies.
At first, I made my smoothies like I’ve seen them being made in bars around the world: Some fruit, lots of ice, milk, lots of sugar. Wonderful concoction if you are young, healthy, slim and have a smoothie once in a while. However, if you drink a lot of the stuff you will soon realize that after standing at room temperature for a short time, all that ice will melt and you have a very watered-down mess in your glass. Also, all that sugar and full-fat milk is fattening and can be harmful if you are a bit overweight (HELLO) and a diabetic (HELLO AGAIN).
In order to remedy all that , here is my recipe for a guilt free, delicious sweet treat / great drink, which can be had any time of day, for breakfast, lunch or dinner or as a sweet treat / dessert in between or after meals:

1.)
Freeze any fruit that is on the verge of becoming overripe in airtight ziplock bags. This will save you money and it eliminates the need to add ice to your smoothie, keeping it from watering down.
2.)
Instead of full-fat milk, use fat-free milk.
3.)
Instead of sugar or artificial sweetener, use natural honey or fruit nectar (frozen into cubes) as sweetener.
4.)
For extra body, add fat free Greek yogurt.

Blueberry Delight With Limoncello & Prosecco

Lately I find myself making Limoncello and Orangecello often. They are simple to produce and, if you decide to make it your self,  you can easily adjust the taste exactly to your liking by adjusting the ratio of the ingredients, as well as by changing the type of vodka and / or fruit you you use. Try mixing some other citrus fruits into your concoction, such as lime, calamansi, blood oranges, etc. The possibilities are endless and you can proudly promote your own, home made, personalized liquor. Think special bottles, labels, presentation boxes and so forth. These will make great gifts and provide you and your friends with that special drink for that special occasion. ( Coming home from work would be a great occasion. Just saying…… 🙂
So, today I brought home some fresh blueberries which I thought I will turn into a nice pie. However, when opening the fridge to put the blueberries away until tomorrow, I thought I heard the limoncello bottle call out to me:  Hey, wait a minute………
So, just about five minutes later, I was out on the terrace, enjoying my new creation and congratulating myself to this new recipe in my dessert repertoire.

Ingredient’s :

Fresh blueberries,   four cups, chilled
Limoncello,   one cup
Vanilla greek yogurt,   two cups
Prosecco,   two cups
Honey,   1/4 cup
Crashed ice,   two cups
Serves 4

Method :

Pulse all ingredients in a blender until berries are crushed .
To serve, sprinkle with some fresh blueberries.

Limoncello / Orangello Recipe :

Ingredient’s:

Lemons,   one dozen  (for Orangecello, replace the lemons with nine oranges)
Vodka,   one quart
Water,   four cups
Sugar,   3 cups

Method :

Peel the lemons, making sure that there is no white part remaining on the peel   ( bitter ! ) .
Put the lemon peel and the vodka in a sealable glass bottle. Let stand at room temperature for two days. Strain, discard peel.
Dissolve the sugar over low heat, remove from heat and let cool completely.
Mix the syrup with the vodka, chill until very cold.
Enjoy by itself, over ice , or as a longdrink mixed to your taste. Cheers !

Ingredients :

3 parts wodka, 3 parts dry white wine, 3 parts champagne, sliced limes, assorted berries, pricked scotch bonnet chilies.

Method :

Mix all ingredients except the champagne and let steep and chill for at least 3 hours,
preferably overnight. Just before serving, add champagne to glasses and top off with sangria.

End Of The Week Treat # 3 “Vodka Macerated Rambutans”

Yesterday  after work I finally was able to enjoy what had been getting ready in my fridge during the past week:
Probably the best dish that includes rambutan 🙂
Lately,  rambutan which used to be pretty exotic around here, have become easily available, but strangely enough, they are still not very popular. That’s actually a good thing, because it keeps the price down, at least for now.
In my opinion, rambutan is one of the best tasting, most beautiful fruits .  They lend them self to a large variety of uses. The following is one of my favorite ways of preparing them.
Peel the fruit, top with your favorite spirit, cover airtight and keep in refrigerator for at least 5 days. When you eat them, either just pick the fruit and use the liquid for something else, or do the “sensible” thing, eat them with a spoon, mixed with the liquid.  Either way, have fun, but please don’t operate heavy machinery after you enjoy these 🙂

Note: My favorite Spirits used to macerate are vodka, dark rum and red wine. Just make sure you use the best quality liquor you can afford, no point of skimping here.

” Merlot & Watermelon Spritzer “

I have been drinking spritzer for many years.
I like it’s taste and ability to refresh in the summer heat,
without packing a big punch. Today I was going to make
a regular red wine spritzer when i saw the watermelon in the fridge.
Fruit and wine in a drink has never hurt, so I was going to try this one.
Man o man, what a success ! Very tasty, refreshing and beautiful to look at.
Mix the wine and water mellon in a blender until very smooth.
Mix each drink individually by pouring the mineral water over ice,
then the wine / watermelon blend. Stir and enjoy !
