Blueberry Delight With Limoncello & Prosecco

Lately I find myself making Limoncello and Orangecello often. They are simple to produce and, if you decide to make it your self,  you can easily adjust the taste exactly to your liking by adjusting the ratio of the ingredients, as well as by changing the type of vodka and / or fruit you you use. Try mixing some other citrus fruits into your concoction, such as lime, calamansi, blood oranges, etc. The possibilities are endless and you can proudly promote your own, home made, personalized liquor. Think special bottles, labels, presentation boxes and so forth. These will make great gifts and provide you and your friends with that special drink for that special occasion. ( Coming home from work would be a great occasion. Just saying…… 🙂
So, today I brought home some fresh blueberries which I thought I will turn into a nice pie. However, when opening the fridge to put the blueberries away until tomorrow, I thought I heard the limoncello bottle call out to me:  Hey, wait a minute………
So, just about five minutes later, I was out on the terrace, enjoying my new creation and congratulating myself to this new recipe in my dessert repertoire.

Ingredient’s :

Fresh blueberries,   four cups, chilled
Limoncello,   one cup
Vanilla greek yogurt,   two cups
Prosecco,   two cups
Honey,   1/4 cup
Crashed ice,   two cups
Serves 4

Method :

Pulse all ingredients in a blender until berries are crushed .
To serve, sprinkle with some fresh blueberries.

Limoncello / Orangello Recipe :

Ingredient’s:

Lemons,   one dozen  (for Orangecello, replace the lemons with nine oranges)
Vodka,   one quart
Water,   four cups
Sugar,   3 cups

Method :

Peel the lemons, making sure that there is no white part remaining on the peel   ( bitter ! ) .
Put the lemon peel and the vodka in a sealable glass bottle. Let stand at room temperature for two days. Strain, discard peel.
Dissolve the sugar over low heat, remove from heat and let cool completely.
Mix the syrup with the vodka, chill until very cold.
Enjoy by itself, over ice , or as a longdrink mixed to your taste. Cheers !

My neighborhood supermarket  charges $ 3.50 for a small twig of maybe 7 basil leaves.
They sell this beautiful basil plant for $ 4.50. Kind of a no-brainer, isn’t it 🙂

Ingredients :

Penne rigate,   al dente, reserve some of the cooking liquid
Pepperoni sausage,   julienned
Grape tomatoes,   quartered
Greek yoghurt,
Olive oil,
Vodka,
Merlot,
Parmigiano reggiano,   grated
Garlic,   paste
Basil,   fresh
Kosher salt,
Cayenne pepper

Method :

Saute pepperoni until starting to change color, add garlic, saute until fragrant. Add merlot and vodka, simmer until most liquid has evaporated. Add  yoghurt, tomatoes, a bit of the grated cheese, salt, pepper and the pasta,  mix well. Adjust seasoning if necessary. If too thick, add some of the pasta cooking liquid. If too thin, ad some grated cheese.
To serve, sprinkle with more cheese and basil leaves.

Note :
I am aware that most cooks will chiffonade the basil. However, personally I don’t like the texture this will give me. It reminds me of hair in the food which is not very appealing to me 😦
Therefore I like to add whole leaves which become soft and tender immediately  as they touch the hot food and give you a much more pleasant texture / mouthfeel 🙂

What  a gorgeous sunday afternoon by the lake. Perfect temperature outside, a good book to read (WHISKEY BEACH, by Nora Roberts), great rock in the background (Big 105.9) and this wonderful concoction of berries, yoghurt and rum, topped with a bit of whipped cream.

Welcome  back, summer !

It is 5.00pm and the temperature is still at 83F. Feels almost like summer. Of course, this is the perfect temperature. As soon as it get’s a bit hotter, just like all good Floridians, I  will of course complain  that it is too hot ! But, today, it’s just perfect 🙂
To celebrate, I made for myself a great smoothie which was just the right thing to have outside, waiting for the sun to go down, listening to classic rock on Big 105.9  and watching madam chasing geckos.

Fruit Yogurt

Most  times I buy those little cups of  fruit yogurt  at the
supermarket like most other folks. They are convenient and
an easy, mostly guild free fix for a little sweets – craving.
But lately I use a lot of plain greek yogurt in my cooking,
so earlier when my sweet toot acted up, I took some Fruits
I had in the fridge, (apples, grapes and strawberries), mixed
some yogurt with vanilla essence, castor sugar, freshly
squeezed  lime juice  and a bit of  cayenne pepper. Some
of the Yogurt on the bottom of the plate, then the fruit,
then topped with more of the yogurt. Very quick, cheap,
delicious and pretty to look at.
Question is, WHY do we buy these little expensive
tasteless cups of fruit yogurt if this is so much better  ???

But this isn’t just another dispatch from MAD Food Camp. Chef Redzepi is reportedly
working on a new yogurt dish…which has live ants sprinkled on it.

Apparently, the chef likes the ants’ acidity, which are almost “citrus-like.”

“ Red Lentils & Bell Pepper Burgers “

Red Lentils & Bell Pepper Burgers,
Served With Raita

For one of those meatless, healthy day’s  🙂

Ingredients

2 lbs red lentils, cooked until tender

2 lg egg

½ cup panko breadcrumbs

1 med green bell pepper, diced, sautéed

1 med red bell pepper, diced, sautéed

1 med onion, finely diced, sautéed

Garlic, minced, to taste, sautéed

2 tblsp Cilantro,  coarsely chopped

Cumin, to taste

Curry powder, to taste

Kosher salt, to taste

Cayenne pepper, to taste

Oil to sauté


Method

Mix all ingredients except the tofu and oil. Shape into ball’s, make an indent and fill with tofu.
Sprinkle lightly with additional bread crumb’s and sauté until golden and heated through

Raita

Grated cucumbers greek yoghurt, garlic powder, cilantro, salt, pepper.
Use quantities according to your preferences.
