Poached Chicken, Arugula, Strawberry & Pomegranate

This  dish was a bit unusual for me to prepare for myself, (fru fru ?  🙂  , but I had this craving for poached  chicken  with a twist. I really enjoyed the combination of chicken with: spicy  (chili oil, green peppercorn), sweet  (strawberries, pomegranate), slightly bitter ( arugula) and acidic  (lime juice). All in all, a successful dish which I will surely prepare again  🙂

Poach the chicken in seasoned water until just done, still very juicy but cooked through.   ( Remove from simmering liquid at 162F. Cover loosely and let chicken rest  for 10 minutes. The carry-over heat will take it to a safe 165F without giving it a chance to dry out ).  Drizzle with chili oil mixed with a bit of soy sauce and lime and sprinkle with sauteed green peppercorn. Serve with salad and fruit of your choice .

Seafood & Pasta Salad

I came  home from work early today and the
weather outside was just gorgeous . What better than
a book, ice tea and a cool  seafood  salad that can
be prepared in a few minutes. Great afternoon, recharged
my batteries and feel wonderfully relaxed.
Now it is time for a new post, then dinner and a movie,
“Ziti in Wodka Sauce” and “Kill shot”  with  Christopher Walken.

Ingredient’s :

Conchigliette,  cooked, drained
Shrimps,  
poached, peeled, tails remove except three for garnish
Octopus,  canned, drained
Straw mushroom,  canned, drained
Tuna,  canned, drained
Peppers,  diced (3 colors)
Garlic,  paste
Cilantro,  chopped
Scallion,  sliced
Cucumber,  sliced
Egg,  hard boiled,  sliced
Mayonnaise,  freshly made
– (it only takes a minute to make and it’s so much better than store bought)
Horseradish cream,
Lime juice,
Kosher salt,
Black pepper,  freshly ground
Olive oil,
Vinegar,

Method :

Take 1/4 of the seafood and marinade with lime, salt,
pepper and olive oil.
Mix remaining seafood , pasta, part of the horseradish
cream, mayo, peppers, lime juice, salt and pepper. Adjust
seasoning to your liking. Place salad on bottom of bowl,
top with the marinated seafood.
To serve, drizzle eggs and cucumber with olive oil and vinegar,
sprinkle with salt and pepper. Serve with some horseradish
cream to dip the shrimp.   Enjoy  🙂

” Whole Sauteed Fish & Guacamole “

Last nights great dinner :

Whole sauteed fish & guacamole

Freshly caught fish, seasoned with salt, pepper and lime juice,
lightly dusted with a mix of AP flour and corn starch,
slowly sauteed in olive oil, some onions and garlic added towards the end.
I had some grape tomatoes laying around, so in the guacamole they went.
Three medium sized fish were just the right portion for Bella and I   🙂

Shrimp salad:

Cooked schrimp’s,                   tail removed, diced, except one for each taco for decoration
Avocado,                                    diced
Red onions,                               julienne
Tomatoes,                                  de-seeded, diced
Chilis,                                          julienne
Yellow peppers                          julienne
Cilantro                                      chopped
Lime juice,
Olive oil,
Salt,
Scotch bonnet hot sauce,
Salt,

Blend all ingredients, season to taste.

Lettuce salad :

Lettuce,                                     julienne
Red onion,                               julienne
Yellow peppers                       julienne
Chilis,                                       julienne
Cilantro                                    chopped
Mayo
Greek yoghurt
Salt,
Scotch bonnet hot sauce

Blend all ingredients, season to taste.

Assembly :

Fill tacos ¾ with lettuce salad. Top with shrimp salad.
Garnish  each taco with one whole shrimp.
Drizzle with yoghurt / mayo / hot sauce mix, Sprinkle with Cilantro.

” Merlot & Watermelon Spritzer “

I have been drinking spritzer for many years.
I like it’s taste and ability to refresh in the summer heat,
without packing a big punch. Today I was going to make
a regular red wine spritzer when i saw the watermelon in the fridge.
Fruit and wine in a drink has never hurt, so I was going to try this one.
Man o man, what a success ! Very tasty, refreshing and beautiful to look at.
Mix the wine and water mellon in a blender until very smooth.
Mix each drink individually by pouring the mineral water over ice,
then the wine / watermelon blend. Stir and enjoy !

” Salad Of Lettuce, Vegetables & Pomagranate “

It is sooo damn hot outside !

Lunch in the garden in this heat must be refreshing and light.
If you omit the potatoes, this salad would also be a great,
colorful starter or snack in between meals              🙂

Salad:
New or baby potatoes, cooked
String beans, cooked
Romain lettuce
Bean sprouts
Baby porto’s sauteed with garlic in olive oil
Red bell pepper, finely julienned

Dressing:
Pomegranate seeds
Pomegranate juice
Lime juice
Salt
Pepper
Olive oil
