Shepherds Pie  is such great comfort food.
Meat sauce, mashed potatoes, and cheese – who could resist ? 🙂
However, there is one flaw in shepherds pie which diminishes its enjoyment a bit for me – it is entirely soft in texture and usually, the sauce is a bit bland and the whole thing, therefore, often resembles baby food 😦
Let me come to the rescue with this new recipe.
Instead of mashing the potatoes to a puree, just break them up a bit into med-sized chunks. Adding the peppers and lots of onions and garlic to the meat sauce will further increase the taste and texture of the filling of the potato shells, which will result in a dish who’s taste still resembles shepherds pie but at the same time is so much more interesting and TASTY !
Overall, this “fully loaded” baked potato is without a doubt one of the tastiest incarnations of the lowly baked potato as well as the ordinary shepherd’s pie.
While I have prepared and created dozens of variations of twice baked potatoes over the years, some more, some less exotic, some over the top and some down to earth,  using all kinds of additions to the stuffing, such as shrimp, smoked salmon, ham, different vegetables, cheese, yogurt, herbs, etc, etc., the ones I prepared today are the very best of the best 🙂
Although very simple and easy to prepare, the texture, taste, and looks are just perfect and go to show that uncomplicated food, if done right, can take the price over complicated and elaborate any time ……..

Back  when my wife Maria and I were owners of Restaurant Gildenkeller in Neubrandenburg, (in the former East Germany), one of our short weekend trips took us to the island of Usedom, which is about an  hours drive by car from Neubrandenburg, where our restaurant was located.
I remember the quaint little Inn’s and the few stately, but outdated and mostly dilapidated grand hotels of better times past (before the communists took over). However, there were also a number of small, new restaurants, run with much enthusiasm and love by their newly capitalist owners, which excelled in their standards of food and service. In one such gem in the town of Ahlbeck (I forgot the name of the restaurant but not the food we ate) Maria and I had a most wonderful lunch, consisting of an delightful appetizer of “Matjes Herring” with “Pumpernickel“, a superb main course of  “Ahlbecker Meeresfrüchte Suppe” and a great dessert of “Rote Grütze“.
Today I prepared the soup as I remembered it from so many years ago and it did not disappoint 🙂

If  you love smoked salmon as I do, but are a bit weary of it on toast or bagel for the ‘thousand’s time, you might want to try this dish. Different, super easy to prepare, very tasty, great texture and not too shabby looking either. Accompanied by “simpleton potato salad”, romaine lettuce in honey/mustard dressing and a dip of spicy ranch dressing. (3/4 ranch, 1/4 sriracha and a good dose of garlic paste)

A wonderful breakfast, followed by a two hour walk around the lake.
Bella had a great start too – same breakfast, then she spotted three squirrels on our walk, which absolutely made her day (both the salmon, which she ate and the squirrels, which she chased) 🙂

Who  on earth would object to lighter, healthier food if it comes prepared and presented like this mouth-watering  salad ? ! 🙂
The grilled romaine salad is a marvel of taste and texture, just make sure you don’t overcook it on the grill. The outside should have nice grill mark’s, while the heart should still be crispy, Use a strong dressing, so it will not be overpowered by the charred taste of the salad’s outer leaves. As for the other veggies, use whatever you have available and you think will be enhanced by grilling. If smoked salmon is not your thing, use any other protein, grilled, smoked or sautéed.

Egg’s  and smoked salmon – alway’s a winning combination in my book.
This morning I needed something that could re-vitalize me after a sleepless night, so this easy to prepare beauty was just the right thing. Three minutes of preparation, two minutes of cooking time and voilà – ready for breakfast and a movie, accompanied by a large pot of peppermint tea and a nice pork leg bone  (for Bella ) 🙂

You  might have noticed in the past few posts when I used smoked salmon that the salmon is sliced much thicker and narrower than we usually cut it. I buy my salmon mostly at publix and while they have different quality salmon to offer, I prefer this “inferior” cut. It is cut from trimmings of the belly, which can not be sliced into the thin, wide slices we usually serve. But in my humble opinion, the texture and taste is far superior to the regular “pretty”part we usually buy.
There you have it – cheaper and better 🙂
