Baked Cauliflower & Confetti Shrimp

Normally,  one would assume that the shrimps in this dish would be the star while the cauliflower plays the second fiddle, but here we have the roles reversed.
This cauliflower was so yummy that it absolutely stole the show from the shrimps, which were very delicious as well, but……
Lately I have again used a bit too much sugar and starch in my nutrition by consuming way too much bread, rice, pasta, potatoes and sugar.
Thankfully, I have not gained any weight since  I lost 30 lbs  a year ago, but recently, my sugar levels have increased by an average of 20 points, so in order to get my levels back down and avoid insulin-injections twice a day like I used to, I have started again to make leafy salads, fruits and vegetables the main part of my meals, with much smaller (if any) starchy and sugary sidings and just a tiny amount of bread once in a while. Wow – that was a long sentence 🙂

Faux Lasagna

A good Lasagna is a wonderful dish. Ideally it is very flavorful and dripping with the goodness of rich ingredients. It is a sumptuous and satisfying dish that usually leaves nothing to be desired – unless you are looking for texture. After all, besides the crispy corners of the baked marvel, there is just one texture in lasagna – SOFT.
Now, while there is nothing wrong with soft, as a singular texture of a meal it can be a bit boring. So I decided to try something a bit different today for lunch and boy! was I happy I did.
Although not real meatballs (I used spicy Italian sausage) nor real lasagna (which by definition contains sheets of pasta) nor ricotta (I used cheddar instead), this dish knocked it out of the park and although I am a certified pasta lover, I would substitute this one for a real lasagna at any time, hands down 🙂
While the taste ranked with the best I ever had, the texture and taste of the potatoes was something else again and made this the very best “(Faux) Lasagna” I ever had 🙂

Cajun Shrimp & Cheese Grits

Totally  had a craving for Cajun shrimp on my way home, so I stopped at the whole food market to get two pounds of these beauties. Expensive but so worth the dough 🙂

Cajun Shrimp & Cheese Grits

Cajun Shrimp & Cheese Grits

Ingredients Shrimp :

Shrimp,   peeled and deveined
Clam juice,
Tomato Paste,
Paprika,
Thyme,
Oregano,
Garlic,   paste
Oregano,
Cayenne pepper,
Kosher salt,
Butter,

Method :

Season shrimp with salt and pepper.  Saute in butter until halfway done. Remove shrimp, reserve. Saute more garlic in butter, add thyme, oregano, cayenne. Add tomato paste, saute another minute. Add clam juice and simmer until slightly thickened. A the reserved shrimp and heat through.  Adjust the heat to your liking, adding as much hot sauce as you can muster.

Ingredients Cheese Grits :

Chicken stock,
Milk,   (about 1/3 the amount of the stock)
Corn meal,   coarse ground
Sharp cheddar,   grated
Kosher salt,
Scotch bonnet sauce,   (substitute with tabasco if you can’t stand the heat)
Butter,   (splurge)

Method :

Bring the milk and stock to a boil and gradually whisk in the corn meal.  lower the heat to a slow simmer and cook for 20 to 25 minutes or until mixture is creamy.
Remove from heat, add the hot sauce, cheese and butter, and whisk to combine.

To serve, top the grits with the shrimp and sprinkle with cilantro.
