Baked Cauliflower & Confetti Shrimp

Normally,  one would assume that the shrimps in this dish would be the star while the cauliflower plays the second fiddle, but here we have the roles reversed.
This cauliflower was so yummy that it absolutely stole the show from the shrimps, which were very delicious as well, but……
Lately I have again used a bit too much sugar and starch in my nutrition by consuming way too much bread, rice, pasta, potatoes and sugar.
Thankfully, I have not gained any weight since  I lost 30 lbs  a year ago, but recently, my sugar levels have increased by an average of 20 points, so in order to get my levels back down and avoid insulin-injections twice a day like I used to, I have started again to make leafy salads, fruits and vegetables the main part of my meals, with much smaller (if any) starchy and sugary sidings and just a tiny amount of bread once in a while. Wow – that was a long sentence 🙂

Croque Madam



I am  trying to vindicate the Croque Madame, who has been so brutally mistreated in so many kitchens lately that her true identity has been all but forgotten 😦
During the past couple of years I have ordered a croque monsieur (without fried egg)  or croque madam (with fried egg) on several occasions late at night, usually in a hotel lobby or nightclub. What I have been served on every occasion has been less than stellar, to say the least. Typically what is being served nowadays is a grilled cheese sandwich wich has been stuffed with a few thin slices of ham and american sliced cheddar, topped with more sliced cheddar and then finished under the broiler. This is no doubt a fine ham and cheese sandwich but that’s where the similarities with a croque mensieur or croque madame end.
Both croques in it’s original form should be prepared in the following way:
Toast slices of rustic bread, top with bechamel to which a fine mustard has been added. Top first slice with cooked ham and lot’s of shredded  Gruyere Cheese , top with a second slice of bread, cover with mustard-bechamel and plenty more shredded gruyere. Sprinkle with herbs de province or other herbs of your choice. Bake at 425 F until the bechamel/cheese bubbles.
There you have it – Croque Monsieur ! Top with fried egg for Croque Madame !

Pizza With Mushroom, Gorgonzola, Gruyere, Tomato, Onion & Arugula

Tonight,  my culinary enthusiasm was a bit limited by my lack of sleep last night.
( I went to sleep early at 11.30 pm, but Bella thought 2.30 am was a good time to get up, so she pestered me until I gave in and took her for a walk at 2.45 am.
Since I had my alarm set for 3.30 am ( busy 1st   day of school ), there was no point of going back to bed afterwards.
So, when I got home at 4.00pm, a quick and easy pizza had to make do for dinner.
( However, quick and easy should not mean crappy ! )
This little gem was far from crappy, on the contrary, I thought it was pretty awesome.
Quick, easy,crispy, tasty, juicy, delicious 🙂
