Today’s  lunch proved once again that the old adage “simple is better” still holds the truth. (If done right) .
The clean, fresh taste of the broccolini, supported by the sweetness of the caramelized garlic and the light acidity of the pickled, charred peppers makes this a side dish well worth it’s praise. Combine with some grilled lemon and a sumptuous, parmesan-crusted pork chop and a simple, easy and quick to prepare lunch is elevated to wonderful, happy culinary bliss 🙂

ANYTHING  sounds better in french ?! 🙂
I used to call my wife “Mon Petit Chou”, which sounds perfectly sweet and romantic in french. Translated, it’s “My Little Cabbage” :-(. Not as sweet and romantic, no doubt.
Same with my dinner today : “Pied De Cochon – which translates into “Pig’s Trotters”, one of my all time favorite second cuts.
Pigs trotters are very versatile, they are great fried, steamed, braised, and pickled.
The following dish was created today in my kitchen and, I must say, it was absolutely delicious (and pretty to look at, to boost).

Like  so many other “classical / original dishes, there is a million and one ways to prepare “en escabeche”, which in Spanish simply means marinated or pickled.
As usual, I have picked my favorite one to be featured on ChefsOpinion.
Of course you can also do vegetables, seafood, and other proteins “en escabeche”. (For my German-speaking friends, how about “Brathering 🙂

Dear  Friends,

While I often get free product samples and requests for product reviews often, in order to stick to my motto of  “Real Food & Real Opinions”, I blog very seldom about the products I receive. The simple reason for this is that I want to keep my independence and that I don’t want to review products I don’t like and can endorse wholeheartedly.
Not to worry about these principles when it comes to NorthStar Pickles.
I have never before taste pickles which have a home made taste and the crunch of a fresh product like the range of pickles I tasted from NorthStar Pickle.
I received 6 Products and was smitten by 5 of them. Only one, “Half Sours”. although good, did not wow me like the rest of them. I have not seen these pickles on any supermarket shelf around here, but when I do, they will be my new “go to” pickles of choice 🙂

Easy does it # 19 – Cheese Sandwich (Paratha With Emmentaler, Tomato and Cucumber)

I assume
 that 99 % of all adults (and many kids) have tried their hands on a cheese sandwich, some with more, some with less success 🙂 :-(.
Following is a nice cheese sandwich which can be prepared by anybody in a minimum of time, but the result will provide a maximum flavor and texture experience.
Might I add that the presentation is not too shabby either :-).
Yesterday evening was like most Friday evenings for me – end of work-week, tired, lazy, not interested in spending much time in the kitchen. Also, tomorrow, Saturday, is my day for shopping (and cleaning and laundry and bathing Bella and whatever else piles up during the week), so my fridge and cupboard were rather depleted today. What I found was the following:
Frozen paratha, emmentaler cheese, cucumbers, tomatoes, romaine lettuce, pomegranate, honey and limes for the sandwich and it’s salad.
Throwing it all together resulted in a great looking, excellent tasting, quick and easy to prepare dinner.

I cooked  this beauty yesterday for two hours, then let it cool in the stock overnight.
Served today for lunch with german potato salad, horseradish, dijon, pickled tomatoes and rustic Italian garlic bread.
Simple, but oh so good 🙂

Once  a regular item on a menu, I have not seen pommes macaire on a menu for many years. What a shame, since they are such a great dish and so easy to prepare. Another thing that baffles me is that whenever I ask folk’s if they like pickled herring, the answer is usually no. Then how come I  see  pickled herring  and/or  roll mops  on just about every supermarket shelf? Somebody must be buying 🙂

So when I had some leftover baked potatoes, I first thought of making another twice baked potato, but I cooked that often lately so I wanted to come up with something different and yummy, so here it is : Herring and potato patty, served with spicy potatoes and wasabi.
