Ravioli,  Dumplings, Maultaschen, Pierogi or whatever you call your little pasta pockets filled with a savory filling – if there are leftovers, what will be  the best way to make a meal out of them ?  I say, saute them with eggs and voila ! – a whole new, different, beautiful dish which, when properly prepared, will be as good as the first incarnation of your little pockets of deliciousness 🙂
So, while I would usually make this dish with leftover dumplings, today I did not even wait to have leftovers. Instead, I sautéed them right after they came out of the boiling water with some eggs, chili oil, chili flakes and cilantro and bingo ! What a great dish – perfect texture, taste and presentation

EASY DOES IT # 17 – Hans’ Homemade Buffalo Sauce

While  buffalo sauce is most famously used for chicken wings, I use my recipe for many other dishes, such as steak sauce, light coating for sautéed shrimp, sautéed vegetables, sautéed potatoes, etc, as well as fried foods such as  chicken hearts, duck gizzards, chicken wings ( pictured below). I also use it as a spicy dipping sauce for french fries and whatever else needs a bit of a pick-up 🙂

Melted butter                  1/2 cup
Sriracha                           1/2 cup
Green tabasco                 1  tablespoon
Confit garlic paste          1  tablespoon

Last  month my friend Curtis introduced me to a store which I have been missing all my cooking  life. It’s the “Foodtown Supermarket” in Davie, corner sterling/dairy rd extension. Here I can find EVERYTHING my culinary cravings will ever desire as far as Asian and Latino food ingredients are concerned. Although Merguez sausage is neither Asian nor Latino, Foodtown has a great quality one on offer, as well as a small selection of  other African/Mediterranean items.
So yesterday after work I stopped by there for a few goodies and amongst other stuff I got merguez sausage, harissa and pearl pasta (Piombi)

Polpi In Umido – Italian Style Octopus Stewed In Wine And Tomatoes



Octopus  is one of my favorite seafood. Unfortunately, fresh octopus is not usually available around here. I sometimes order it online, but for the spur of the moment, I usually fall back to canned octopus. I have tried many different brands over the years and my favorite is the Vigo brand in garlic/olive oil. I usually prepare a salad by mixing it with peppers, herbs, potatoes and vinaigrette. Once in a while I mix it in a mixed seafood stew. However, for the dish at hand it was the perfect taste and texture. I even added the garlic oil from the can since it has a strong taste of the sea. A quick, easy and very affordable seafood recipe. If you are not a fan of octopus, replace it with shrimp, just simmer the shrimp and sauce for less time in order to keep the shrimp succulent and moist.

Tonight  (Tuesday) my fridge and cupboard were nearly empty and the best thing I had at hand was a great looking rib eye steak. I did not feel like having  just a plain old steak from the grill, so when I saw the mung bean sprouts and the cooked potatoes, first some Asian, then some Korean recipes started to dance around my head and I decided on this menu, which turned out to be just the flavors and textures I craved and they sure hit a home run with my tastebuds 🙂

So,  everybody and their mother have the one, the only, the very best  Kare Kare  recipe. Of course, having lived in the  Philippines  for almost five years, I have my very own “best” recipe.
As for the protein, the most common is ox tail, but of course you can substitute it with any protein you like, even omit it completely and make a vegetarian version. The most important part of  Kare Kare  is the peanut sauce, of which a million of fine variations exist 🙂  (and maybe some not so fine)
Here now is my humble version of this wonderful dish:

Saute beef neck bones, seasoned with kosher salt and black pepper, in peanut oil until browned. Remove bones, reserve. Saute chopped carrots, onions and celery until caramelized, return neck bones to the pot, cover with water. Add lots of garlic paste, a handful of rice, a good amount of turmeric, a few annatto seeds, salt and pepper and bring to a simmer. Cook slowly for about two to three hours or until meat is tender. Add a large amount of peanut butter and simmer until sauce has thickened. Add  Patis  and calamansi juice, check /adjust seasoning. While the meat simmers, blanch zucchini batons, eggplant batons, whole chilies and baby bok choy, shock in ice water, drain. When the stew is done, add the vegetables to it and simmer until vegetables have heated through. Serve with white rice.
