I had  these a couple of days ago and I had waffles again this morning (bacon waffles).
Waffles – my new Addiction 😦 🙂
I have made them with raspberries, bacon, shrimp, crab meat, caramelized apples, shredded chicken and caramelized onions. They are so versatile and never disappoint. Just make sure that when you make a savory version you cut 3/4 of the sugar and add kosher salt to taste.

Vanilla cream/pudding recipe:
.
1/3 cup sugar, 2 tablespoons cornstarch, pinch of salt, 2 cups milk, 2 egg yolks, slightly beaten, 2 tablespoons softened butter, a dash of vanilla extract.

– 1 In 2-quart saucepan, mix sugar, cornstarch, and salt. Gradually stir in milk. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir 1 minute.
– 2 Gradually stir at least half of the hot mixture into egg yolks, then stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat. Stir in butter and vanilla.

Note:
Use this cream while it is still warm as waffle or pancake topping. To enjoy as pudding, pour into molds and refrigerate.

BREAKFAST OF CHAMPIONS # 54 – Cheese Polenta With Spicy Italian Sausage And Poached Egg

When  I got up early today, the plan was to do some cleaning and shopping and otherwise just hang and enjoy a quiet Easter Sunday, having a couple of sandwiches and some fruit.
I opened the fridge with the sole intention to get two apples as breakfast and wait for lunch to have a sandwich or something else which does not require more than five minutes in the kitchen. Well, such was the plan – until I saw the spicy Italian sausage and figured that it would help me to a more enjoyable start of the day.  The sausage was quickly joined by some eggs and – what the heck – cheese polenta.
Looking at the pictures now and remembering this tasty dish, I must say it was a wise decision to over-rule the two apple-breakfast and go with this beauty instead.
(Later on, there was a great lunch and even greater dinner; – so much for good intentions and not spending much time in the kitchen)

Today’s  breakfast – another winner, easily whipped up in minutes.  (Assuming you have some leftover re-fried beans at hand).
If you don’t, just replace the re-fried beans with sautéed red beans, black beans or even chick peas (garbanzos), seasoned with cumin, kosher salt cayenne, garlic paste and diced onion,
which will only just add a few extra minutes to the preparation.

I am still not sure if I should be proud or ashamed of this concoction…….. Not that it is terrible, on the contrary, it is so delicious that I could eat this everyday .
The problem is that once I had started eating , I could not stop until it had been completely devoured. It was just too yummy to stop.
If you will prepare this, make sure that there are at least five people present to share, otherwise the ensuing binge-eating will be hazardous to your weight ! 🙂 😦
It is really a “one pot meal”, combining a complete breakfast in a single dish: Coffee, yogurt, nuts, fruit, pastry, cream, and marmalade.
(If I would still consume alcohol, I would have mixed the coffee with ameretto or rum) If you do enjoy a good drink, go ahead and add another layer of sin in the form of your favorite booze!
All in all, this was a great joy to eat and I will surely prepare it again, but only if guests are on the way with whom I can share 🙂
A good thing can be good for you – too much of a good thing can kill you !

” Congee With Spicy Sausage “

I just love any type of congee,
be it with seafood, meat, vegetables or any combination thereof.
Although is is traditionally eaten for breakfast, I usually make
a big pot so I can snack on it a few times during the day.
Today I used spicy, non-smoked chinese sausage,
which is not only very spicy but also sweet.
If you dont like raw egg, use cooked egg or omit the egg altogether.

Basic Congee recipe
In a large pot, bring water or stock and rice to a boil.

When the rice is boiling, turn the heat down to a slow simmer.
Place cover the pot, allowing steam to escape
Simmer until the rice has the thick, creamy texture of porridge.
Add the salt, taste and other seasonings as desired.
Serve with garnishes such as crushed peanuts, scallions, fried onions, etc.
You can also make this a sweet dish by adding
rock candy, brown sugar, fresh and/ or dried fruits.
