Pulled Pork “Havana Loco”

For  most of my life I detested the very idea of pulled pork. My professional training as a cook had taught me that if something falls apart, it is overcooked and therefore non grata. In addition, the pulled pork I was introduced to during my early years in the USA was almost always smoked for many hours, then completely inundated in (most of the time crappy) “bbq sauce”.
The whole thing seemed to me to have the texture and taste of some lousy half-smoked cigars mashed-up and mixed with ketchup and vinegar, more often than not served on a limp, tasteless burger bun. As a result, for many years I stayed away from pulled pork.
This changed when I got to travel in Latin America and in Latin American-circles, where pulled pork took on a very different dimension, one which I was finally able to wholeheartedly embrace. Usually braised in the oven for hours, with lots of cilantro, lime, garlic, various citrus juices and sometimes the addition of onions and/or chilies, the pork tastes lively and fresh, not at all heavy or greasy or overly sweet. Usually, it is served with white rice and yucca or a simple salad and most of the time with some kind of spicy, vinegar based condiment.
Below find my own take on pulled pork, as I imagine I would serve it at my imaginary, popular nightspot in a Havana of long-gone times, with hot girls dancing to the Rumba, Mojitos flowing freely and eating, drinking, dancing, making love and enjoying life being the only thing on everybody’s mind……………..

Here  we have another  classic that shows and proofs why the classics don’t die: They are simply the best !
When all the pretty (and sometimes not so pretty) newfangled high flyers have simply faded away because of lack of substance, practicality and being too heavy on looks and too light on taste and texture, out come the classics again to remind us why they were our favorites in the first place : Taste, texture and simple, appetizing presentation, free from superficial nonsense. What better dish to proof my point than with this wonderful salad which will be equally good as appetizer, side dish, snack or even main course (See below )

P.S.
Usually the poached egg is served liquid in the center, but, while I love eggs prepared this way, for my salad I prefer them a bit more waxy (depending on the size of the egg, add about 1 to      1,5  minutes to the cooking time of soft-poached egg)

Although smoked bacon is widely used, I prefer the taste and texture of fresh bacon for this dish. If you choose to use smoked bacon, you can forgo the step of simmering the bacon before sauteing.

Salmon & Grits In Garlic/Lime Butter

I prepare  grits quite often, usually buttery cheese grits, which are so rich, so good and so bad for you-if you eat large portions (which I tend to do) 😦 .
Lately I use mostly instant grits and I am happy with the results, as long as I add enough butter (and enough grated cheese when preparing cheese grits). For me, the extra cooking time to use non-instant just does not justify the small difference in texture and taste. But today I made plain grits without cheese, just seasoned with kosher salt and cayenne pepper and a sinful amount of unsalted butter. I also made the grits a bit more dry than usual, since there was added fat and moisture from the garlic/lime butter which I spooned over the sauteed salmon and grits at plating time. The salad dressed in yogurt gave a pleasant tang and additional texture to the dish.
While sauteing the salmon I was looking forward to the crispy skin, but Bella loves the skin even more than I do so I let her have it (along with half the salmon) 🙂
All around, a very delicious lunch, easy to prepare and full of flavor and different textures.

P.S.
Notice in the pictures of the broken up salmon below how very juicy the fish is, even when cooked well done. Well done fish is never dry when properly cooked to the right temperature. Unfortunately, this is not taught anymore to our young “Chefs”, most of whom think that all fish has to be served raw in order to not be dry (Don’t even get me started on parasites…..)

Life  is all about the crispy bits………….. 🙂
Most folks would probably agree with this statement, especially when we’re talking food, and of course especially when we are talking fried, baked or sautéed  potatoes. And, in my own, humble opinion, of all the great potato dishes, the undisputed king is “Rösti”. Crispy on the outside, soft and buttery on the inside, it is a most versatile dish which can be enjoyed as a main course with just a fried egg on top and a green side salad, or as a side dish for such dishes as  Zürcher Geschnetzeltes,  Gulasch or  Creamed Mushrooms, as shown below.
There are  Rösti which are enhanced with such mixed-in goodies as cheese, herbs, grated onions, bacon and so forth. Yet for me, at least in the case of  Rösti, simple is best, so I prefer the basic version – grated potatoes, seasoned with kosher salt and cayenne pepper and sautéed in duck fat – voilà . There is also the divide between advocates of using raw shredded potatoes versus the Rösti enthusiasts who insist on parboiled potatoes. While both versions have the potential to be wonderful, I myself prefer the parboiled potato version, which has a less starchy taste.

Today,  let’s make a salad that is both full of flavor and easy to prepare.
Curried lentils are of course one of my favorite lentil recipes, served either hot or cold (vinaigrette added), by them self as salad or as a sexy side dish (again, either hot or as salad). And tandoori chicken?- well, anytime, please 🙂
While I don’t have a tandoori oven in my kitchen (neither do you, I guess), cooking the chicken without fat in a VERY hot cast iron pan will give satisfying, similar results.

How do you justify an $90 salad for one?
I do by arguing that if I go to a restaurant and spend the same amount or even more, especially here in South Florida, my food will most likely not be as good and most certainly not as ample and luxurious. Three lbs of stone crab claws ($75) is a generous portion but not excessive. Add the shrimp, avocado and the other ingredients and you reach an eye-watering $90 bucks- definitely not something you want to do often, but once in a while for a special occasion ………….  so today I was celebrating my upcoming birthday (December 2nd !) 🙂

” Greek  Limburger Salad “

When  I decided to have a Greek salad for dinner I had to go to the store first to get the necessary ingredients. To my tremendous surprise and delight, I discovered a type of cheese in the dairy section which I had not encountered for at least 20 years and which I would never have expected to find here in Miami – Limburger Cheese. This was the favorite cheese of my dad when I was a kid, and as I got older, the taste (and smell) eventually grew on me and Limburger became one of my favorite cheeses as well 🙂
So of course, never mind the feta cheese, Limburger it had to be ! It pairs great with the fresh vegetables and vinaigrette of the original Greek salad and, for my palette at least, it is the perfect substitute for the feta cheese in the original Greek salad.
As usual, use any cheese which suits your taste and budget best.
