Pigs Tail And Potato Curry, Naan & Cucumber Raita

Some folks are probably scratching their head, going “WTF” (what he food 🙂 ) when reading this. But hey, I love pigs tail and curries of any style.

The good thing is that if you don’t love pig’s tails, you can replace them with any other protein or vegetables.
However, here is what went on in my kitchen for today’s lunch:

Curry :

Pigs tails,   cut into pieces
Potatoes,   peeled, cut into wedges
Bananas,   sliced,
Baby carrots,
Peppers,   diced,
Celery,   sliced
Tomato,   diced
Ginger,   grated
Garlic,   paste
Cilantro,   chopped
Vegetable stock,
Coconut milk,
Turmeric,
Curry powder,
Kosher salt,
Cayenne pepper,
Butter,

Saute pigs tails in butter until lightly browned, add vegetables, banana, garlic and ginger and saute until fragrant. Add curry and turmeric, saute for another minute. Add stock, salt and pepper and very slowly simmer until pigs tails are tender. Add coconut milk and potatoes and simmer until potatoes are done but still firm. Adjust seasoning if necessary. To serve, sprinkle curry with plenty of coarsely chopped cilantro.

Naan :

1/2 cup   water,
1 pck yeast
2.5 cup  a/p  flour,
1/4 cup vegetable oil,
1/3 cup greek yogurt,
1 lg egg
Salt

Combine yeast, sugar and water. Stir to dissolve, let sit for a few minutes or until it is frothy on top. At that point, stir in the oil, yogurt and egg until evenly combined.

In another bowl, combine the flour with the salt. Add the bowl of wet ingredients to the flour/salt mixture and stir until well mixed. Continue adding flour a half cup at a time until you can no longer stir it with a spoon (about 1 to 1.5 cups later).

Turn the ball of dough out onto a well floured counter top. Knead the ball of dough for about 3 minutes, adding flour as necessary to keep the dough from sticking. The dough should be smooth and very soft but not sticky.

Loosely cover the dough and let it rise until double in size (about 45 minutes). After it rises, gently flatten the dough and cut it into 8 equal pieces. Shape each piece into a small ball by stretching the dough back under itself until the top is smooth and round.

Heat a large, heavy bottomed skillet over medium heat and spray lightly with non-stick spray. Working with one ball at a time, roll it out until it is about 1/4 inch thick or approximately 6 inches in diameter. Place the rolled out dough onto the hot skillet and cook until the under side is golden brown and large bubbles have formed on the surface (see photos below). Flip the dough and cook the other side until golden brown as well. Serve plain or brushed with melted butter and sprinkled with herbs!

Jamaican Black Bean Soup & Flour Dumpling’s ( A “Light” Saturday Lunch )


When  I encountered  Jamaican  dumplings   for the first time in the early seventies,  I would never have imagined that I will ever like them, having been raised with southern german-style dumplings, which are very light and airy (if done correctly).
So when I saw these tough little dumplings, (resembling in shape Schwaebische Bubespitzle), I was skeptical, to say the least. But, while living in Jamaica in the eighties, I have come to love these  Jamaican dumplings, but again – in order to be appreciated, they must be properly prepared, simmering for a long time in a flavorful stock, stew or soup .

Jamaican Black Bean Soup & Dumplings

Jamaican Black Bean Soup & Dumplings



Ingredients :

Stock of your preference, veal, chicken, beef, pork, vegetable
Black beans,   soaked overnight
Onions,   diced
Celery,    diced
Bacon,   diced  (substitute with salt pork if preferred)
Garlic,   paste
Spicy sausage,   pork, veal or beef
Assorted chilis,   select according to your preferred heat level
Tomatoes,  diced
Cumin,
Kosher salt,
Black pepper,   freshly ground
Cilantro,   coarsely chopped
Goose fat,    rendered  (use your favorite fat, canola oil, olive oil, butter, duck fat, goose fat, etc)

Method :

Saute bacon in fat until rendered, add onions, garlic, celery, chilis and sausage and saute until fragrant, add tomatoes, stock and beans. Season lightly with cumin, salt and pepper and simmer until the beans are “waxy”. Adjust seasoning if necessary. To serve, place soup into serving bowl, top with dumplings and sprinkle generously with cilantro .

Dumplings :

Mix flour, water and salt into a smooth dough, roll small pieces into finger shaped noodles and simmer in stock until cooked through. ( Usually like o cook them straight in the soup, but for a nicer presentation I cooked them separate this time for better pictures 🙂

Best Fish Taco

Well, at least for me they were the best in a very long line of disappointing restaurant and food truck fish tacos.
Most of the time, if you want to have the really good stuff, you’ve got to prepare it yourself 🙂
The secret here is the fish batter. You don’t want to have to prep something complicated or difficult for such a simple meal. So here I give you my  “secret”  easy and quick batter recipe:

A/P flour, crushed ice, cayenne pepper, kosher salt, granulated garlic, chilled sparkling water (I use syfo lemon-lime, the only bottled water for me).
Mix all ingredients lightly, don’t worry about a few lumps, they fry out in the hot oil and become crispy. See the prep pic to get an idea about the texture. Then dip the fish into the batter and fry at 375F until crispy and fish just done. Remove to absorbent paper. Build your tacos with your favorit ingredients / condiments.
Voila !  Best fish taco 🙂

Asparagus & Brie Pizza

Ingredient’s :

Dough:

A/P flour,   2 cups (plus more for kneading)
Water,   3/4 cup, warm
Active dry yeast,   1 envelope
Sugar,   1 teaspoon
Olive oil,   3 table spoon
Kosher salt,

Pizza:

Italian sausage,   spicy, sauteed
Asparagus,   green, blanched
Grape tomatoes,   whole
Mozzarella cheese,   shredded
Tomato puree,  fresh
Roasted garlic puree,
Brie cheese,   diced
Asiago cheese,   finely grated
Oregano,   fresh, chopped
Corn meal,

Method :

1.
Pour  water into small bowl, mix in yeast. Let stand until yeast dissolves, about 5 minutes. Brush large bowl lightly with olive oil. Mix 2 cups flour, sugar, and salt. Add yeast mixture and 3 tablespoons oil, knead until dough forms a sticky ball. Transfer to lightly floured surface. Knead dough until smooth. Dust with flour as you work the dough. Transfer to prepared bowl; turn dough in bowl to coat with oil. Cover bowl with moist towel. Let dough rise until doubled in volume.Punch down dough. Pull dough until desired thickness and shape is achieved. If this is too difficult, roll the dough with a rolling pin. However, in my opinion, the pizza will turn out superior if the dough is pulled.
If you like your dough very thin and crispy, proceed with step 2.
If you like your crust a bit more thick and chewy, you might want to pre-bake your pizza dough for a few minutes.

2.
Sprinkle pizza pan or baking sheet with cornmeal, place pizza on it. Brush pizza with olive oil, sprinkle lightly with corn meal. Add tomato puree and roasted garlic puree, sprinkle with mozzarella and oregano. Add all other ingredient’s according to picture. Sprinkle with asiago and freshly ground black pepper. Bake at 500 F until dough is done and edge of pizza is crispy and golden.

Note : This recipe is works well in a home oven without a pizza stone.

Guajillo Chile & Rum Spiced Pork Ribs

Pork rib craving – gotto give in to it 🙂
However, you’ve got to plan this well, because when the craving start’s, it will take another 9 hours of slow cooking time before you can eat your rib’s.
And so it goes:
Make a paste of  “Brugal” rum, kosher salt, guajillo chile, granulated garlic and freshly ground black pepper. Cover both sides of the ribs with a thick cover of the paste. Place rib’s on a rack which sit’s over a pan of water. Cover loosely with aluminum foil and bake at 180 F for 8 hours. (Replenish water if necessary). Remove foil and bake another hour until ribs are nicely colored.
The Verdict : Very tasty, very juicy, very tender, very easy to prepare. Rib’s rule !

Satay’s Meet Rib’s

I wanted  to prepare some chicken satay’s for some time now, but I just never got around to it. So on friday I bought chicken and other ingredients to finally get my satay fix. However, I also bought some pork rib’s, which got me thinking……. Peanut and pork is alway’s a great combination, so why not going that route. No reason not to !  So here we go,  Pork ribs  with an asian inspired peanut glace and  peanut  dipping sauce. Great success !  This will be one of my new standby’s for an informal dinner party 🙂

Ingredient’s :

Pork rib’s,
Peanut butter,
Hoi sin sauce,
Oyster sauce,
Soy sauce,
Scotch bonnet sauce,
Ginger powder,
Garlic,   granulated,
Coriander powder,
Turmeric,
Sour orange juice,
Lemon grass,   dried, chopped
Brown sugar,

Method :

Heat peanut butter with all ingredients except ribs. Add water and whisk until you have a smooth, thick sauce. Simmer for a few minutes.  Set aside most of it to marinade ribs for at least two days. Add some more water to the rest of the sauce to use as dipping sauce. Set aside. After two day’s, bake ribs on a water filled roasting tray, lightly covered with aluminum foil, at  180F for nine hours. Remove cover during the last hour to get a golden color.
(Best to put the rib’s in the oven in the morning, happily thinking about a great dinner to come during the whole day 🙂
The collagen will turn into gelatin, leaving the ribs tender and  succulent. Add  the juices from the roasting tray to the dipping sauce, simmer until the desired texture is reached. Strain. Serve with the dipping sauce, slices of raw onion, cucumber and tomato.

At  first I was going to do a “authentic”  Malay, or Burmese ,or Thai, or Indonesian, or Indian, or whatever “authentic” coconut / curry / noodle / chicken dish. But then, for what ? There is a million and one recipes  (more or less “authentic”)  out there in the internet and book world available to anyone. But by now I believe  (hopefully)  that most of my readers subscribe to   “ChefsOpinion”  because of my interpretations of dishes and the ease  of which they can be duplicated more ore less closely  (adjust to whatever tickles your fancy).  So here we go,  Hans’ authentic  🙂  version of :  Mee Noodles, Straw Mushroom & Chicken In Curry/Coconut Soup.  Enjoy. Don’t break a leg running for authentic ingredients. Use what you’ve got available, what you like and what you can afford. The single most important authentic ingredient required for most dishes is love and passion. If you cook it and folk’s and you yourself love it –  Voilà ! Success !

Mee Noodles, Straw Mushroom & Chicken In Curry/Coconut Soup

Ingredient’s :

Chicken legs,  deboned, cubed
Mee noodles,   cooked, tossed with sesame oil
Chicken stock,
Coconut milk,
Straw mushroom,
Tomato,   seeded, julienned
Avocado,   diced
Onion,   julienned
Chilis,   julienned
Scallions,   sliced
Almonds,   slivered or crashed
Limes,   wedges
Curry powder,
Turmeric,
Garlic paste,
Ginger,   grated
Fish sauce,
Maggi seasoning,
Scotch bonnet sauce,
Kosher salt,
Peanut oil,   to saute

Method :

Saute chicken, add vegetables and garlic, saute for one minute. Add garlic, ginger, curry powder, turmeric and almonds and saute until fragrant. Add coconut milk, chicken stock and salt and simmer for two minutes. Remove from heat. Add fish sauce and scotch bonnet sauce to taste (careful with the fermented fish sauce, check  HERE   first).  To serve, sprinkle with scallions and/or cilantro.

Here  is a new take on ” Obatzter “, ” Illustrierter Camembert “, ” Verruehrter ” :
” Spicy Brie On Pear ”

Obatzter  (Obatzda)  is a traditional spread which is usually served as a snack, most famously at the  Munich  Octoberfest. It has it’s origin in the south of  Germany,  where it was a way to use leftover bit’s of cheese, which were given a new live after being mashed with butter, finely  diced  onions, beer and seasoning. The version below uses chicharones and pears instead of the more traditional bread as accompaniment.
( It’s still not exactly diet-fare  🙂

Ingredient’s  :

Pears,   thick slices, core removed
Brie,   substitute with any soft cheese you might prefer
Pork rinds,   (chicharones)
Butter,   softened
Onions,   finely diced
Beer,
Caraway,   ground
Paprika,
Cayenne pepper,

Method :

With a dinner fork, mash the cheese coarsely. Add the soft butter , beer and seasoning and mash all together until smooth. Fold in the diced onions and scallions.

Hardly  can you prepare a more simple, tasty and satisfying meal then this one.
On top of that, it is fast and easy to prepare and light on the wallet.
What’s not to love about that ? 🙂
The recipe I used today included only the seasonings in the photo on this page.
The version at the link below is a bit more complex. I love both versions equally.

Chinese Pickled Cucumber

Chinese  cucumber  salad.  涼拌黃瓜 (liáng bàn huáng guā)
This is a dish I make often at home. It is easy to prepare, economical , (say cheap if you want  :-). It holds up well in the fridge for a few day’s and I use it as appetizer, side dish or snack during any time of the day, but mostly late at night when I want something tasty, fresh and spicy.

Ingredients :

Cucumbers,   cut into batons
White rice vinegar,
Garlic,   paste
Ginger,   grated
Chili ,   diced  (substitute peper flakes if you must)
Soy sauce,   just a small amount, so as not to discolor cucumbers
Sesame oil,
Kosher salt,
Sugar,

Method :

Salt the cucumbers, cover and let stand for 30 minutes. Discard the salty juices which have collected. Ad all other  ingredients, adjust seasoning if necessary.

Note: For a variation add a teaspoon of finely diced ginger. You can substitute the cucumber with another vegetable such as radish, jicama, cabbage or Chinese cabbage.
