Semolina Dumplings In Clear Oxtail Soup

 Grießklößchen in klarer Ochsenschwanz Suppe, or Consommé de Queue de Boeuf, or Semolina Dumplings In Clear Oxtail Soup, or Griessnockerl Suppe – I have not seen either semolina dumplings nor clear ox tail soup on a restaurant menu for many years. Once, not too long ago, these were standard items in fine dining restaurants, but ist seems that the art of dumpling making and quenelles making is on the verge of dying around here. Of course it takes practice to make them light and fluffy without falling apart and most folks in this part of the world (USA) are not used to eat dumpling or quenelles on a regular basis, so how is a young cook to get a chance to practice 😦  – and, unfortunately, for most cooks to practice the classics for staff meals or at home is simply not interesting or cool enough. That’s how we lose a lot of classic food items – guest’s don’t know them, therefore cooks don’t cook them, and after one or two generations the classic stuff  will have ceased to exist 🙂 In Europe, Asia and South America it’s mostly very different. People are much more educated about food and adore and respect the classics alongside the modern stuff, so younger folks are always introduced to the old classic food’s and both old and new coexist and continue to flourish 🙂

Although  chicken and pasta any style  is one of my favorite dishes, this afternoon I gave myself a choice between hausgemachte spätzle and kartoffelknödel.
Kartoffelknödel (potato dumplings) won today, so I will probably make some hausgemachte spätzle  (small flour dumplings)  in the coming few days.

Jamaican Black Bean Soup & Flour Dumpling’s ( A “Light” Saturday Lunch )


When  I encountered  Jamaican  dumplings   for the first time in the early seventies,  I would never have imagined that I will ever like them, having been raised with southern german-style dumplings, which are very light and airy (if done correctly).
So when I saw these tough little dumplings, (resembling in shape Schwaebische Bubespitzle), I was skeptical, to say the least. But, while living in Jamaica in the eighties, I have come to love these  Jamaican dumplings, but again – in order to be appreciated, they must be properly prepared, simmering for a long time in a flavorful stock, stew or soup .

Jamaican Black Bean Soup & Dumplings

Jamaican Black Bean Soup & Dumplings



Ingredients :

Stock of your preference, veal, chicken, beef, pork, vegetable
Black beans,   soaked overnight
Onions,   diced
Celery,    diced
Bacon,   diced  (substitute with salt pork if preferred)
Garlic,   paste
Spicy sausage,   pork, veal or beef
Assorted chilis,   select according to your preferred heat level
Tomatoes,  diced
Cumin,
Kosher salt,
Black pepper,   freshly ground
Cilantro,   coarsely chopped
Goose fat,    rendered  (use your favorite fat, canola oil, olive oil, butter, duck fat, goose fat, etc)

Method :

Saute bacon in fat until rendered, add onions, garlic, celery, chilis and sausage and saute until fragrant, add tomatoes, stock and beans. Season lightly with cumin, salt and pepper and simmer until the beans are “waxy”. Adjust seasoning if necessary. To serve, place soup into serving bowl, top with dumplings and sprinkle generously with cilantro .

Dumplings :

Mix flour, water and salt into a smooth dough, roll small pieces into finger shaped noodles and simmer in stock until cooked through. ( Usually like o cook them straight in the soup, but for a nicer presentation I cooked them separate this time for better pictures 🙂

I remember with nostalgia when you could get oxtail from your butcher for a buck and a half a pound. Those were the day’s. Obviously long gone, but not forgotten. Nowadays it’s gonna cost an average of $ 5.00 a pound. Considering a nice portion to be about 2.5 pounds, you might only want to prepare this for a dinner party with the best of friends 🙂
Anyway, since I only cook for Bella and myself nowadays, cost was not a concern. Time however is of the essence. You want to cook your oxtails REAL slow, so they get very tender without falling apart. This batch took about 3.5 hours to cook. Was it worth the trouble ? You bet your foot it was. Especially when you also prepare these great potato dumplings to soak up every last bit of the knock-out sauce you get by simmering the meat and vegetables for all that time.

Ingredients :

Oxtail,   cut into single links
Bell peppers,   medium diced
Onions,   medium diced
Tomatoes,   canned, diced
Garlic,    paste
Peanut oil,
Kosher salt,
Cayenne pepper,
Hungarian paprika,
Veal stock,   or substitute
Red wine,
Dark beer,

Method :

Saute oxtails in hot oil until nicely browned on all sides. Remove from pot, set aside. Saute onions and peppers until caramelized. Now it is time to saute the paprika for a minute. Then add salt and pepper.Make sure you dont over season at this point. Remember, the stock will reduce a great deal when simmering for  long period of time. Add wine and beer to deglaze the pan. Return ox tail to pot, cover with veal juice  (substitute with chicken stock, vegetable stock or even water if nothing else is available. Simmer until oxtail is tender. Remove oxtail with a slotted spoon into a clean pot. Adjust seasoning of sauce if necessary. Strain sauce through a fine mesh sieve over oxtail. Make sure you press all the vegetables through the sieve. This will thicken your sauce and give it more body and flavor.
Serve with your favorite pasta or dumplings.

A  few weeks ago I posted :

in response to a request. I mentioned in the post that one can not re-heat bread dumplings in water, as they would become very dense. I promised to post another post soon to explain what to do with leftover bread dumplings. Here are  two very delicious recipes.

A )  ” Semmelknoedel  Salat ”
Dice the cooled dumplings, add diced red onions, diced radish, diced tomatoes, diced cucumbers, diced peppers, sliced chives and dijon mustard vinaigrette and mix all into a Panzanella – like salad. Beautiful and delicious  🙂

B )  ” Geroestete Semmelknoedel mit Ei ”
Quarter the cooled dumplings, then slice into quarter inch slices. Whisk whole eggs with kosher salt and freshly ground black pepper. Saute dumpling slices in butter until lightly browned. Add eggs and sliced chives, saute until eggs start to set. To serve, sprinkle with chopped parsley.
Serve with tomato / cucumber salad.
Note : During the sauteing the dumplings will become crispy on the outside while they aquire a wonderful creamy texture on the inside.

” Tortellini En Brodo ” (Shrimp Dumplings In Broth)

When  I was growing up in germany in the 5o’s, newly arrived immigrant workers who had started new restaurants featuring their own countries food, had opened up a whole new world of culinary delights to regular folk’s who could not afford to go to the more established restaurants. These restaurants were usually too expensive for the working class people. However, it was much more affordable to dine at one of the myriad of quickly sprouting ethnic restaurant’s, opened by families who had recently immigrated to Germany, which at the time was in dire need of workers to the fill hundreds of thousands open job’s during the “Wirtschaftswunder” years. I remember the first time I saw and had the opportunity to savor such exotic treats as pizza, gyros, cevapchichi, tortellini, shashlik, paella, baklava, gelato, etc, etc. It was a time of constant culinary adventure for our family. We tried to experience as many new dishes as possible and had a wonderful time exploring food we never before had heard of, much less seen or eaten. Like I said, there was a time (a few years after WWII ) when even pizza was new and exotic to us. One of my greatest favorites was “tortellini in brodo”. Here is my version of this great soup :

I have made these tortellini with frozen won ton wrappers instead of a regular pasta dough. The wontons wrappers cook much faster then regular pasta dough, so for the filling I used chopped cooked shrimp,  mixed them with egg white, white wine, salt and pepper .

” Fish Dumpling & Shrimp Ball Soup With Poached Egg “

What the heck !? 
Soup with fish dumplings, shrimp ball’s, shrimp, vegetables, chili and poached egg ?
Well, it might sound’s a bit much but it is absolutely delicious, the flavors and textures
go very well together to form a wonderful, multi-facetted dish.

Ingredients:

Shrimp,                           pre cooked, peeled, deveined, half of them tail removed
White fish,                     such as haddock, tilapia, cod
Peas,                                frozen
Corn,                               frozen
Won ton wrappers,
Red chili,                       sliced
Scallion,                        sliced
Cilantro,                        coarsely chopped
Whole egg                     for poaching
Egg white                      for fish dumplings and shrimp balls
Fish stock                     substitute with chicken stock if preferred
Ketchup
Maggi
Salt, cayenne pepper, lemon juice to taste

Method :

Dumplings :
Chop the fish coarsely, add a bit of egg white, salt, cayenne pepper, mix.
Add half a teaspoon to a wrapper, moisten the edges with water.
Top with another wrapper, flatten and cut with a crinkle wheel cutter or a raviolini stamp.

Shrimp balls :
Chop the tailless shrimp to a fine paste. Add sriracha, salt and a bit of ketchup,
Mix and form into small ball’s.

Cook fish dumplings and schrimp balls in salted water until floating,
transfer to salted ice water.

Egg :
Poach in lightly salted water for  3 1/2 minutes, transfer to salted ice water.

Soup :

Bring stock to simmer, add corn and simmer for two minutes.
season with salt, sriracha soy sauce and maggi seasoning.
Add fish dumplings and shrimp balls’, shrimp balls, chilis, green peas and poached egg.
When heated through, plate and sprinkle with scallion and cilantro
