Tonight  I wanted to have something comfortable, belly warming, traditional, for dinner.  I realize that seafood in mustard sauce might not sound traditional to some younger folks out there, but when I was a youngster, fish and other seafood in various types of mustard sauce was a commonly found item on many restaurants friday menu. Even at home, “Fish mit Senfsauce” was a typical friday dinner item, usually served with “Salzkartoffeln” (boiled potatoes).

Sauted Scallops & Shrimp In Whole Grain Mustard Cream

Ingredients :

Scallops,
Shrimp,   shelled & deveined, tail on
White wine,
Heavy cream,
Whole grain mustard,   (I prefer Maille)
Butter,   clarified
Butter,   whole
Sriracha ,
Sea salt,
Lemon juice,

Method :

Season scallops with sea salt and saute in clarified butter until halfway cooked. remove from pan, set aside. Season shrimp with sea salt and sriracha sauce and saute in whole butter until halfway cooked, remove from pan, set aside. deglaze pan with white wine, add heavy cream and juices from the cooked shrimp and scallops and reduce until a light sauce has formed. Remove from heat, add mustard and lemon juice, check seasoning. Adjust seasoning if necessary. Return seafood to the pan, return to heat until heated through. Make sure you don’t let the sauce simmer anymore or your seafood will get tough and dry. Serve with basmati rice.

Last  night I dreamed of the time when as kid’s my brother and I were eating egg salad, which at that time (50+ years ago) was a great treat for us because of the shrimp or crayfish and trout or lump fish caviar my mom used to add to the salad. So after I woke up, during the whole morning I kept thinking about those happy times and although I can not re-create the happiness of a mostly carefree child hood, I can most certainly re-create the dish that reminds me of it. So here we go,  “Tilly’s egg salad with shrimp and caviar” 🙂

Ingredient’s :

Eggs,   hardboiled, peeled, quartered
Shrimp,   cooked, peeled
Caviar,   your preferred type
Tomatoes,   seeds removed, diced
Mayonnaise,   preferably home made
Sriracha,
Lemon juice,
Mustard,
Kosher salt,
Capers,
Scallions,   finely sliced
Butter lettuce,
Mustard vinaigrette,
Bread,   toasted and buttered bread of your choice

Method :

Mix the eggs, shrimp, mayo, capers, scallions, tomatoes, sriracha and salt. Line a serving bowl with vinaigrette dressed butter lettuce , top with egg/shrimp salad. Top salad with caviar.

Totally  had a craving for Cajun shrimp on my way home, so I stopped at the whole food market to get two pounds of these beauties. Expensive but so worth the dough 🙂

Ingredients Shrimp :

Shrimp,   peeled and deveined
Clam juice,
Tomato Paste,
Paprika,
Thyme,
Oregano,
Garlic,   paste
Oregano,
Cayenne pepper,
Kosher salt,
Butter,

Method :

Season shrimp with salt and pepper.  Saute in butter until halfway done. Remove shrimp, reserve. Saute more garlic in butter, add thyme, oregano, cayenne. Add tomato paste, saute another minute. Add clam juice and simmer until slightly thickened. A the reserved shrimp and heat through.  Adjust the heat to your liking, adding as much hot sauce as you can muster.

Ingredients Cheese Grits :

Chicken stock,
Milk,   (about 1/3 the amount of the stock)
Corn meal,   coarse ground
Sharp cheddar,   grated
Kosher salt,
Scotch bonnet sauce,   (substitute with tabasco if you can’t stand the heat)
Butter,   (splurge)

Method :

Bring the milk and stock to a boil and gradually whisk in the corn meal.  lower the heat to a slow simmer and cook for 20 to 25 minutes or until mixture is creamy.
Remove from heat, add the hot sauce, cheese and butter, and whisk to combine.

To serve, top the grits with the shrimp and sprinkle with cilantro.

Early  evening dinner before going to sleep and back to another happy work week.  (Do I have to mention I was NOT  the lucky winner of the $ 6 million Jackpot ?)
I wonder, if I would have won, would I go to work tomorrow…………
Anyway, back to reality and a great meal. I used a shameful amount of roasted garlic puree to season the shrimps and I hope nobody wants a kiss before tomorrow 🙂

Garlicky Shrimp Brochettes & Potato Salad In Dijon Mayonnaise

Simmer  un-peeled potatoes until done. Remove from water, let cool. Peel, slice into thin rounds. Mix with kosher salt, cayenne pepper, a bit of vinegar, mayonnaise, chopped cilantro, sliced scallions  and dijon mustard.

Season the shrimp with sea salt, chili flakes and roasted garlic puree. Saute in butter until almost done. Squeeze one lime over brochettes, turn once and remove from pan.
To serve, spoon some of the lime butter over the shrimps and accompany with potato salad.

Saute  mushrooms, add potatoes,  scallions and peppers, season with (lots) of freshly ground black pepper and (not a lot) kosher salt, add garlic paste, saute until fragrant. Add blanched  broccoli  and shrimp, saute until broccoli is heated through and  shrimps are just cooked. Remove from heat, add  maggi seasoning  (or soy sauce  if you prefer), mix and serve. Goes best with a cold beer 🙂

Time to get excited about  fried rice 🙂
No, not the cabbage and soy sauce laden one you get for two bucks at your corner chinese restaurant. No, I am talking about  my treasure chest of a fried rice which has a whole bunch of goodies in it. Each one (shrimp,chicken, lap cheong, ham, eggs, vegetables), fried on it’s own with rice would make a good fried rice, but here the combination of all of this stuff together makes it a truly memorable dish.

Ingredient’s :

Fan  (飯),   day old chinese steamed rice (Recipe Here)
Chicken,   cubed
Shrimp,   peeled, tail on
Ham,   diced
Lap cheong,   fresh, unsmoked
Scallion,   sliced
Bean sprouts,
Red/green bell peppers,   diced
Onions,   diced
Kernel corn,   blanched
Green peas,   blanched
Eggs,   whisked
Garlic,   paste
Ginger,   grated
Kosher salt,
Cayenne pepper,
Sesame oil,
Peanut oil,   to stir fry

Method :

Season protein and vegetables with salt and cayenne pepper. Saute (stir fry) chicken in oil until medium, remove chicken. Saute shrimp, ham and sausage until shrimp are 3/4 cooked, remove. Saute vegetables, ginger and garlic until fragrant, add rice, fry until rice starts to puff a bit. Form a whole in the center, add more peanut oil, add the eggs. Styr fry until the eggs have set, return proteins to the rice and stir fry until rice starts to pop again. Add bean sprouts, season with sesame oil, salt and pepper. To serve, sprinkle with scallions and more bean sprouts.

Udon Noodles,  Broccoli Rabe,  Shrimp  and Shiitake Mushrooms In Spicy Beef Broth ”
I still had some fresh udon noodles and the beef broth from a few days ago, so what better midnight snack  (1.30 am actually),  then a nice noodle soup. Obviously, this would be fine for any time of the day, breakfast, lunch, dinner or any time in between   🙂

Ingredient’s :

Beef stock,   ( from beef ribs, see  HERE  )
Udon noodles,
Broccoli rabe,   blanched
Shiitake mushrooms,   soaked
Onion,   sliced
Shrimp,   peeled and deveined
Chilis,   sliced
Garlic,   paste
Ginger,   grated
Cilantro,  chopped
Chili flakes,
Lime,   juiced
Kosher salt,
Soy sauce,
Sesame oil,
Sriracha sauce,

Method :

Saute onion, garlic, ginger, mushroom and shrimp.
Add all other ingredients except cilantro and sesame oil,
simmer for one minute. Remove from heat, adjust seasoning
if necessary. To serve, drizzle with sesame oil and sprinkle
with cilantro and chili flakes .

Seafood & Pasta Salad

I came  home from work early today and the
weather outside was just gorgeous . What better than
a book, ice tea and a cool  seafood  salad that can
be prepared in a few minutes. Great afternoon, recharged
my batteries and feel wonderfully relaxed.
Now it is time for a new post, then dinner and a movie,
“Ziti in Wodka Sauce” and “Kill shot”  with  Christopher Walken.

Ingredient’s :

Conchigliette,  cooked, drained
Shrimps,  
poached, peeled, tails remove except three for garnish
Octopus,  canned, drained
Straw mushroom,  canned, drained
Tuna,  canned, drained
Peppers,  diced (3 colors)
Garlic,  paste
Cilantro,  chopped
Scallion,  sliced
Cucumber,  sliced
Egg,  hard boiled,  sliced
Mayonnaise,  freshly made
– (it only takes a minute to make and it’s so much better than store bought)
Horseradish cream,
Lime juice,
Kosher salt,
Black pepper,  freshly ground
Olive oil,
Vinegar,

Method :

Take 1/4 of the seafood and marinade with lime, salt,
pepper and olive oil.
Mix remaining seafood , pasta, part of the horseradish
cream, mayo, peppers, lime juice, salt and pepper. Adjust
seasoning to your liking. Place salad on bottom of bowl,
top with the marinated seafood.
To serve, drizzle eggs and cucumber with olive oil and vinegar,
sprinkle with salt and pepper. Serve with some horseradish
cream to dip the shrimp.   Enjoy  🙂

What the heck !? 
Soup with fish dumplings, shrimp ball’s, shrimp, vegetables, chili and poached egg ?
Well, it might sound’s a bit much but it is absolutely delicious, the flavors and textures
go very well together to form a wonderful, multi-facetted dish.

Ingredients:

Shrimp,                           pre cooked, peeled, deveined, half of them tail removed
White fish,                     such as haddock, tilapia, cod
Peas,                                frozen
Corn,                               frozen
Won ton wrappers,
Red chili,                       sliced
Scallion,                        sliced
Cilantro,                        coarsely chopped
Whole egg                     for poaching
Egg white                      for fish dumplings and shrimp balls
Fish stock                     substitute with chicken stock if preferred
Ketchup
Maggi
Salt, cayenne pepper, lemon juice to taste

Method :

Dumplings :
Chop the fish coarsely, add a bit of egg white, salt, cayenne pepper, mix.
Add half a teaspoon to a wrapper, moisten the edges with water.
Top with another wrapper, flatten and cut with a crinkle wheel cutter or a raviolini stamp.

Shrimp balls :
Chop the tailless shrimp to a fine paste. Add sriracha, salt and a bit of ketchup,
Mix and form into small ball’s.

Cook fish dumplings and schrimp balls in salted water until floating,
transfer to salted ice water.

Egg :
Poach in lightly salted water for  3 1/2 minutes, transfer to salted ice water.

Soup :

Bring stock to simmer, add corn and simmer for two minutes.
season with salt, sriracha soy sauce and maggi seasoning.
Add fish dumplings and shrimp balls’, shrimp balls, chilis, green peas and poached egg.
When heated through, plate and sprinkle with scallion and cilantro

Shrimp salad:

Cooked schrimp’s,                   tail removed, diced, except one for each taco for decoration
Avocado,                                    diced
Red onions,                               julienne
Tomatoes,                                  de-seeded, diced
Chilis,                                          julienne
Yellow peppers                          julienne
Cilantro                                      chopped
Lime juice,
Olive oil,
Salt,
Scotch bonnet hot sauce,
Salt,

Blend all ingredients, season to taste.

Lettuce salad :

Lettuce,                                     julienne
Red onion,                               julienne
Yellow peppers                       julienne
Chilis,                                       julienne
Cilantro                                    chopped
Mayo
Greek yoghurt
Salt,
Scotch bonnet hot sauce

Blend all ingredients, season to taste.

Assembly :

Fill tacos ¾ with lettuce salad. Top with shrimp salad.
Garnish  each taco with one whole shrimp.
Drizzle with yoghurt / mayo / hot sauce mix, Sprinkle with Cilantro.
