I have only recently discovered “Taleggio Cheese”, and I feel sorry for myself to have gone 62 years without enjoying this marvel of Italian cheese making. I only know of one shop around here that carries it. It is one of my least favorite stores because it tries to be everything to everybody, which just does not work.  But since a friend steered me to their cheese section, I have gone there at least once a week, just to get my fill of  “Taleggio Ca De Ambros”
For this dinner, I have sauteed the steak in peanut oil, sauteed the mushrooms with diced onions and garlic paste in butter. I baked the potato until cooked through, then I removed the potato flesh from the shell, added kosher salt, sriracha, butter, sliced scallions, garlic paste  and a generous amount of Taleggio. Then I put the mixture for half a minute into the microwave to soften the butter and cheese, mixed it all well and stuffed it back into the potato shell. Baked it in the oven for twenty minutes and – voilà – best twice baked potato ever 🙂

I usually  shy away from crispy noodle cakes in asian restaurants because it can be a bit messy to eat when you are with company, but I love to prepare it at home, where I can use fork, knife, hands, chopsticks, or whatever else I need to pull it apart.
I actually prefer angel hair pasta for my noodle “pillows”, they fry up wonderfully crisp on the outside while staying soft and juicy at the inside. Today for lunch I topped them with an asian style shrimp preparation, but any “saucy” dish will fit, such as gizzard adobo, hungarian goulash, chicken paprikash, veal emince, etc.

Kartoffelknödel (potato dumplings) won today, so I will probably make some hausgemachte spätzle  (small flour dumplings)  in the coming few days.

Tonight  I wanted to have something comfortable, belly warming, traditional, for dinner.  I realize that seafood in mustard sauce might not sound traditional to some younger folks out there, but when I was a youngster, fish and other seafood in various types of mustard sauce was a commonly found item on many restaurants friday menu. Even at home, “Fish mit Senfsauce” was a typical friday dinner item, usually served with “Salzkartoffeln” (boiled potatoes).

Ingredients :

Scallops,
Shrimp,   shelled & deveined, tail on
White wine,
Heavy cream,
Whole grain mustard,   (I prefer Maille)
Butter,   clarified
Butter,   whole
Sriracha ,
Sea salt,
Lemon juice,

Method :

Season scallops with sea salt and saute in clarified butter until halfway cooked. remove from pan, set aside. Season shrimp with sea salt and sriracha sauce and saute in whole butter until halfway cooked, remove from pan, set aside. deglaze pan with white wine, add heavy cream and juices from the cooked shrimp and scallops and reduce until a light sauce has formed. Remove from heat, add mustard and lemon juice, check seasoning. Adjust seasoning if necessary. Return seafood to the pan, return to heat until heated through. Make sure you don’t let the sauce simmer anymore or your seafood will get tough and dry. Serve with basmati rice.

“Enten Braten” (Roast Duck)

Yesterday’s  lunch reminded me of the sundays of my early youth. It was tradition in our home that my dad prepared sunday lunch at least once a month. Usually this was a “Braten” – a roast, such as a pork but, a  fresh duck from the butcher shop or a freshly butchered chicken from the neighbor, who to the horror of all us kid’s to see, chopped off it’s head on a wooden block in front of his house that very morning. My father prepped all the food, then popped the roast into the oven , got himself a chair right next to it and read the sunday paper for the next two hours, all the while basting the roast with beer every 10 minutes or so. The result was a heavenly feast, enjoyed by the whole family on the table in our eat-in kitchen.

These memories came to mind while this beauty was roasting in my oven. It made me happy for the memories and sad for the fact that I could not share both the memories and the duck with my beloved Maria……..

Season duck inside and outside with with kosher salt and cayenne pepper. Fill a roasting pan with a half bottle of red wine and the same amount of chicken stock, add a generous amount of chopped garlic and some large diced onions. Top with a roasting rack on which you place the duck. Cook at 325F for 2.5 to 3 hours, depending on the size of the duck. The duck should be cooked through, tender but still very juicy. Remove duck to a carving board. Strain the jus from the roasting pan into a small pot, skim of all the fat, add the orange filets and the jus from the oranges and simmer for one minute. Remove from heat and thicken with fresh butter (mount the butter). To serve, carve the duck into your preferred cuts and nape with the orange sauce.

My  butcher had these beautiful, fleshy beef neck bones which begged me to take them home and transform into a tasty dish. Since I had some nice baby carrots and beans in the fridge, what else then a rich “pot au feu” with pasta.
As usual, simple is best 🙂

Ingredient’s :

Beef neck bones,
Penne rigate
Baby carrots,
Baby beans,
Onion,   large dice
Bell pepper,   large dice
Cilantro,   finely chopped
Garlic,   paste
Ginger,   grated
Cayenne pepper,
Kosher salt,
Maggi seasoning,

Method :

Cover neck bones with cold water, add salt, pepper, garlic and ginger  and slowly bring to a simmer, skimming of all scum and most fat which surfaces.
Meanwhile, blanch and shock all vegetables. Cook pasta until al dente, drain. When beef is very tender but not falling of the bone, add vegetables to heat through. Adjust seasoning if necessary.
To serve, place pasta in bottom of serving dish, ladle pot au feu on top and sprinkle with cilantro.

Usually  I prefer rice sticks or mung bean noodles in this kind of soup,
but last night rice seemed to tickle my fancy even more.
Quick and easy to prepare and oh so delicious 🙂

Ingredient’s :

Chicken Drumsticks,   (use any part of chicken you prefer)
Chicken stock,
Bok choy,   blanched
Coconut milk,
Chili flakes,
Rice,   cooked
Lemon grass,   pounded
Scallions,   finely sliced
Ginger,   grated
Garlic,   paste
Kosher salt,

Method :

Simmer chicken, garlic, ginger, lemongrass, chili and salt in chicken stock until tender but not falling appart. Remove chicken, set aside. Strain broth, add coconut milk and simmer for an additional 5 minutes. add bock choy and rice to heat through. Adjust seasoning if necessary.
To serve, add chicken to serving bowl, ladle sou on top. Sprinkle with and sliced scallions and more chili.

Sitting outside in the fresh air the whole evening and most of the night, having good conversations, listening to good music, drinking good wine and just having a great time for many hours has usually different results. Some folks get tipsy, some get tired, some get overly excited about the topics of the night. However, my friends and I usually can agree to one thing around the time midnight strikes: Time to eat ! And no matter how many times my buddies find their way to the fridge and the bar to get more drinks, somehow they always forget where I keep the raw food and the pots and pans.
So, as usual, friday night we all decided we had to have a substantial midnight snack.
Also, as usual, everybody decided that the only one “qualified and sober enough” to do the job of feeding us all would be me 🙂
Here is the crowd pleaser we wolfed down last night:

Ingredients :

Chicken breast,   cut into large “chunks”
Zitoni tagliati,  cooked  al dente, some cooking liquid reserved
Broccoli florettes,   blanched
Onions,   sliced  (lots of them)
Tomatoes,   sliced
Scallions,   finely sliced
Pecorino romano,   finely grated
Mascarpone,
Red wine,   (use the one you are drinking)
Butter,
Kosher salt,
Sriracha,   (lots of it)
Roasted garlic paste,  (lots of it)

Method :

Saute chicken in butter until 160 F, remove , set aside (The carry-over heat and re-heating will take it to a safe 165F). Saute onions and garlic until onions are golden and garlic is fragrant. At this point your butter will have turned into  “buurre noisette”, light brown with a nutty flavor. Add red wine and let reduce by half. Add chicken with its juices, vegetables, pasta and seasoning, saute until heated through. Add mascarpone and pecorino romano. Mix until a creamy sauce develops. If the sauce is too thin, add more cheese, If too thick, add some of the reserved cooking liquid and / or red wine. To serve, sprinkle with more pecorino and the sliced scallions.
