This  is a dish you want to share with your best buddy or closest family on that special, informal occasion. That time when you just want to have a few drinks and eat good, without spending too much time in the kitchen (- or non at all – you can prepare this the day before without baking it, keep it in the fridge and then just jugg it in the oven 15 minutes before you are ready to eat).
Goes great with cold beer, cold white wine or slightly chilled red wine.
P.S.
Although there is a knife and cutting board in the picture below, the whole thing is even more agreeable if you just grab a piece and rip it from the loaf 🙂

Preparation : 

mise en place: Sour dough loaf, sun dried tomato, sliced chives, sliced asiago cheese, crumled gorgonzola, mustard, sriracha, olive oil

score bread in a criss-cross pattern about half way down, in a bowl, mix all remaining ingredients, then stuff them into the breads cavities.

bake at 375 F until cheese has melthed and center of bread is at 165 F

“Canned” Dinner

I am  a big fan of the notion that all food should be as fresh as possible and whenever it is practical, I try to go into that direction. But, alas, sometimes it is just NOT practical. I got home late today, Bella needed her walk right away and by the time I walked her and fed her, it was already 7.00pm. I get up at around 4.00am on weekday’s, so I was pretty beat by 7.00pm. Dinner had to be fast and furious.
Here is what I found in the cup board :
Canned tuna, canned artichokes, canned sun dried tomatoes, mascarpone, dried lasagna pasta, butter, heavy cream, roasted garlick paste  and chives. Add some salt and cayenne pepper and pronto, perfect dinner in ten minutes. 🙂

Sitting outside in the fresh air the whole evening and most of the night, having good conversations, listening to good music, drinking good wine and just having a great time for many hours has usually different results. Some folks get tipsy, some get tired, some get overly excited about the topics of the night. However, my friends and I usually can agree to one thing around the time midnight strikes: Time to eat ! And no matter how many times my buddies find their way to the fridge and the bar to get more drinks, somehow they always forget where I keep the raw food and the pots and pans.
So, as usual, friday night we all decided we had to have a substantial midnight snack.
Also, as usual, everybody decided that the only one “qualified and sober enough” to do the job of feeding us all would be me 🙂
Here is the crowd pleaser we wolfed down last night:

Chickenbreast & Zitoni Tagliati In Spicy Red Wine & Mascarpone Cream

Ingredients :

Chicken breast,   cut into large “chunks”
Zitoni tagliati,  cooked  al dente, some cooking liquid reserved
Broccoli florettes,   blanched
Onions,   sliced  (lots of them)
Tomatoes,   sliced
Scallions,   finely sliced
Pecorino romano,   finely grated
Mascarpone,
Red wine,   (use the one you are drinking)
Butter,
Kosher salt,
Sriracha,   (lots of it)
Roasted garlic paste,  (lots of it)

Method :

Saute chicken in butter until 160 F, remove , set aside (The carry-over heat and re-heating will take it to a safe 165F). Saute onions and garlic until onions are golden and garlic is fragrant. At this point your butter will have turned into  “buurre noisette”, light brown with a nutty flavor. Add red wine and let reduce by half. Add chicken with its juices, vegetables, pasta and seasoning, saute until heated through. Add mascarpone and pecorino romano. Mix until a creamy sauce develops. If the sauce is too thin, add more cheese, If too thick, add some of the reserved cooking liquid and / or red wine. To serve, sprinkle with more pecorino and the sliced scallions.

I did  not feel like having an elaborate meal tonight, so this quick and easy to prepare pizza was all I wanted for dinner. I actually had some pickled artichoke hearts in the fridge but I forgot to use them. Even without the artichokes, it was a very enjoyable, filling and satisfying dinner.
Looking forward though, to tomorrows braised oxtail with potato dumplings.
(Geschmorter ochsen schwanz mit kartoffel knoedeln) 🙂

Pizza Dough Recipe

Ingredients :

Pizza dough
,
Anchovy filets,   canned
Eggs,   whole
Tomato,   sliced
Chili flakes,
Mascarpone cheese,
Parmesan cheese,   finely grated
Scallions,   sliced
Olive oil,

Method :

Pull pizza dough into a thin oval. Top with anchovies, tomatoes and mascarpone, drizzle with olive oil and sprinkle with parmesan. Bake at 500F until bubbling, add eggs and sprinkle with chili flakes, Return to oven and bake until dough is cooked, golden and crispy.
To serve, top with arugula in honey / mustard dressing.

Last night at around 1.30am, after  “a bit”  of vodka and wine, my friend Darryl “demanded” food. Here is what I could muster :
Freshly baked flatbread with salame, mascarpone, egg, mushroom, banana peppers, sriracha and grated asiago cheese.
It might not have been pretty but ist sure hit the spot 🙂

Usually,  sweet stuff for breakfast is not my thing, but today felt so different in many way’s that I thought what the heck! Why not try something different this morning. So I made this great breakfast of french toast with vanilla, cinnamon, sugar, banana and mascarpone, a bowl of strawberry yogurt, chilled chocolate milk, and a giant pomelo with caramelized sugar glaze. What a decadent, wonderful way to start the day 🙂

Note :
You might have noticed in the pictures that contrary to standard procedure, I have not whisked the milk and eggs together but dipped the bread in the sugared and vanilla spiced milk first, then in the egg. This makes for a very different texture of the bread which is in my opinion superior to the traditional method. Just be careful not to soak the bread for too long in the milk or it will disintegrate 😦

” Chocolate & Mascarpone Terrine “

This is my gift to anybody who is not a well versed pastry chef, but a diehard chocolate lover (or a lover of a diehard chocolate lover), who sometimes has to prepare his or her own chocolate fix on short notice without much fuss. I doubt that there are many chocolate desserts out there which are as easy to prepare, yet as rich in texture and pure chocolate goodness as this little gem. Even if you have two left hands, had a few too many drinks, are legally blind and have a case of the jitters, you should still be able to prepare this dish at a moments notice without any difficulty 🙂
You have a choice of the texture being ultra smooth, or, as I did here, studded with shards of chocolate for a more crunchy version. (I’ll explain below)

Chocolate & Mascarpone Terrine

Chocolate & Mascarpone Terrine

Ingredient’s :

Mascarpone cheese,
Chocolate fudge brownies,   (or substitute with your favorite brownies or cookies)
Dark rum,   (or substitute with your favorite booze)
Dark bitter chocolate,   (or substitute with your favorite chocolate
Mango,   (or substitute with your favorite fruit)

Method :

1)    Soak brownies in plenty of rum.
2)   Crumble and whisk until smooth.
3)   Whisk mascarpone until smooth.
4)   Temper chopped chocolate until melted and smooth.
5)   Mix cookies and mascarpone until well blended and smooth.
6)   Slowly add chocolate to mascarpone while whisking vigorously.
7)   Or, alternatively, in order to have a more crunchy texture, add a thin film of chocolate to top of mascarpone without stirring. Let set for a few seconds, then break up the set chocolate and mix into mascarpone. Continue to add remaining chocolate to mascarpone while whisking vigorously.
8)  If desired, add sugar, vanilla and  lemon juice to your liking. ( I usually don’t add anything, for me, the taste of the cheese, rum, chocolate and brownies is just perfect, nothing else needed.
9)   Fill into mold of your choice, let set overnight.
10) To serve, slice terrine or scoop into spheres or quenelles. Decorate with fruit of your choice.
11) Eat, be very happy 🙂
