One For The Kids # 2 – Banana/Nutella Tortilla Roll With Fresh Raspberries And Blueberries

Yesterday  afternoon my friend Ralf came by with his four-year old son Justin.
Ralf and I had some Chili Noodles which were fantastic, but would have been way too spicy for a four-year old, so I made this dish for him. I made this for him before, so I knew he would love it. Heck, so did Ralf and I. (Of course I prepared way too much, so we ate the rest) 🙂
While this is a simple, quick and easy dessert or snack, it is yummy and pretty enough to serve on any informal occasion.

Since I have started to live a healthier life style, my one problem is how to satisfy my sweet tooth without feeling guilty. The solution to my dilemma are sweets without refined or artificial sugar/sweetener, which are increasingly hard to find. So I took to thinking about new recipes which will make me happy with their natural sweetness and are not too offensive to my diabetic restrictions. The following one is definitely a keeper ! 🙂
An added bonus to this recipe is that you don’t need an ice cream machine for its preparation. I used to have one, but I threw it away after a while because the churning cylinder took up too much space in the freezer department of my fridge.

P.S. :
This Ice cream is ready for consumption after about 4.5 hours in the freezer. If you freeze it longer or overnight, you might want to put it from the freezer into the cooler for 15 -20 minutes to facilitate easier spooning (That’s spooning of the ice cream kind, not the other one – although….. 🙂 )

P.P.S. :
If I would still drink alcohol, I would have added a shot of brandy or dark rum to this baby 🙂

Usually,  sweet stuff for breakfast is not my thing, but today felt so different in many way’s that I thought what the heck! Why not try something different this morning. So I made this great breakfast of french toast with vanilla, cinnamon, sugar, banana and mascarpone, a bowl of strawberry yogurt, chilled chocolate milk, and a giant pomelo with caramelized sugar glaze. What a decadent, wonderful way to start the day 🙂

Note :
You might have noticed in the pictures that contrary to standard procedure, I have not whisked the milk and eggs together but dipped the bread in the sugared and vanilla spiced milk first, then in the egg. This makes for a very different texture of the bread which is in my opinion superior to the traditional method. Just be careful not to soak the bread for too long in the milk or it will disintegrate 😦

8 Great Ways to Reuse Bananas

You can reuse the complete banana, from inside out, to assist you with some of life’s every day challenges.

I was inspired by the previous story I wrote, Fuel Starts Going Bananas, to read more about the reusability of bananas. Besides throwing the peels into my backyard composter, I didn’t really know any other things to do with the leftover banana waste.

So I did some research and discovered a bunch of eco-friendly ways to reuse bananas instead of just throwing them away. Here are a few of the most interesting alternatives:

    • A tip from ThriftyFun says that if you happen to get bitten by red fire ants, by rubbing the inside of a banana peel on the bite you will prevent it from itching and getting inflamed. This also works for mosquito bites.
    • You can use bananas as fertilizer, either by putting them directly into your composter like I do, or by cutting them into little pieces and mixing them in the soil. Bananas are great for plants because they are rich in phosphorous and potassium.
    • Rubbing the inside of a banana peel onto your brown leather shoes is a great way to clean them and keep them shiny. Also works for non-leather shoes.
    • The potassium in banana peels can cure you of warts in less than 2 weeks.
  • By gargling with water and salt, and then rubbing a mixture of banana peels onto your teeth for about 2 weeks, they will get significantly whiter.

” Nutella & Banana Ice Cream “

Here is the world’s easiest and arguably best ice cream  :

Ingredients :

Nutella,                   2 cups
Yoghurt,                  1 cup
Milk,                        2 cups
Sugar,                      1/4  cup
Vanilla extract,     1/4 tspn
Lime juice,              1 tspn
Banana,                   1 ea, finely diced

Method :

Whisk all ingredients except banana until smooth.
Transfer to ice cream maker, add banana.
Churn until starting to get firm.
Transfer to airtight container, cover, freeze overnight.

I know this might seem simplistic and unsophisticated to some foodies
and professional chef”s, but believe me, this stuff is so rich and tasty,
it put’s many a sophisticated ice cream to shame     🙂
