“Totopos With Shrimp And Avocado Salad”.
.
The name  totopo  comes from the Aztec word tlaxcaltotopochtl. It is a combination of the word for a tortilla, tlaxcalli, and the word for thunder.
Combined, it means “tortillas that are noisy to chew”.
Originally, totopos are prepared with corn tortillas. They can be fried, as I have done here, or baked or toasted.
However, I sometimes make totopos with flour tortillas, which makes them lighter and, of course, results in a different, more delicate flavor.
They pair perfectly with this refreshing shrimp and avocado salad and make for a wonderful, tasty snack or appetizer.

Salad Of Chili Shrimp, Chicorée Frisée, Pear And Sun-Dried Tomato (Or Is It A Taco ?)

>
>
This  morning for breakfast I had leftover pasta from last night, which required a much lighter lunch and no dinner (Maybe a bit of ice cream though 🙂
So, at around noon, off to the fishmonger down the road to get some fresh shrimp and to the supermarket to see what’s available that would be appealing to my desire for a tasty salad. Red pears, chicorée frisée (endive, curly endive, or frisée) and fresh lime for the salad and its dressing, and a small amount of sun-dried tomatoes and it was on. Twenty minutes after I got home, Bella and I were feasting on this superb creation, wrapped in flour tortillas and accompanied by peach ice tea. Bella ate about half the shrimp and a bit of the tortillas and graciously allowed me to enjoy the rest. Life is Good !

Bon Appétit !  Thanks Bella, for your Generosity 🙂

One For The Kids # 2 – Banana/Nutella Tortilla Roll With Fresh Raspberries And Blueberries

>
>
Yesterday  afternoon my friend Ralf came by with his four-year old son Justin.
Ralf and I had some Chili Noodles which were fantastic, but would have been way too spicy for a four-year old, so I made this dish for him. I made this for him before, so I knew he would love it. Heck, so did Ralf and I. (Of course I prepared way too much, so we ate the rest) 🙂
While this is a simple, quick and easy dessert or snack, it is yummy and pretty enough to serve on any informal occasion.

I just know that somebody out there will be inspired by the look of these tortillas and serve a variation of them as a whimsy “Marrow Bone Dessert” 🙂

Breakfast Of Champions # 48 – Egg-Quesadilla With Boursin

>
>
While  the some of the most traditional condiments to quesadillas are being served again and again for a reason (best fit), I would like to introduce a new, a bit unusual condiment which will be knocking your breakfast quesadilla out of the ball park – Herb & Garlic Boursin. It gives the dish such additional debt and flavor that it has become my standard addition to breakfast quesadillas (I still stick with the traditional condiments for non-breakfast quesadillas ) 🙂

Breakfast Of Champions # 33 – Frittata

>
>
Oscar Night !

Let’s start the day with a breakfast that will help us get trough the day and the better part of the evening strong and fortified 🙂
I am a big fan of frittata, I prepare it quite often, seldom using the same ingredients, except of course the eggs. I use whatever is available from my fridge and / or cupboard. Any vegetables and protein and herbs.
Today it was eggs, herb butter, potatoes, peppers, faziola beans, bok choy and asiago cheese, seasoned with garlic paste, sea salt maggi and sriracha.

Bon Appetit !   Life is Good !

Spicy Lamb Tortilla Wraps

>
>

These  lamb wraps are even tastier than they look.
Twice ground lamb, lots of seasoning and good salsa, a few squirts of lime and fresh guacamole made this a great, quick, economic ( we don’t say cheap 🙂  ) lunch.

Bon Appetit !   Life is Good !

Sauted Strip Steak , Cauliflower Tortilla & Sriracha/Garlic Butter

>
>
Sunday’s  late lunch / early dinner (4.00pm)
After sleeping-in late (7.30am and enjoying a big breakfast of strawberry smoothies and goose liver pate stuffed croissants, I did not feel hungry at lunch time and held out until late afternoon.
But then I knew I would have to combine lunch and dinner, so it needed to be a substantial meal, otherwise the snack monster would haunt me early in the evening. This is the first time I made a Spanish Tortilla with cauliflower and tomatoes and it made me realize what a great dish I’ve been missing all my live. What a wonderful dish. It can stand on it’s own, as breakfast, snack, even a complete meal if accompanied by a small salad, served hot or at room temperature. You can of course use different vegetables, different cheeses, add protein such as sausage, bacon, shrimp, crab meat, add different herbs, etc. The possibilities are endless and only limited by your fantasy 🙂
If you ever want to reproduce this dish, just make sure the cauliflower / vegetables are blanched  al dente, so that the tortilla has a bit of a bite to it. While I was cooking the tortilla, I also added grated parmesan cheese to the whisked eggs, (not featured in the mise en place picture). You can omit the cheese, but it definitely adds another level of depth to the dish.

Tortilla :

Cauliflower rosettes,   blanched al dente
Eggs,  whole, whisked, seasoned with kosher salt, cayenne and grated parmesan
Grape tomatoes,

>
Steak :

Season teak with salt, granulated garlic and freshly ground black pepper and saute both sides until desired doneness. Remember the carry over heat will cook it  one more level after you remove the steak from the pan! Let the steak rest for ten minutes before slicing !
