I am not sure if I should call the this dish “Tostadas”, “Shrimp Salad” or “Shrimp Cocktail”.
It is actually all of the above, so pick the name that best suits you 🙂
All I know is that this was a great dinner after a long day at work , followed by a few hours of running errand’s.
Since I was very hungry and it was already late when I got home, something quick and light was appropriate. After all, at 3.00 am the alarm will sound again and I’ll have to be ready for another long, hard day. I already have started to have my breakfast and lunch according to the “Hans’Lighter, Healthier Comfort Food” Plan, which will start in full on Monday, January 19th. Bragging Alert !!! Best Turkey-Leftovers Sandwich – Ever !

It is my firm believe that leftovers should be as good as the original dish it derived from. Yesterday I prepared this sandwich and I am convinced that not only is it the best left-over turkey sandwich, but also one of the best turkey dishes overall, period 🙂
I usually prepare other dishes from leftover turkey since most turkey sandwiches I ever came across are boring and tasteless at best and at my house during times past the only leftover turkey would be white meat, which I can live without.
So, yesterday I had a nearly insatiable graving for a good sandwich, because on the previous evening I made the mistake of buying two “Vietnamese” sandwiches at a newly opened place, “546 bánh mì café” at 6461 Stirling Road, Davie. I was looking forward to a good sandwich but was bitterly disappointed. I had 3 different sandwiches with different meat fillings, all three were completely tasteless. The clerk asked me if I wanted chillies and of course I said yes. When I got home, I found one !!!  thin slice of chili in one of the three sandwiches. The meat was mostly tasteless and their contribution to Vietnamese food was the addition of a few spritz of maggi seasoning. (Which I am fond of). But the most disappointing thing was the portion size. Although the bread was of a nice size and of great texture, the amount of filling was laughable small. Granted, the sandwiches are very reasonably priced, but I’d rather pay a bit more and have a decent sized sandwich.
Fazit: Once is enough 😦

But back to the sandwich at hand : After I ate my three sandwiches (shared with Bella), I was still hungry and started to fantasize about eating a “real” sandwich the next day. The featured sandwich is what I came up with. I loved it so much that I will add them to my favorite dishes 🙂
Of course, you can substitute the turkey with chicken, beef, shrimp or any other protein you fancy and happen to have at hand, but the turkey leg meat was just perfect. Also, I had a bottle of “salsa de aji amarillo” in my larder which added that special touch of flavor and spiciness.

P.S.
If you don’t have “salsa de aji amarilo”, make a substitute by blending mayo, yellow peppers, salt, garlic, scotch bonnet peppers and turmeric (for the bright yellow color). For hot dishes, replace the mayo with heavy cream. Few folks will be able to tell the difference from the original, especially the bottled stuff.

However, once in a while I like to braise (stew) one because of the delicious sauce this cooking method will produce. So then, this is what I had for lunch today, accompanied by a tall  glass of  iced tea. (No more booze for me, at least for the moment 🙂

While  a genuine Thai, Indonesian, Indian or any other “genuine” coconut soup can be wonderful if properly prepared, sometimes it is impractical to go to the full length of dozens of ingredients just to have a quick, flavorful and economic soup. If you find yourself in such a situation, you might want to try this simple preparation, which can be enjoyed after no more than fifteen minutes from start to finish. Of course, I am all for authentic recipes and I believe we must make an effort to make sure that under normal circumstances and whenever practical, we don’t make unnecessary short cuts because we are lazy.  But sometimes, if you want something tasty and can’t do the big production for whatever reason ………., well, I am sure you’ve got the point 🙂

Preparation :

Caribbean Shrimp & Coconut Soup



Usually,  when we think of the combination of shrimp and coconut, Asian food is foremost in our mind. Lately, every publication seems to have a preference for food with an Asian origin or at least an Asian  influence. While I am a huge fan of Asian food, I am also very fond of the food from our closest neighbor, the Caribbean. Here now is a shrimp and coconut soup I had first put on the menu while I was working in Negril, Jamaica in the late 80’s. (How time flies when you look back)

Preparation :

Easy Does It # 11 – Curry

Although most of my followers are culinary professionals, there is also a large segment of followers who are just starting to enjoy cooking on a slightly higher than basic level. I have therefore decided to publish, under the moniker “Easy Does It“,  from time to time some very basic recipe variations of dishes which otherwise might seem complicated to some folks. I will break them down to the easiest, most simple instructions, so that those of you who are intimidated by elaborate recipes will be able to prepare these dishes properly, adjusted to your taste and liking, right from the get-go.

There  is a great mystery and misconception surrounding a “proper” Indian, Thai, Malay or Indonesian curry. We are to believe that it is too complicated to be attempted by a less than perfect cook, that you will need 101 ingredients, that the ingredients are hard to find, etc, etc.
Now, while a proper curry can be all that and more, “Easy Does It ” is here to help you find a solution to the difficulties of preparing good food.
I am a huge fan of proper Indian and asian Cooking, curries in particular. I have lived in and visited all of the above mentioned countries (and many more) and although I have learned a lot about the local cuisines, I have never become an expert in any one of them. For my private enjoyment I have rather searched and mostly found preparations which will closely resemble some of my favorite exotic dishes but which I can easily prepare at home without getting a shopping cart full of unusual, expensive and hard to find ingredients every time a new craving hits me. Also, please bear in mind that many of the followers of ChefsOpinion live in remote places  and also, not everybody has the means to spend large sums of money on a single meal, yet yearns to taste specialty dishes from around the world.

Here now is a curry sauce which I truly believe will give you that “authentic” taste of India if you add a bit of love and passion while you cook it 🙂
( I have learned a very similar recipe from one of my sous chefs, Said, at his home while I was living and working in Karachi,  Pakistan.

The most important ingredient is your garam masala. Please take the time and effort to make it fresh just before you start cooking. It will be so much superior to the store-bought variety that you will probably never buy it in the supermarket again. Rather, buy the whole seeds and keep them airtight in a dark place in individual containers until you use them.

You will need :
Coriander seeds, black cardamom pods, cumin seeds, mustard seeds, bay leaves, peppercorn, small amount of cinnamon bark. Dry roast in pan on low heat until fragrant, about one minute. Put in spice blender until powder fine. Remove to jar, cover airtight.

Next, saute in ghee finely diced onions, garlic paste and grated ginger until onions are soft but not brown, add turmeric, chili powder, salt, a bit of sugar, lots of chopped fresh coriander with stems (cilantro) and lots of chopped, fresh, very ripe tomatoes. Add chopped fresh chili’s according to your tolerance of heat. Simmer for about 30 minutes. There should be enough moisture from the tomatoes so that after 30 minutes you should have a very thick sauce.
You could use this sauce by itself as a dip for naan (as I do), or use it as base for a quick, simple curry of chicken, vegetables, seafood or even beef. I usually make enough for two or three dishes. I let the base /sauce cool and freeze it in individual containers until I use them.

This  is a remnant from a time when a chicken noodle soup was a remedy for just about anything – a bit of a cold, a bit of a sad day, a bit of exhaustion, not much Mom couldn’t fix with a bowl of chicken noodle soup with egg 🙂
To this day, it is still a dish which, in most of it’s infinite incarnations, will make me feel better, richer, healthier and just all around more alive. Here is one of my many different variations, this one with bone-in chicken, buccatini rice noodles, peppers, shiitake mushrooms, soft boiled eggs and lots of chopped cilantro, all swimming in a freshly made, extra strong chicken soup.

My  butcher had these beautiful, fleshy beef neck bones which begged me to take them home and transform into a tasty dish. Since I had some nice baby carrots and beans in the fridge, what else then a rich “pot au feu” with pasta.
As usual, simple is best 🙂

Ingredient’s :

Beef neck bones,
Penne rigate
Baby carrots,
Baby beans,
Onion,   large dice
Bell pepper,   large dice
Cilantro,   finely chopped
Garlic,   paste
Ginger,   grated
Cayenne pepper,
Kosher salt,
Maggi seasoning,

Method :

Cover neck bones with cold water, add salt, pepper, garlic and ginger  and slowly bring to a simmer, skimming of all scum and most fat which surfaces.
Meanwhile, blanch and shock all vegetables. Cook pasta until al dente, drain. When beef is very tender but not falling of the bone, add vegetables to heat through. Adjust seasoning if necessary.
To serve, place pasta in bottom of serving dish, ladle pot au feu on top and sprinkle with cilantro.
