“Chicken Soup With Matzo Balls And Chicken Dumplings”

If  you love balls (pun intended?), this soup will make you happy. In my own opinion, these chicken balls (ok then, dumplings ! 🙂 ) and these Matzo Ba… Dumplings 🙂  are some of the best dumplings  you can find .
I have previously published quite a few dishes with matzo balls, but this is the first time I combine them with chicken dumplings.
One would think that chicken dumplings are nothing special, but these certainly are an exception to the sea of mediocre or even outright nasty stuff usually being served as chicken dumplings these days.
Very light and full of flavor, they are a far cry from the stuff which many “cooks” will serve you. How do I know that? Because I have been served so much crap labeled as chicken dumplings that I usually don’t order them in restaurants anymore. Mostly they contain less than fresh meat, lots of fillers and they look and taste as if somebody want’s to punish you by making you eat them.
Not these here baby’s !
Prepared from fresh chicken meat with no fillers, tasty and pretty to look at, accompanied by another gift to comfort food in the form of fluffy matzo balls and served in a strong, delicious chicken broth, this is comfort food as wonderful as it can get 🙂

Chicken, Noodle & Vegetable Soup Recipe # 1001

Chicken-noodle soup is probably the most unglamorous yet also one of the universally most loved dishes. Who doesn’t remember the comforting warmth it provided when ones Mom utilized it for that all-curing remedy (along with Vicks’VapoRub) during childhood and later as a grown-up the go-to comfort dish that made everything feel good again ? 🙂
As for me, no week goes by without chicken noodle soup showing up at least once, sometimes twice. If I prepare it for guests, I usually make a boneless version. For myself (and Bella), I always prepare the soup with bone-in chicken. For me, holding a leg or drumstick or wing in my hand and pulling the meat off with my teeth is a big part of the pleasure of eating chicken noodle soup. Here now is the version I had for today’s lunch……

So  now that summer is finally over (at least according to the calendar), soups will be on the menu more often to warm our frozen bones (or we could turn the A/C from 72F to 78F ?) 🙂
Anyway, I myself never need an excuse to prepare myself a pot of soup, especially any variation of chicken-noodle soup, which I eat as often as twice a week. Following is today’s version :

Jerk Chicken-Stuffed Matzo Ball Soup

My  love for matzo ball (Knaidlach) soup should surprise no one at this point, since I have posted quite a few different post’s with this marvel of traditional comfort food at Chefsopinion.
As for  Jerk Chicken – WHO doesn’t love that ??!
Now, I have to confess that the chicken I used here was not a real jerk chicken, but rather diced chicken leg seasoned with jerk-seasoning and then sautéed. However, this “jerk chicken”served its purpose as a filling for the matzo balls perfectly, so I will not nit-pick about it 🙂
Both Bella and I were enamored with this soup and will no doubt have it again and again 🙂

My
 very own preference for chicken to use in a soup are the wings, which makes for a bit of messy eating at the dinner table. (Bella does not mind 🙂 )
So, if this is an issue for you, you might want to replace the wings with boneless diced chicken leg.
On the other hand, chicken noodle soup was never meant to be an elegant dish, so what the heck, use whatever makes you happy!

Simmer wings with water, sliced ginger, sliced garlic, kosher salt and cayenne pepper until wings are cooked through, about 30 minutes. Remove wings, set aside. Meanwhile, cook pasta, strain, toss with a bit of sesame oil. Strain soup, return to simmer, add chilies, broccoli rabe, tomatoes, scallions, hot sauce, soy sauce and wings, simmer another minute. Check / adjust seasoning. To serve, add pasta to serving dish, top with soup, wings and veggies, sprinkle with more scallion.

Coconut Soup With Silkened Chicken & Snow Peas



While  a genuine Thai, Indonesian, Indian or any other “genuine” coconut soup can be wonderful if properly prepared, sometimes it is impractical to go to the full length of dozens of ingredients just to have a quick, flavorful and economic soup. If you find yourself in such a situation, you might want to try this simple preparation, which can be enjoyed after no more than fifteen minutes from start to finish. Of course, I am all for authentic recipes and I believe we must make an effort to make sure that under normal circumstances and whenever practical, we don’t make unnecessary short cuts because we are lazy.  But sometimes, if you want something tasty and can’t do the big production for whatever reason ………., well, I am sure you’ve got the point 🙂

Preparation :

marinade diced chicken breast in soy sauce, lime juice, kosher salt, five spice powder, grated ginger and garlic paste, add corn starch, mix well

cook pasta of your choice, drain, blanch snow peas, shock in icewater, drain,  heat chicken stock seasoned with kosher salt, cayenne, garlic paste, grated ginger

add coconut milk, simmer for three minutes

after simmering snpw peas one minute, schock in ice water

after simmering snow peas one minute, shock in ice water

add fresh shiitake mushrooms and chicken to simmering stock, simmer for three more minutes

add pasta and snow peas to serving bowl

add drained pasta and snow peas to serving bowl

ladle soup with chicken and shiitake on top of pasta and snow peas

Chicken Noodle Soup & Egg

This  is a remnant from a time when a chicken noodle soup was a remedy for just about anything – a bit of a cold, a bit of a sad day, a bit of exhaustion, not much Mom couldn’t fix with a bowl of chicken noodle soup with egg 🙂
To this day, it is still a dish which, in most of it’s infinite incarnations, will make me feel better, richer, healthier and just all around more alive. Here is one of my many different variations, this one with bone-in chicken, buccatini rice noodles, peppers, shiitake mushrooms, soft boiled eggs and lots of chopped cilantro, all swimming in a freshly made, extra strong chicken soup.

Chicken / Noodle Soup

Tonight  we have lousy weather here in Miami, rainy, cold, windy. What better way to feel cozy and warm at home than to enjoy a good, rich, flavorful  chicken noodle soup ! Chicken legs, gizzards, cabbage, bok choy, ginger, garlic, jalapenos, peppers, onions, carrots, celery, maggi and chinese  egg noodles. Afterwards a good glass of merlot and early to bed – Bliss !

Chicken soup cured all “weh weh’s”
If I had a runny nose, slightly elevated temperature,
a lowdown of any sort, or just pretended I was not fit for school that day,
the first order of help from my mother was usually  “Chicken soup”
Whatever vegetables and starch was available in that moment went into
a pot with whatever part of chicken was available right then and there and
in no time was transformed into a bowl of comfort and goodness.
And YES ! There where fat-eyes swimming on top of the broth –
And NO- we did not die from them   🙂
