Although  this dish might not look very “light and healthy”, the small portion served makes it as promised – “Hans’ Lighter, Healthier Comfort Food”. (I share the portions pictured with one of my neighbors) 🙂
I have, contrary to classic cooking methods, omitted to saute the coppa ham, prosciutto ham and the salame. I rather love the taste and texture of the protein without sauteing them over piping hot pasta (make sure you slice the coppa, prosciutto and the salame paper-thin), but as usual, if you prefer to saute them, don’t hesitate to do so.

Soupe A L’Oignon Au Crème (Creamy French Onion Soup)

If  you think that french onion soup is one of the best soups in the world you are undoubtedly right. But did you ever eat its lesser known cousin, creamy french onion soup? Once you do, you’ll probably be hard pressed to decide which version is the better one, the more famous gratinated clear version or this creamy one, which I have enhanced here with toasted bread, toasted almonds and fried garlic chips. I am of course a huge fan of both versions, but for me, the creamy version is the clear winner.
Way back, during my youth in the old countries, these two variations  alternated on the menus of many restaurants of all types and they also were a cold weather staple in many homes, where often lager beer was added for even more richness. 🙂

So now that things are finally back to normal (for a short while anyway, Xmas is looming around the corner, ready to attack), I had this wonderful dinner yesterday. The only sour note was that I had no duck fat in my larder to fry the potatoes, so I had to use olive oil. Same crispness and really good taste, but not as divine as when cooked in duck fat. (Got a tub on my way home from work today) 🙂

Risotto  is such a delicious, easy preparation of rice that I am amazed it does not show up more frequently in homes and restaurants. Maybe because it has a stigma of being difficult to prepare and labor intensive, which is far from being the truth. While it does take time to prep and simmer for ca 25 minutes while stirring constantly, it might be called tedious but hardly  labor intensive. It also has the advantage of being the perfect dish for a dinner party if done by the “restaurant method” – cooking the risotto about 2/3’s and then cooling off, later finishing the cooking process for just a few more minutes right before service time. (That’s how you get your risotto served on time in restaurants, otherwise too much time would pass from the time you order to the time you get served). Just remember to have the texture of your risotto slightly more liquid when you remove it from the stove top then you actually prefer the risotto when eating it, since the rice will continue to cook and absorb liquid between the time you stop cooking and the time you’ll have your first spoonful.

BREAKFAST OF CHAMPIONS # 42 – Brandade

While  a traditional brandade is usually made with salted cod (bacalao) and olive oil, over time many different variations have evolved. Today I’ve had a version that has evolved in my own kitchen. When Maria was still alive, I prepared bacalao for her often, since it was one of her favorite food’s and many times she asked for it to be prepared as brandade.
I myself, on the other hand, am a stout hater of bacalao ever since I encountered  klippfisk and lutefisk (bacalao) the first time while I was working in Sweden during the early 70’s. While FRESH  bacalao /torsk / cod / kabeljau remains one of my favorite fish’ of all time, the salted / dried / lye’d versions are not something I’d eat voluntarily, although I have cooked thousands of portions over time for guests in restaurants around the world and mostly for fellow sailors during my time as crew cook on Royal Viking Sky. I became quite an expert in preparing it, making many a Swede, Norwegian, Spaniard, Portuguese and any other bacalao / klipfisk / lutefisk- lover happy 🙂
So, while I don’t like bacalao, I adore brandade, so at home I make different versions often. I’ll have it for breakfast, lunch or dinner and sometimes, if I cook too much (usually), for all three meals on one day, served with different sidings and condiments.
So there you have it – a not so traditional “Smoked Salmon & Spinach Brandade”

My  favorite Asian market carries about 30 different types of fresh mushrooms at all times, not to mention a myriad of dried ones. Today I bought a nice selection of different fresh ones, the whole lot was less than $ 10.00. What a great bargain . The fresh spinach linguine ran about another $ 3.00, plus the cream, butter and seasoning, so the whole lot (which feeds 3 normal people easily) came to about $ 15.00, or $5.00 per person. Not a bad deal I’d say 🙂

Here  is a “Daughter” (added cream) version of one of the two  white  mother sauces (the other being Sauce Béchamel)
If you love to cook or just starting to learn, being able to prepare the mother sauces is a must.
The five  french mother sauces  are:
Sauce Béchamel, Sauce Espagnole, Sauce Hollandaise, Tomato Sauce, and Sauce Velouté.
Adding cream and lemon juice (and originally egg yolk) to a sauce made of stock, flour and butter will produce a “Sauce Allemande”
We have learned how to make  tomato sauce  in a previous  “easy does it”   blog, so let’s go straight to “Sauce Allemande”

Please note :  This is beef (or veal) velouté  (before adding the cream)

Living  in Florida does not necessarily lend itself to be inspired to cooking with mushrooms, but thankfully the markets around here carry small offerings of fresh mushrooms which I like to enrich by adding some good quality dried mushrooms. Today I got some fresh baby bellas, oyster mushrooms and botton mushrooms, to which I added dry shiitakes and porcini’s. To intensify the mushroom flavor even more, I added some porcini powder to the sauce as well.
And voilà  –  Mushrooms Galore 🙂
