Midnight Snack – Good Stuff ! Not Crappy Bags of “Nachos & Salsa”

Life is Good – mostly because life is what you make of it 🙂
Take the snack I prepped for myself an hour ago for example. Rather than opening an over-prized bag of crappy nachos (Totopos), a can of over-prized, VERY crappy cheese dip and a tub of sometimes surprisingly decent salsa Mexicana, why not grill up a good quality naan and cover it with a few slices of great quality coppa ham, pecorino cheese and a few marinated chilies and pronto ! – great food for about the same price and effort.  Life (and a midnight snack) is what you make of it 🙂

Although  this dish might not look very “light and healthy”, the small portion served makes it as promised – “Hans’ Lighter, Healthier Comfort Food”. (I share the portions pictured with one of my neighbors) 🙂
I have, contrary to classic cooking methods, omitted to saute the coppa ham, prosciutto ham and the salame. I rather love the taste and texture of the protein without sauteing them over piping hot pasta (make sure you slice the coppa, prosciutto and the salame paper-thin), but as usual, if you prefer to saute them, don’t hesitate to do so.

Sour dough bread sauted in garlic butter, boursin cheese,
coppa ham, fried egg, chili flakes, sea salt.  Ahhhhhhh…… 🙂

Frisée Salad, Coppa Ham & Gorgonzola Cheese

Lately,  more and more often, I fancy to having just a nice salad for dinner. With a glass (or two) of your favorite merlot. Of course the salad must be substantial and can not be boring, otherwise I will raid the fridge two hours later. This salad however did not make me go back for more food and it definitely did note bore me. On the contrary, what a great combination of flavors and textures,  completely satisfying as a full meal.

Ingredient’s:

Frisse salad,   dark green parts removed
Coppa ham,   thinly sliced
Gorgonzola,   wedges
Avocado,   wedges
Tomatoes,   wedges
Great northern beans,   canned, rinsed
Onions,   finely sliced
Radishes,   finely sliced
Dijon vinaigrette
( Raspberry vinegar, olive oil, kosher salt, freshly grated black pepper, dash of lime juice, dijon mustard, roasted garlic paste )

Method :

Mix all ingredients except ham and gorgonzola with the vinaigrette. Plate, drape with the coppa and gorgonzola, garnish with fresh basil. Serve with your favorite wine and bread   🙂
