Turkey Season Is Over – Let The Steak Season Begin

So now that things are finally back to normal (for a short while anyway, Xmas is looming around the corner, ready to attack), I had this wonderful dinner yesterday. The only sour note was that I had no duck fat in my larder to fry the potatoes, so I had to use olive oil. Same crispness and really good taste, but not as divine as when cooked in duck fat. (Got a tub on my way home from work today) 🙂
So, without further ado, I give you :

BREAKFAST OF CHAMPIONS # 43 – Rib Eye & Mushroom In Cream

Aaaahhhhhhhh……,  the bliss of being able to sleep in on a Sunday morning, amplified by the fact that summer day light saving times ended and we set back our clocks one hour before going to sleep 🙂
But, somehow, Bella was not aware (or maybe she just choose to ignore) of these little facts, so guess who was moaning in front of my bedroom for me to get up at 4.00am this morning, demanding to go for a walk?
So, when we came back at 5.00am, a decent breakfast was called for (by both of us). Steak and mushrooms pacified my shattered nerves and put both me and my lady back on good terms 🙂

Preparation :

Usually,  I don’t fancy much angel hair pasta, but for these mushrooms in a light,
creamy white wine cream they were the perfect pasta to be paired with 🙂

” Rotelli, Cepes, Peppers & Chorizo “

Tonights quick and tasty dinner :
Rotelli, cepes, peppers and chorizo, giving non- offal lovers a break today .

( Offal  will be back tomorrow, three dishes to go   🙂

Ingredient’s

Rotelli,                          cooked al dente, strained, reserve some cooking water
Chorizo,                        sliced
Cepe mushroom,        re-hydrated
Onions,                        julienned
Chili peppers,              julienned
Garlic paste,                to taste
Kosher salt,                 to taste
Cayenne pepper,         to taste
Olive oil,                      to saute
Cilantro,                      coarsley chopped
Manchego,                  finely grated
Butter,                           whole, not melted
Olive oil,                      to saute

Method :

Saute onions, garlic and cepes in olive oil, until fragrant,
add chilies, pasta and seasoning, toss well. remove from heat.
Add  manchego cheese, butter and a bit of the cooking water from the pasta.
Toss again until the pasta is covered with a thin film of cheese sauce.
(Starch from the pasta, the butter, water and cheese will combine into
this delicious sauce). To serve, sprinkle with cilantro and more manchego cheese.
