When my  mother in law , Nilda, was still healthy and living with us, she made roast  chicken over  potatoes and onions at least once a month. She did not  spatchcock  (what a funny word to say and write) the chicken, but rather left it whole to cook on top of the potatoes.  I  on the other hand, feel that to spatchcock the bird will give a superior result, both for the chicken and the potatoes. It will allow the potatoes to soak up all the juices and flavor from the chicken during the  cooking  process and at the same time it allows the chicken to cook very evenly, cooking all the way through but leaving both the legs and breast’s very juicy. Since the  coarse salt  will not all run down the side of the chicken as when you roast it whole, it will give the skin a unique texture, rather like a chinese style pepper & salt preparation. I used the same  spice mix  for the chicken and the potatoes / vegetables  – kosher salt, sriracha, melted butter, granulated garlic. Mix the seasoning and butter with the potatoes and vegetables. Rub the chicken on both sides with a generous amount of butter and seasoning. Place the potato / vegetable mix on a rack  which sit’s on a baking sheet, filled with half water and half red wine. Cook in the center of the oven at 390 F  for approximately two hours. My chicken was VERY big, so it took two hours to reach a internal temperature of 16o F. After removing the chicken from the oven and letting it rest for another 15 minutes, the carry-over heat will take the temperature to a safe 165. This will leave the chicken safe to eat and the meat, including the breast, very moist  and tender.
Finally, strain the jus from the sheet pan and adjust the seasoning if necessary. Serving suggestion : See pictures  🙂

A  few weeks ago I posted :

Rinds Rouladen & Semmel Knoedel  ( Beef Roulade & Bread Dumplings )

in response to a request. I mentioned in the post that one can not re-heat bread dumplings in water, as they would become very dense. I promised to post another post soon to explain what to do with leftover bread dumplings. Here are  two very delicious recipes.

A )  ” Semmelknoedel  Salat ”
Dice the cooled dumplings, add diced red onions, diced radish, diced tomatoes, diced cucumbers, diced peppers, sliced chives and dijon mustard vinaigrette and mix all into a Panzanella – like salad. Beautiful and delicious  🙂

B )  ” Geroestete Semmelknoedel mit Ei ”
Quarter the cooled dumplings, then slice into quarter inch slices. Whisk whole eggs with kosher salt and freshly ground black pepper. Saute dumpling slices in butter until lightly browned. Add eggs and sliced chives, saute until eggs start to set. To serve, sprinkle with chopped parsley.
Serve with tomato / cucumber salad.
Note : During the sauteing the dumplings will become crispy on the outside while they aquire a wonderful creamy texture on the inside.

” Tilapia Meuniere & Sauteed Asparagus

  1. Heat a sauté pan over medium heat for a minute, then add a couple of tablespoons of clarified butter.
  2. Season the fish fillet to taste with kosher salt  and  cayenne pepper.
  3. Dredge the fish in flour and shake off any excess.
  4. Sauté fish for 2 to 3 minutes or until there’s a nice golden-brown color, then carefully flip it over.
    Cook for another couple of minutes or until this side is golden-brown, too.
  5. Remove fish from pan and place it on a warm plate.
  6. Add a chunk of whole butter  to the pan and cook until it turns slightly brown.
  7. Now top the fish with few tablespoons of  lemon juice  and some chopped parsley , pour the hot butter onto the fish and serve right away.

” beef heart skewers with spicy bean salad and chimichurri.

I had expected a whole lot of negative comments on cooking with offal.
To my surprise, most comments were positive and encouraging.
Many readers welcomed the opportunity to see food which is hard to find
in other publications these days.
(Never mind the fact that one food critic called a group of seattle chefs :
” Innovative and daring for using the whole animal in their kitchen’s “) . Daaahhhh.
Real chef’s have never stopped doing that, just as real, experienced food lovers have
never stopped searching for it and enjoying it whenever available.

So here it is, Beef Heart Shashlik .
It may be an acquired taste, but once you do have acquired it, …….  🙂

Ingredients :

Beef heart,          diced, soaked in milk for at least 8 hours
Salt,                      to taste
Cayenne,             to taste
Garlic powder,   to taste
lemon juice,        to taste
Corn starch,       to dredge
Onions,               wedges
Olive oil,             for sauteeing

Method :

Season meat and onions liberally with pepper and garic powder,
dredge skewers in corn starch, shake of excess corn starch and saute
(grill if you prefer) until crisp on the outside, still light pink in the center.
When almost done, add onions to the pan and saute until meat has
desired temperature and onions start to caramelize. Sprinkle heart with
kosher or sea salt, drizzle with lemon juice, remove to absorbent paper.
Season onions with salt, pepper and garlic powder, remove to absorbent paper.
Serve with any salad and condiment / sauce,  such as chimichurri,
horse raddish, spicy salsa, mustard, etc.

Here is my answer to a question some of my new readers have once in a while :

I love the dish! But where is the recipe ?

To answer those questions :
The ingredient’s (except most standard seasonings) are usually pictured in the first (the Prep) picture..
The idea is to have you add as much /  little of one ingredient as you like :
Don’t like much garlic? Add less! Love garlic?  Add more.
In savory cooking, recipes are usually just guidelines, which you should interprete
according to your taste , preferences and availability. (Don’t like butter? Use olive oil !
Don’t like butter nor olive oil? Use Canola oil or peanut oil or whatever fat you like !
Prefer your soup / sauce thicker or thinner ? Add more or less thickener !
Don’t want fat in your food? Leave it out!
Most reader like this format, especially the once who have fallen on their butt
by following “EXACT” recipes to the dot, just to find out they don’t give you the pictured  result      : -(

And yes, many of my recipes have the approximate amounts printed   🙂

So please remember :
To truly learn a dish, one must understand what the temperature, moisture and time does to the ingredients. (Amongst many other things).

” Healthy Mac & Cheese and Guacamole “

“Healthy”  mac & cheese ?  Why not, it’s got veggies  🙂
Well, there you have it. It all depends on how you look at things.
But honestly, what’s wrong with a good meal of pasta, cheese, cream
and vegetables ? Nothing ! Just don’t do what I did :
Eating too much of it at one time. ( The pic’s of the individual portion
should indicate a proper portion for the health- and weight- conscious).
Everybody else : Just dig in and enjoy.

Life is too short to feel miserable about thing’s that make you feel good!

Ingredient‘s :
Pasta:

Ziti,                          cooked al dente
Carrots,                   blanched
Broccoli,                 blanched
Celery,                     finely diced
Garlic,                     paste
Whip cream,
Whole egg,            whisked
Salame,                  diced
Sharp cheddar,    shredded
Parmesan,            shredded
Brie,                        finely diced
Salt,                        to taste
cayenne,                to taste
Chili flakes,          to taste
Maggi,                   to taste
Butter

Guacamole :

Avocado,               diced
Lime,                      juiced
Fresh chilis,         finely sliced
Cilantro,                coarsely chopped
Garlic,                    paste
Salt,                        to taste
Cayenne,               to taste

Method :
Pasta :

Butter a ovenproof casserole generously with butter.
Mix all ingredients except the chili flakes and half the parmesan.
Fill casserole to the rim, sprinkle with parmesan and chili flakes.
Bake until set and crust is golden. Serve with Guacamole.

Guacamole :

Mix all ingredients until guacamole has the texture you desire.
The more you stir, the more the avocado breaks down and the
guacamole becomes smoother, less chunky.

” Mock Pappardelle, Chorizo, Asparagus, Carrots & Gorgonzola “

My dilemma is:
I love pappardelle, but I seldom make fresh pasta
at home and I have never seen pappardelle on a store shelf,
at least not here in South Florida. The solution?
Use lasagna sheets. Break them into irregular shapes before
you cook them. The result was very satisfying for me and I will
resort to this many times to come, if, for whatever reason, fresh
pappardelle are not available or impractical to make from scratch
at the time.  ( For whatever reason ) .
Don’t knock it before you try it !      🙂

Ingredients :

Pappardelle,                  cooked al dente, strained  (or substitute pasta)
Chorizo,                          thinly sliced
Asparagus,                     blanched
Carrots,                           blanched
Gorgonzola,                   coarsely crumbled
Garlic,                              paste
Black Pepper                  freshly ground, to taste
Salt,                                  to taste
Olive oil

Method :

Saute garlic and chorizo in olive oil until garlic becomes translucent,
Add all other ingredients except gorgonzola,  saute until all ingredient’s
are well combined. To serve, top with crumbled gorgonzola.

” Whole Sauteed Fish & Guacamole “

Last nights great dinner :

Whole sauteed fish & guacamole

Freshly caught fish, seasoned with salt, pepper and lime juice,
lightly dusted with a mix of AP flour and corn starch,
slowly sauteed in olive oil, some onions and garlic added towards the end.
I had some grape tomatoes laying around, so in the guacamole they went.
Three medium sized fish were just the right portion for Bella and I   🙂
