Breakfast Of Champions # 45 – Pan Perdu (Arme Ritter) (French Toast)

If  there is one dish made of stale bread that is served just about anywhere in the world it is Pan Perdu, also known as:
Germany (arme ritter), England (poor knights of windsor), USA and Kanada (french toast), France (pain perdu), Russia (grenki), Spain (torrijas), Finnland (köyhät ritarit), Hungary (bundás kenyér), Turkey (ekmek balığı) Holland (wentelteefje), Austria(pavesen), Portugal (rabanadas). This is but a small part of a large number of countries which serve pan perdu in one form or another.
The most basic form of preparation is stale bread or cake soaked in a mixture of milk, egg and sugar, then sauteed. From there on, many variations exist, with a few or many other ingredients added -white wine, honey, brandy, cinnamon, fruits, cream cheese, maple syrup and countless other variations, even savory ones. My own version this morning was pretty basic, I did however use chocolate pound cake instead of bread and dusted the sauteed pan perdu with castor sugar and cinnamon. You can imagine the improvement.  The hot, very sweet pineapple also added to the enjoyment of this oh so simple leftover dish. Truly a champion of a breakfast, worthy to be served to a champion 🙂

A great  way to start a relaxing saturday at home with a couple of good movies, some good reading and lots of great food is to have a hearty breakfast of bubbly and a wonderful sandwich.
Here is what I fancied for a late breakfast by the lake this morning (besides a glass of veuveclicquot):

Naan with eggs, spicy chorizo, shrimp, chilies and arugula. Life is Good !

Breakfast Of Champions # 32 – Milanesa Mexicana

This  exact dish was my daily breakfast staple for a few months back in 1975, when I spend extended time vacationing in Puerto Vallarta, Mexico.
At that time, Puerto Vallarta was still a smallish, sleepy city with few hotels and minimal night life. Puerto Vallarta became internationally famous after American director John Huston filmed his 1963 film The Night of the Iguana in Mismaloya, a small town just south of Puerto Vallarta. I still have a photo from 1975 which I took on the beach where Elizabeth Taylor and Richard Burton were having their “sexy” beach scenes. It was basically a deserted piece of beach where only a few hippies and locals hung out. In the shot I took, there are as many pigs as people roaming the beach.
Times and Puerto Vallarta sure have changed since then 😦
However, at the time, the group of friend’s I spent most night’s with was a show band from Ireland named “Los Irlandeses”. They performed at the night club of the only 5-star hotel in town, the Westin Hotel, located on a small beach just outside of town. Their show started at around 11.00pm five times a week and that’s when and where I usually started my evening. They made sure to talk to me from the stage when I got there during the show and treated me as if I were a VIP. Since this was the hottest place in town, this little game made sure that by the time the show ended at around 1.00 am, there were already a few groupies sitting on my table, ready to party with the guy’s from the band and I.
We usually partied until 6.00 or 7.00 am (we were very young and sleeping during the day when it was hot made sense. Only the tourists came for a tan 🙂
So, at that time of the day, we usually went to a restaurant/bar in an area close to the beach which served great food (all food was good at that time of day). Almost all the time my best friend at the time who was the drummer of the band and I ended up ordering the same dish, day after day – Milanesa, accompanied by guacamole, salsa mexicana and fried egg’s, washed down with a few Dos Equis beers.
This was the usual daily before going to bed ritual. The Getting out of bed ritual in the late afternoon usually involved  a couple of dos equis and a mexican style chicken and lime soup, containing shredded chicken, rice, vegetables and lots of cilantro.
So there you have it : Milanesa Mexicana and a few memories 🙂

Here is how it’s supposed to be :

You have a big, substantial breakfast, go to your job and work hart, have a quick, light, healthy lunch, keep on working until it is time to go home, have a light, healthy dinner with a small glass of red wine, go to bed early, sleep at least 8 hours, get up and do it all over again 🙂

Here is what’s really happening :

You have a quick, sugary, unhealthy breakfast, go to your job and work hart, have a quick, unhealthy lunch, keep on working until it is time to go home, have a heavy, calorie and fat-laden dinner, with a bottle or two of red wine, go to bed late, don’t sleep enough, get up and do it all over again 😦

So, today, after a long and deep sleep, I tried to start the right way, with a healthy, tasty, substantial breakfast.
I will keep you posted how it will develop from here for the rest of the day…………

Ingredients :

Cooked Fan,    (steamed chines rice)
Seafood stock,   substitute with chicken stock or canned clam juice
Shrimp,   peeled and deveined
Bok choy,   blanched
Garlic,   paste
Garlic,   slivered, fried
Onions,   finely julienned, fried
Ginger,   grated,
Bean sprouts,
Scallions,   coarsely sliced
Peanut oil,
Chili oil,
Sesame oil,
Kosher salt,
Cayenne pepper,

Method :

Simmer rice with in stock, salt and pepper until a porridge like texture is achieved. In the meantime, fry onions and garlic separately until golden. Remove to absorbent paper. Reserve. Saute Shrimp, garlic paste and grated ginger until   fragrant and shrimp about halfway cooked. When congee has reached the desired texture, add the shrimp, bock choy and scallions, simmer until heated through, about one minute. Adjust seasoning if necessary. To plate, drizzle with sesame oil and chili oil, sprinkle with fried onions, fried garlic, bean sprouts and scallions.

Scallions,   finely sliced

Method :

Whisk the eggs lightly with heavy cream, salt and pepper.
Heat a pan,
Add the butter to melt, add the eggs and cook until done to your likeness.
Pour into serving dish and top with caviar and scallions.  Enjoy !

Usually,  sweet stuff for breakfast is not my thing, but today felt so different in many way’s that I thought what the heck! Why not try something different this morning. So I made this great breakfast of french toast with vanilla, cinnamon, sugar, banana and mascarpone, a bowl of strawberry yogurt, chilled chocolate milk, and a giant pomelo with caramelized sugar glaze. What a decadent, wonderful way to start the day 🙂

Note :
You might have noticed in the pictures that contrary to standard procedure, I have not whisked the milk and eggs together but dipped the bread in the sugared and vanilla spiced milk first, then in the egg. This makes for a very different texture of the bread which is in my opinion superior to the traditional method. Just be careful not to soak the bread for too long in the milk or it will disintegrate 😦
