Dear  Friend’s,
Although most of my followers are culinary professionals, there is also a large segment of followers who are just starting to enjoy cooking on a slightly higher than basic level. I have therefore decided to publish, under the moniker “Easy Does It“,  from time to time some very basic recipe variations of dishes which otherwise might seem complicated to some folks. I will break them down to the easiest, most simple instructions, so that those of you who are intimidated by elaborate recipes will be able to prepare these dishes properly, adjusted to your taste and liking, right from the get-go.

In  anticipation of my splendid dinner to come (you’ll see), I decided to have a very simple late lunch. Before I came to the USA I had never seen or eaten mac & cheese and for the first few years I was not interested in it either, always having been served the packaged version and never been able to understand its appeal. However, when I started to make my own, using quality ingredients, good seasoning and pasta cooked al dente, I changed my opinion and became a fan like millions of others :-).
I have used all kind of different cheeses and added many other ingredients, such as mushrooms, vegetables, protein etc.
Here now is what I consider to be a basic version. Just make sure you season properly, don’t overcook the pasta and most of all, use the best quality sharp cheddar you can find.

Asian Inspired Fiery Lamb With Egg Noodles And Vegetables

This  is comfort food at it’s finest.
What quick, easy and affordable food can be more comforting than spicy, juicy noodles with ground meat of any type, vegetables of any sort, seasoned to that just slightly burning mouthfeel that feel’s oh so good and satisfying after your taste buds have adjusted to the heat after the first few bites.
Tonight I have used lamb, egg noodles , cabbage, peppers, onions and scallions, but you could use any protein, such as pork, beef, chicken, shrimp, scallops. You  could also substitute the egg noodles with any other type of pasta, as well as use the vegetables of your choice/ availability. This is such a versatile dish that only your fantasy  limits your choice of ingredients.
Experiment for a bit and you will arrive at your very own favorite version of this dish 🙂

Saute  mushrooms, add potatoes,  scallions and peppers, season with (lots) of freshly ground black pepper and (not a lot) kosher salt, add garlic paste, saute until fragrant. Add blanched  broccoli  and shrimp, saute until broccoli is heated through and  shrimps are just cooked. Remove from heat, add  maggi seasoning  (or soy sauce  if you prefer), mix and serve. Goes best with a cold beer 🙂

Bad cholesterol, depression, high blood pressure; these are all conditions that often prompt a trip to the pharmacy. But now, physicians are administering a different treatment entirely: produce. Doctors at select clinics across the country are writing some obese patients “prescriptions” for fruits and vegetables.
The Fruit and Vegetable Prescription Program provides daily $1 subsidies to buy produce at local farmers markets. FVRx, as it is also known, is funded throughWholesome Wave, a non-profit organization which operates from private donations. Each member of a family gets the $1 prescription so, for example, a family of five would end up getting $35 per week to spend on fresh fruits and vegetables.
Janet Lopez is a cashier at a sporting goods store and lives in Washington, D.C. with her two children, brother and mother. She and her family are part of the Unity Health Care clinic’s prescription program and have been buying the subsidized produce since May. She said they all have been eating more fruits and vegetables because of the program.
“It is an encouragement because now I actually see that my kids love all of this stuff and before I couldn’t get it because it wasn’t cheap. Not only that but I also didn’t know how healthy it actually is,” Lopez said.
In addition to subsidies, FVRx has patients meet with their physicians to check up on their health including their height, weight, blood pressure and body mass index. The program also offers exercise and cooking classes.
“A lot of kids are picking up on how to eat vegetables and realizing they’re not actually yucky, it’s actually, ‘Oh, it’s delicious,’ because they’re learning to cook it themselves,” Lopez said.
And organizers said they use this family oriented approach because even if the whole family isn’t obese, they don’t want one member of the family eating fruits and vegetables while the rest just keep eating junk.

Chicken soup cured all “weh weh’s”
If I had a runny nose, slightly elevated temperature,
a lowdown of any sort, or just pretended I was not fit for school that day,
the first order of help from my mother was usually  “Chicken soup”
Whatever vegetables and starch was available in that moment went into
a pot with whatever part of chicken was available right then and there and
in no time was transformed into a bowl of comfort and goodness.
And YES ! There where fat-eyes swimming on top of the broth –
And NO- we did not die from them   🙂

“ Red Lentils & Bell Pepper Burgers “

Red Lentils & Bell Pepper Burgers,
Served With Raita

For one of those meatless, healthy day’s  🙂

Ingredients

2 lbs red lentils, cooked until tender

2 lg egg

½ cup panko breadcrumbs

1 med green bell pepper, diced, sautéed

1 med red bell pepper, diced, sautéed

1 med onion, finely diced, sautéed

Garlic, minced, to taste, sautéed

2 tblsp Cilantro,  coarsely chopped

Cumin, to taste

Curry powder, to taste

Kosher salt, to taste

Cayenne pepper, to taste

Oil to sauté


Method

Mix all ingredients except the tofu and oil. Shape into ball’s, make an indent and fill with tofu.
Sprinkle lightly with additional bread crumb’s and sauté until golden and heated through

Raita

Grated cucumbers greek yoghurt, garlic powder, cilantro, salt, pepper.
Use quantities according to your preferences.

” Spicy Yee Mee Soup, Pork & Vegetables “

Yesterday I simmered some pork belly and used half of it to make ” Pork Belly Tacos ”
I saved the other half of the belly and the stock for today’s Dinner.
The result was just  as delicious as I expected. In most fine dining in Europe and
the United States we usually don’t use pork stock. In Asia on the other hand, it is a
common soup base  and widely appreciated for its richness and debt.

Skipped breakfast today, so at 11.00am, early lunch.

A friend   asked me the other day to make some stew for
him and his wife, so he’ll be happy when I show up in a while
with a steaming pot of this  🙂

Tonights dinner : ” Quer durch den Garten ” .

When I was a kid, during the summer and the harvest season my  mother, usually at least twice a month on a saturday, made a stew she called “quer durch den garten”, which literally translates into “across the garden”. It was never the exact same stew because she used whatever fresh vegetables were available that day and usually a stew cut of beef, sometimes sausages or chicken. As starch it was either potatoes, pasta or rice, depending on what was leftover in the fridge or readily available from the cupboard. when we sat down to the table we never knew which starch or protein to expect. However, there was always an abundance of fresh vegetables and herbs. I believe this is the dish which has installed in me my live long love for stew’s of any kind.
