Comfort  food – the moniker say’s it all – it gives you comfort and leaves you in a better state than you were before you consumed it.
And the best thing about it is that not only does it make you feel good and satisfied, it usually is also uncomplicated and easy on the wallet.
I have included spicy Italian sausage “meatballs” here since I had leftovers from yesterdays dinner. Frozen tomato soup is a staple in my freezer, since I usually make a large batch and freeze whatever I don’t eat right away. ( Empty” Crystal Light” containers are perfect and free for this). So all that was needed for this beauty of a soup was to cook the pasta, heat the soup and saute the sliced  sausages in garlic oil.
Voilà – instant great comfort and happiness 🙂

Iced Tomato Soup With Vodka And Tropical Fruit



The  day before yesterday I started to make a tomato bisque for dinner but had to abandon the plan when unanounced visitors arrived. So I put the tomato stock  overnight in the fridge to finish the bisque yesterday after work. However, it was a rough day at work and whenI came home I wanted to spend some time outside on the terrace. Yesterday was a fairly hot day, so a hot tomato soup did not sound like the best of dinner ideas. Instead, I prepared for myself this delicious, refreshing cold soup which hit the culinary nail right on the head 🙂

Preparation :

simmer water, red wine, garlic paste, kosher salt, sugar, cayenne pepper for two hours, cool overnight

Tomato Bisque , Morcilla Dumplings & Pasta

Morcilla  lovers – this dish is a knock-out !
As far as morcilla dishes go, it does not get much better, I can assure you 🙂
I know that not everybody shares my love for morcilla, but for those who do, this soup is magic.

Morcilla –
(blood pudding, blutwurst, boudin noir, sanguinaccio, blodkorv, boldpølse, kaszanka).

If you do re-create this dish, make sure the dumplings are as light as possible but holding their shape. The should easily fall apart when lightly pressed with a spoon.
If you are not a fan of morcilla, you can use any other protein such as fish, seafood, veal, game, pork or even finely diced vegetables.

Although most of my followers are culinary professionals, there is also a large segment of followers who are just starting to enjoy cooking on a slightly higher than basic level. I have therefore decided to publish, under the moniker “Easy Does It“,  from time to time some very basic recipe variations of dishes which otherwise might seem complicated to some folks. I will break them down to the easiest, most simple instructions, so that those of you who are intimidated by elaborate recipes will be able to prepare these dishes properly, adjusted to your taste and liking, right from the get-go.

Tomato Bisque

This is one of those soups where I have to make enough for two day’s,
because one meal of it’s goodness is just not enough to satisfy the quarterly
craving that  is nagging me    🙂

Ingredients :

Tomatoes,       15 lbs
Onions,              1 lb
Celery,                 1 lb
Garlic,                 8 oz coarsely chopped
Rice,                    4 oz uncooked
Olive oil,             1/2 cup
Heavy cream,     2 cup
Chicken stock    1 gall
Oregano,             1 bdl
Basil,                    1 bdl
Cayenne,             to taste
Salt,                      to tase

Method :

Add all Ingredients except cream to a large stock pot and simmer for about 2,5 hours.
Blend until VERY smooth. Add cream and simmer for another 15 minutes.
Adjust seasoning and serve.

Note :
Bisques were originally thickened with rice.
This made the bisque smoother and silkier than using flour or other thickeners.
