A great  way to start a relaxing saturday at home with a couple of good movies, some good reading and lots of great food is to have a hearty breakfast of bubbly and a wonderful sandwich.
Here is what I fancied for a late breakfast by the lake this morning (besides a glass of veuveclicquot):

Naan with eggs, spicy chorizo, shrimp, chilies and arugula. Life is Good !

Sometimes,  in our quest to make evermore beautiful, innovative, stunning, different food, we forget that a simple sandwich, if done well, can give enormous culinary satisfaction if it hit’s the right spot at the right time.
This afternoon was the right time for me to just have a sandwich, a cold beer and a good movie 🙂
The sandwich was a scrumptious  Chicken Sandwich,  the brewskies were  Negra Modelo’s  and the movie was  Reservoir Dogs.

Preparation :

score the top of a  skinless chicken breast crosswise, season with cayenne pepper, kosher salt, granulated garlic and garam masala, saute in butter until just done, remove to catting board, let rest for 5 minutes

cut 2 bretzel rolls in half, reserve 2 top parts, top with romaine leaf and garlic aioli

Although most of my followers are culinary professionals, there is also a large segment of followers who are just starting to enjoy cooking on a slightly higher than basic level. I have therefore decided to publish, under the moniker “Easy Does It“,  from time to time some very basic recipe variations of dishes which otherwise might seem complicated to some folks. I will break them down to the easiest, most simple instructions, so that those of you who are intimidated by elaborate recipes will be able to prepare these dishes properly, adjusted to your taste and liking, right from the get-go.

This  savory marmalade is the perfect condiment to meats and vegetables. I also use it as a sandwich component when I make meat sandwiches. It is super easy to make and holds in the fridge for a good amount of  time.

Short Rib Sandwich

Often  when we use leftovers, if we just add a bit of imagination and love, the resulting dish can be at least as enjoyable as the original and sometimes even better. This was surely the case here. The original Beef Short Rib’s Braised In Merlot were a wonderful dish, but the leftovers were just as tasty and satisfying, with some added spices and flavors, served on a toasted kaiser roll with salad in dijon vinaigrette, they took on a whole new personality. Good Stuff 🙂

” No Frikadelle Tonight – It’s Beef Burger Time ! “

Tonight I will hopefully convince everybody that you can love
both, a good frikadelle and a good beef burger.
As usual, I will put my own twist on it.

Cheeseburger My Way “
As you know, in order to get all the benefits of good quality ground beef, you must choose the best quality meat and handle it as little as possible. In this case I took two 14 oz striploin and grinded them at home with my cuisine art. In order to keep the meat from drying out, I made a  pepper jack cheese and butter sandwich, which I then encased with the meat and shaped it loosely, avoiding to press it too much as to keep the texture of the meat loose and tender. The flavor added by the melting butter and cheese to the beef while it cooks takes the whole thing up three notches.

Cut hoagie rolls or bun of your choice in half, spread generously with Butter and broil cut side until golden. Set aside.
Carefully spread the beef out on a cutting board in a ¾ # layer without squeezing it.
Sprinkle with kosher salt, black pepper and a dash of garlic powder.
Lightly mix without squeezing it.
Divide into four parts.
Put one part of the beef on a cutting board, top with the cheese / butter sandwich,
cover with another part of beef and form a loose patty.
Repeat with rest of ingredient’s.
Sautee in olive oil until it almost reaches the required doneness.
Discard oil, add two tablespoon of butter and sautee until butter starts to brown.
Let rest on absorbent paper for five minutes before serving.
Use garnish of your choice. For dipping I use ketchup, dijon and sriracha.
