Seems like everybody loves fried camembert, yet few folks actually prepare it at home. Which is a mystery to me, since it is really quick and easy to prepare and it is versatile – it can be served as an appetizer, a main course or as a snack. Best of all, it is very economical. (After all, I am a poor retiree 😦  ).
In olden times, we used just one coat of simple breading. However, nowadays I like to use panko crumbs, which requires double breading. The texture is of course very different so you might want to experiment which one of the two versions you prefer. They are both great, it’s just a matter of personal preference.

Gnocchi Alla Via Candia

Gnocchi  with corn, peas, ham, mushrooms, cream and Camoscio d’Oro.
(Camoscio d’Oro is an Italian cheese similar to camembert or brie, sometimes available in Italian markets around here ).
So, can you guess where I ate this dish the first time?  Yep, at  Via Candia 17, Torino, Italy.
I was about 20 years of age at the time and to this day, when I close my eyes, I can see the dish and the people I shared it with in front of me as if it was just a little while ago.
Happy memories, may they never fade…….. 🙂

Sadly,  most of us will not be able to attend the real  Oktoberfest  in  Munich  this month 😦
So, to help you dream about actually being there in person, here is one of the quintessential dishes one might consume together with a  Maß Bier  (or  even a few Maß )  at the Oktoberfest  or any other beer-garden, or, as I did today, in my chair in front of the TV, watching the Oktoberfest on Deutsche Welle TV and having a Maß  of iced tea 🙂

Baked Camembert In Phyllo

Here  is a dish that takes less then five minutes to
prepare, yet is just awesome on so many levels –
taste, look’s, ease of preparation.      🙂

Ingredients :

Phyllo sheets,
Olive oil,
Camembert,   diced
Kernel corn,   blanched
Green peas,   blanched
Cilantro,   chopped
Roasted garlic paste,
Bell pepper,   diced
Cayenne pepper,

Method :

Brush four sheets of phyllo with olive oil, stack.
Mix all other ingredients, season with pepper.
Cut Phyllo sheets in half across. Top with cheese
filling, fold phyllo over cheese. Brush with olive oil,
bake at 390 until golden and cheese starts to melt.
Serve with arugula/radish in raspberry vinaigrette.
