Gnocchi, Prosciutto, Asparagus & Parmigiano Reggiano

“Pretty”  is not usually the first thing that comes to my mind as far as food is concerned.
But looking at this dish, the thoughts were first : Pretty ! Then : Let’s eat right NOW !
Usually we saute the prosciutto lightly but in this case, it was so thinly sliced and delicate,
just adding it to the top of the dish seemed the right thing to do.
And yes, I just preferred the texture and taste this way. Good Stuff 🙂

Ingredient’s :

Gnocchi,   cooked, reserve some of the cooking liquid
Asparagus,   blanched
Prosciutto,   VERY finely sliced
Parmigiano Reggiano,   finely grated
Parmigiano Reggiano,   finely sliced
Grape tomatoes,
Garlic paste,
Olive oil,
Kosher salt,
Cayenne pepper,

Method :

Saute gnocchi, asparagus and tomatoes in olive oil, season with salt and pepper. Add grated cheese and a bit of the gnocchi cooking liquid and toss until everything is lightly coated. To serve, top with prosciutto and very finely sliced cheese (use potato peeler to slice cheese).

Dear Friends,

I had to think long and hard what I’ll do without Maria. I came to the conclusion that she would not have wanted me to give up life at this point (I was close, but thanks God for Bella…).
I am aware that the pain of losing her will never go away, but I will have to take care of Bella and myself in order to honer the memory of Maria.
Since Maria was the biggest fan of “ChefsOpinion”, I have decided to start posting again and hope that she still enjoys reading it wherever she is and sharing the dishes with me in spirit.
I hereby dedicate all future posts to Maria and our love for each other, our love for sweet Bella and our love for good food everywhere 🙂

Ingredient’s :

Spaghetti,   cooked al dente, some cooking liquid reserved
Walnuts,   shelled
Cashew nuts,   shelled
Olive oil,
Cilantro,
Cranberries,   freeze dried
Pecorino romano,   finely grated
Kosher salt,
Black pepper,

Method :

In a blender blend nuts, olive oil, cilantro, salt, pepper and cheese until your preferred texture is reached, If too thick, add more oil, if too thin, add a bit more cheese. Remove from blender and add the cranberries. Let steep for at least two hours.
Mix with freshly cooked and drained spaghetti and a small amount of the cooking liquid. If required, add more cheese and/or cooking liquid.
To serve, sprinkle with more cheese and freshly grated black pepper.

Pizza With Anchovies, Mascarpone, Tomato & Egg

I did  not feel like having an elaborate meal tonight, so this quick and easy to prepare pizza was all I wanted for dinner. I actually had some pickled artichoke hearts in the fridge but I forgot to use them. Even without the artichokes, it was a very enjoyable, filling and satisfying dinner.
Looking forward though, to tomorrows braised oxtail with potato dumplings.

Pizza Dough Recipe

Ingredients :

Pizza dough
,
Anchovy filets,   canned
Eggs,   whole
Tomato,   sliced
Chili flakes,
Mascarpone cheese,
Parmesan cheese,   finely grated
Scallions,   sliced
Olive oil,

Method :

Pull pizza dough into a thin oval. Top with anchovies, tomatoes and mascarpone, drizzle with olive oil and sprinkle with parmesan. Bake at 500F until bubbling, add eggs and sprinkle with chili flakes, Return to oven and bake until dough is cooked, golden and crispy.
To serve, top with arugula in honey / mustard dressing.

Arroz Fritto ” Carlos Ayala “

This dish is dedicated to my dear friend Carlos, who is Argentinian and loves his chorizo and chimichurri 🙂

Tonight my cupboard and fridge were not exactly over stocked, so here is what I had and used to make this hearty, tasty dish:
Rice,
Argentinian chorizo,
Eggs
Scallions,
Bell peppers,
Garlic,
Onion,
Olive oil,
Chimichurri,
Kosher salt,
Cayenne pepper,

Saute the onion and garlic in olive oil until fragrant. Add the chorizo and saute until the onions and garlic start to turn golden. Add the peppers and scallions and saute for another minute. Remove, set aside. Wipe the pan ( or Wok) clean with a paper towel. Add more olive oil and saute rice until it starts to “pop”. Make a whole in the center of rice. Add a bit more oil. Scramble your whisked eggs until fairly dry. Mix with rice and sausage / vegetables, saute (stir fry) together for a few more minutes until rice is light, fluffy and fairly dry. To serve, top with more scallions and chimichurri .

Pasta. Basta !

Sometimes, in our quest to create ever more complicated, fancy, elaborate, inventive, trendsetting dishes, we tend to forget why we fell in love with a food item in the first place. In most cases because in it’s true form and simplicity, it is perfect and can’t be much improved. It can be altered, changed, made more fancy, more colorful, spicier, fattier, more unrecognizable, deconstructed, more expensive (yep) or whatever,  but in its original form, texture, and flavor it will alway’s be the star it has originally been. Without a doubt pasta is one of these food items. If properly prepared, it needs little or no embellishment to satisfy most senses. “Pasta Aglio E Olio”  or, my personal favorite, Pasta Aglio E Burro” are the most basic dishes which, when prepared with love and knowledge, will produce the most satisfying meal or separate course in a meal. Here we have another basic, “Bucatini  Pomodoro”

Cook pasta about 3/4 to doneness, drain, reserve some of the cooking water. Saute roasted garlic paste in butter or  olive oil, add chopped peeled tomatoes, add a few sprigs of basil, simmer until tomatoes break down. Remove basil sprigs, blend tomatoes with a stick blender. Season with kosher salt and  cayenne pepper. Add pasta, some of the cooking water, butter and finely grated pecorino and simmer until pasta is al dente. Add more water during the simmering if needed. To serve, sprinkle with more cheese.

Frisée Salad, Coppa Ham & Gorgonzola Cheese

Lately,  more and more often, I fancy to having just a nice salad for dinner. With a glass (or two) of your favorite merlot. Of course the salad must be substantial and can not be boring, otherwise I will raid the fridge two hours later. This salad however did not make me go back for more food and it definitely did note bore me. On the contrary, what a great combination of flavors and textures,  completely satisfying as a full meal.

Ingredient’s:

Frisse salad,   dark green parts removed
Coppa ham,   thinly sliced
Gorgonzola,   wedges
Avocado,   wedges
Tomatoes,   wedges
Great northern beans,   canned, rinsed
Onions,   finely sliced
Radishes,   finely sliced
Dijon vinaigrette
( Raspberry vinegar, olive oil, kosher salt, freshly grated black pepper, dash of lime juice, dijon mustard, roasted garlic paste )

Method :

Mix all ingredients except ham and gorgonzola with the vinaigrette. Plate, drape with the coppa and gorgonzola, garnish with fresh basil. Serve with your favorite wine and bread   🙂

I wish I could order food like that in a restaurant around here !
Everybody seems to serve the same old  stuff, (grilled fish with mango salsa anyone?), desperately trying to be “innovative”, “modern”, “on the edge”. But sadly, what I mostly find is mediocre food that has been invented and created a long time ago, then suffered a long and steady decline in quality and substance at the hand of badly trained cooks and so called chefs . We now find the most outrageously crappy food for even more outrageous prices in a vast majority of restaurants. I fully acknowledge that there are lots’s of great chefs out there but unfortunately, they are the minority in a sea of mediocracy or worse. How about some more top quality, simple, tasty, beautiful “REAL FOOD” . I would not mind paying top $ for a plate like this if it were fresh, good tasting, clean and nicely presented. Unfortunately, most “hip” folk’s think food like that has no place in a restaurant and it would be beneath their advanced eating habits to consume . (In public, anyway). While I appreciate as much as the next person food that is prepared and presented in an artful, unexpected, unconventional way, on a day to day basis I prefer great food  which is practical and economically sound. After all, most of us have to cook the stuff before we can eat it. While there are plenty folk’s out there who apparently can run up a dinner bill of a few hundred or even a few thousand bucks a few night’s a week, most of us are not that privileged but nevertheless deserve to eat good (and, many times, much better) on a reasonable budget.

Perciatelli, Tomato & Poached Egg

Ingredients :

Perciatelli,   cooked al dente, some cooking liquid reserved
Eggs,   poached
Tomato,  chopped
Garlic,   paste
Olive oil,
Basil,   stems removed
Kosher salt,
Black pepper,   freshly ground
Parmigiano reggiano,  grated

Method :

Saute garlic paste in olive oil until fragrant, add tomatoes and basil leaves and saute for three minutes. Remove basil, add salt and pepper and mix in blender until smooth. Poach eggs in lightly salted and vinegared water to your desired doneness. Toss perciatelli  with olive oil, cheese and a bit of the cooking water until a thin film of sauce forms. To serve, drizzle tomato sauce over pasta, top with poached eggs. Sprinkle with cheese and garnish with fresh basil.

Spiders From Mars

Just  a light dinner tonight with one of my favorite ingredients – Octopus.
In the seventies I spent a lot of time in the  Mediterranean  and some of my  fondest memories take me back to  Turkey,  Spain  and  Greece and their great seafood.. Almost all memories I possess of that time are connected to food. Parties, dates, travel, good times and bad times, all somehow  lead to (mostly) great meals. Most involved seafood of one way or another. While there were too many outstanding meals to count, the ones I remember the most were the many octopus dishes I had, and of those, the ones I had in  Mykonos. To this day I can picture exactly in my head walking along the very small area in town, right on the water, where the fishermen had hung up their freshly caught little monsters on racks in the fresh air. We used to pick the ones which appealed to us the most, took a chair at one of the tiny restaurants right there on the other side of the walk way and just pointed the waiter to our catch, which he then took to the cook who added nothing more than salt, garlic,  olive oil  and lemon juice and grilled it to perfection. Memories……….
I am fond of octopus of any size and any preparation, so today on my way home from work when I saw some nice baby octopus at my neighborhood Asian store, there was only one option for dinner tonight : ” Baby Octopus Salad ” .
( Once I looked at the finished dish,   ” Spiders From Mars ”   just came to my mind and stuck there   🙂

When it comes to baby octopus, folk’s have different opinions and preferences. Some people eat the head, others remove it (me). Some grill or saute them straight, others simmer them first until tender (me), then continue to grill or saute. Some like them in complicated sauces, others just simply grilled or sauted (me). Baby octopus curry anyone? Good stuff   🙂  So if you love seafood but have not yet tried these little creatures, it is high time to get a bit adventurous and put them on the menu.

Insalata di Ciliegie

I love  these little mozzarella balls dressed with a nicely aged balsamic vinegar, a good amount of garlic, salt, black pepper and good quality olive oil. In this version of a classic antipasti dish, I have replaced the traditional olives with cucumbers and the basil with scallions and added grape tomatoes and finely diced onions. To me, this gives a more vibrant and fresh, crispy texture and taste. However, add whatever tickles your fancy, such as marinated peppers, pearl onions, different mushrooms, etc, or even as I sometimes do, good quality canned anchovies.

Arugula With Chorizo Stuffed Chilis

A  quick and tasty dinner this evening.
I had pasta for breakfast and lunch ,
so I tried to lighten it up a bit for dinner  🙂

Prep a small salad with arugula, grape tomatoes, shaved asiago cheese, onions and raspberry  vinaigrette.
Slit  chilis  on the side and remove ribs and seeds. Remove  chorizo  from casing. Stuff the chilis with the chorizo. Wrap top half of stuffed chili with bacon. Dust with cornstarch and saute until bacon is crisp and chilis are cooked. Serve with salad. Enjoy !
