Yesterdays leftover potatoes from the   Spatchcocked Chicken “Nilda’s Way”  made for a terrific breakfast this morning. The potatoes were super flavorful from all the chicken fat / juices and the liver gave it some extra debt. All in all a dish wich is great without the special potatoes, but outstanding if you have special ones on hand as I did  from yesterday’s leftovers  🙂

Saute your leftover potatoes and thinly sliced Argentinian  Sopresata until sausage start’s to lightly brown at the edges, add whisked eggs, kosher salt, freshly ground black pepper and cook until eggs are set to your liking. To serve, sprinkle with cilantro and finely grated parmigiano reggiano.

Breakfast Of Champions # 16 ” Strammer Max “

Back  in my youth, in Germany and Austria you were able to order this breakfast dish in any Hotel and in many  “Gaststaetten” , mostly for breakfast but also as a snack during any time of the day or evening. Of course at that time there was freshly ground pepper instead of the sriracha sauce, but other than that, strammer max has not changed in a hundred years. Obviously, it is as simple and good today as it was then  🙂
Toast a good bread of your choice until golden, spread with roasted garlic paste, top with sauted ham and fried egg (add sliced cheese between ham and egg if you prefer), drizzle some sriracha and sprinkle with fresh herbs. Accompany with a small salad and ketchup and scotch bonnet sauce.

“Breakfast Of Champions # 15 ” – Scrambled Eggs…..

Don’t  you just hate it when you go to bed real late because you don’t have to work the next day and you look forward to sleeping-in in the morning, just to have your sweet dreams shattered by your inner alarm clock  at your regular get-up time (3.30am).  Why does my inner alarm clock not work when I forget to set my electronic alarm or when there is a power-out during the night ???  Anyway, since I was up and was going to watch a movie  ( Amour, by Michael Haneke ), a good breakfast was in order :

” Scrambled egg’s with naan, greek yogurt, Argentinian chorizo and sauted grape tomatoes, corn and peppers in herbed  garlic butter

Good start for the last day of 2012   🙂

P.S.
Make sure you cook your eggs in the rendered chorizo fat after sauteing the sausages.
They’ll  loose a bit of their bright color but they gain so much flavor  🙂

Breakfast Of Champions # 12 “Bistec Empanizado” (Cuban Breaded Steak)

Breakfast  time is slowly but surely becoming the  best part of my off day’s.
It is always something  I can eat with gusto, usually while watching a good movie.
That’s the way all day’s should start   🙂
Then, on to some form of exercise, in my case an hour long walk with Bella
(sometimes two hours), then do the day’s home chores.

Life is Good !

Ingredients :

Top round,  cut into scallop and pounded evenly  1/4 inch thin
Bread crumbs,
Egg
whole, whisked
Flour,
Kosher salt,
Black pepper,  fresh ground
Sour orange juice,
Olive oil,  to saute
Butter,  to saute
Eggs, whole, to fry

Method :

Season the beef and let marinade over night.
Next morning, bread the beef by dipping in flour, then egg, then bread crumbs.
Saute in oil until golden on both sides. When almost done, discard oil,
add butter and eggs and cook until bistec and eggs are done to your liking.
To serve, top bistec with fried eggs and sprinkle with chili flakes and cilantro or chives

Breakfast Of Champions # 11 ” Millefanti In Brodo Di Carne “

Usually  I have peppermint tea and bananas for breakfast,
but today that did not tickle my fancy at all. So I took refuge
in another one of my favorite breakfast (and  late night snack )
standby’s : An Italian variation of egg drop soup.
I fortified some great beef stock I had in the fridge by simmering
it for fifteen minutes with a good amount of garlic and ginger and seasoning
it with freshly grated nutmeg, kosher salt, cayenne and maggi seasoning.
The eggs I whisked with parmesan cheese, flat leave parsley, chives and nutmeg.
I fished out the sliced ginger and slivered garlic after simmering them for
15 minutes, then whisked in the eggs, immediately removing it from the heat
and drinking it as hot as possible.
Voilà ! Instant satisfaction  🙂

” Breakfast Of Champions ” # 10 – Tortilla Española

This  is without doubt one of my favorite potato dishes
and the good thing about it is that it tastes even better when you re-heat the leftovers.
Serve it as a substantial breakfast, as a snack, lunch, dinner or part of a buffet.
As for the ingredients, use potatoes and eggs for sure. Everything else is up to your fancy.
I have used seafood, chicken, ham, braised pork, any kind of sausage, mushroom, cheese,
any kind of vegetables, you name it.  Just make sure that if you plan to serve it
at room temperature, season it stronger as when you plan to serve it hot,
since the seasoning is not as prominent at lower temperatures.

” Breakfast Of Champions # 6 ” Farmers Omelette

Today I finally found time again to do a proper breakfast,
after a week of peppermint tea and bananas.
During the week I get up at 3.30am and after a usual sleep time
of 3 to 4 hours, my desire to cook a full meal is usually subdued a bit   😦
Not today ! So here we go:

” Farmers Omelette

Ingredients:

Eggs,                                whole, whisked, seasoned with salt and cayenne
Grape tomatoes,            whole
Asparagus,                      blanched
Carrots,                            blanched
Onion,                              julienned
Garlic,                              paste
Potatoes,                         blanched
Chorizo,                          thinly sliced
Chives,                             sliced  (fresh or freeze dried)
Butter                                (substitute olive oil if desired)
Parmesan,                       grated
Salt,                                   to taste
Cayenne Pepper ,           to taste

Method :

Sautee potatoes in butter (oil) until starting to change color,
add onion and saute until starting to brown.
Add garlic, saute until translucent, add all other vegetables
and seasoning and saute until heated through.
add eggs, cover tightly, lower heat and cook slowly until eggs are set.
to plate, invert onto serving dish, sprinkle generously with chives.
