Baby  bok choy – must be one of the best vegetables anywhere. I just love the looks, the taste and especially the texture. Of course, as far as the taste is concerned, there is not much of it’s own, so I usually add oyster sauce or fermented black bean sauce among other strong ingredients to bring out the best of these beauties 🙂

In case you wonder why I did not toast the sesame seeds –
I sometimes prefer the taste of un-toasted sesame, it is milder as if you toast them, – just a personal preference 🙂

If  this dish looks too spicy for you – relax 🙂
– The amount of chilies you can see in the pictures are good for my personal palette, but you should add the type (heat level) and quantity you prefer. I suggest you add chilies which are slightly milder than you can tolerate, so that you can add more of them and get that rich, fruity capsicum taste which you can only get by biting into a whole, fried or sauteed chili.

Here  is a recipe sure to tempt you if you like to have a  tasty and exotic meal but do not have the time nor desire to prepare an elaborate, complicated meal, which is what happened to me today. I just finished my first week of work after two months of vacation, so my spirit and energy has been slightly drained  this weekend. After cleaning the apartment, taking care of Bella, doing the shopping and a bunch of other chores,  cooking an elaborate meal was not exactly at the forefront of my mind. Eating a good meal on the other hand ……..
So here is what I came up with. This was very delicious, yet simple and easy to prepare. You will be able to easily knock this out in about 15 minutes 🙂

Szechuan Chicken & Fan


Since  breakfast was substantial and relatively late, lunch was late as well and will have to do for both lunch and dinner. Well, maybe there is a midnight snack on the horizon, we’ll see 🙂
The red jalapeno peppers I used here were exceptionally fruity and only mildly hot, so they were perfect for my taste and heat tolerance. Please adjust the amount and heat level to your own taste or eliminate the chilies altogether and replace with mushrooms, water chestnuts, bell peppers, green peas, carrots or whatever else strikes your fancy.

” Ojinguh Bokkeum ” Korean Style Stir Fried Squid

Traditionally
  in Korea , one uses much larger squid and scores the surface in a criss cross pattern. I personally prefer the smaller squid I used here today, the texture is so much different and, dare I say, better.  It is  a simple stir fry preparation.  Please make sure your pan is very hot and please don’t boil your squid.  A few short seconds  simmering in the sauce will suffice. I also suggest that you mix all the Ingredients for the sauce and check the taste before you add it to the pan so your squid get in and out of the pan as quickly as possible. >

Ingredient’s :

Squid,   cleaned, cut to size, including tentacles
Chilis,   medium hot, sliced
Scallions,   cut into one inch length
Onion,   cut into paysanne
Garlic,   paste
Ginger,   grated
Oyster sauce,
Soy sauce,
Sesame oil,
Chili flakes,
Peanut oil,
Sesame seeds,
Sriracha,
Ketchup, (for color and a touch of sweetness)
Kosher salt,
Cayenne pepper,


Method :

Season all vegetables and squid with salt and pepper. Saute onion , garlic and ginger until fragrant, add vegetables, saute for a few second, add squid, saute for a few seconds. Add sauce, bring to a simmer, remove from heat at once. Adjust seasoning if necessary. Serve with rice, sprinkle with toasted sesame seeds.

This  is one of the dishes I could eat three times a week without getting tired of it anytime soon.
Breakfast, lunch, dinner, snack. Feed me anytime with this stuff and I’ll be happy 🙂

Ingredient’s :

Chicken wings,
Bok choy,   cut into large pieces
Red peppers,   cut into triangles, keep stems and leaf’s seperate
Dry shiitake mushrooms,   soaked in warm water
Onions, large diced
Garlic,   paste
Ginger, grated
Peanut oil,
Chicken stock,
Sherry wine,
Oyster sauce,
Hoisin sauce,
Soy sauce,
Sesame oil,
Kosher salt,
Cayenne pepper,

Method :

Saute seasoned wings in peanut oil until almost cooked trough. Remove from heat to absorbent paper. Saute onions, peppers, bok choy stems, garlic and ginger until fragrant. Add sauces and sesame oil, wings, shiitake, scallions and bok choy leaves. Mix well, serve with fan.  (chinese steamed rice)

Pigs Trotter In Fermented Bean Sauce

Pig’s Feet.  Patitas.  Manos de cerdo.
Pigs Trotters.  Schweine fuesse.
Prepared in a stew, pickled, boiled, in a aspic, hot, cold.
.
You name it, I love it. On the weekend I have increased my repertoire by yet another version, this one being my new favorite. The preparation is minimal and the final outcome is easily controlled by your final adjustment (or lack thereof)  of seasoning. Blanch trotters in salted water. In a good sized pot, add the trotters, water, soy sauce, sriracha, oyster sauce, fermented black bean sauce and sesame oil, diced chilis, diced onions. Bring to a boil, turn down to a simmer and cook until trotters are very soft but not falling apart. Remove trotters. The cooking liquid should have reduced and slightly thickened. If still too liquid, reduce further until desired texture is achieved. Strain. Add some more diced chilis for color and simmer for two minutes. Adjust seasoning to your liking. Return trotters to sauce and reheat. To serve, sprinkle with sliced scallions.

Udon, Seafood & Bok Choy

As far as I am concerned, all noodles could be udon noodles.
I just love them in any prep variation, be it with seafood, beef,
mushrooms, in a soup, sautéed, stir fried, any which way will do it for me 🙂

Ingredient’s :

Udon noodles,   fresh, from your Asian market
Mixed seafood,  any type you prefer
Baby bok choy,
Onion,   sliced
Cilantro,   coarsely chopped
Garlic,   paste
Ginger,   grated
Soy sauce,
Sherry,
Sriracha,
Oyster sauce,
Sesame oil,
Chili oil,
Lime juice,
Peanut oil, to saute

Method :

Saute seafood in very hot peanut oil, remove onto absorbent paper. Add onion, garlic and ginger and saute until translucent and fragrant. Add noodles, bok choy, soy sauce, oyster sayce, sriracha and a bit of sherry wine and saute until noodles are heated trough. Remove from heat, add seafood and sesame oil, mix well. To serve, drizzle with lime juice and chili oil, sprinkle with cilantro.

Note:
As you can see from the mis en place picture, I used inexpensive  (but nevertheless good) mixed seafood since this was only a go-between snack. For a more elegant and important meal, use large prawns, scallops, lobster, mussels, etc. However, the taste of the dish and the texture of the noodles should be satisfying either way.

Usually  I am not a big fan of fruit in my savory dishes,
but here it just seemed to be the right thing to add, and
it made the taste so much more rounded.
The mandarins were a bit on the acidic side, not very sweet,
I think that’s what made it at the end. Very enjoyable dish  🙂

Ingredient’s :

Chicken Breast,  wing separated, cut into large strips
Bok choy,  cut on the bias
Mandarines,  peeled, segmented
Walnuts, shelled, halved
Chilies,  finely sliced
Cilantro,  coarsely chopped
Sesame seeds,  toasted,
Chicken stock,
Kosher salt,
Corn starch,
Garlic paste,
Ginger,  grated
Soy sauce,
Sriracha,
Oyster sauce,
White wine,
Sesame oil,
Peanut oil,  to saute

Method :

Silken chicken by mixing corn starch,
egg white and water with seasoning and chicken.
Saute chicken wings until almost done, add breast
strips and cook until golden and 3/4 cooked.
Remove chicken, set aside. Sautee bok choy,
add garlic, ginger, chilies, walnuts and mandarines.
Deglaze with a bit of chicken stock and white wine,
simmer for one minute only. Remove from heat,
add the chicken, sprinkle with sesame seeds and
serve with soy sauce and chili sauce.
