Guacamole  
Ingredient’s :

Avocado,   diced
Lime,   juiced
Fresh chilis,    diced
Cilantro,   coarsely chopped
Garlic,   paste
Salt,

Method :

Mix all ingredients until guacamole has the texture you desire.
The more you stir, the more the avocado breaks down and the
guacamole becomes smoother, less chunky.

Guacamole, Salame & Pita

Yesterday  after work I did not feel like cooking,
so I made do with a little snack and a bit of merlot in the back by the lake.
Life could be a lot worse  🙂

Ingredients :

Mini pita breads,
Salame,  finely diced
Olive oil,  to saute

Avocado,  diced
Chilis,  finely diced
Red radish,  finely diced
Lime,  juiced
Garlic,  paste
Cilantro,  chopped
Kosher salt,
Olive oil,
Sour cream,

Method :

Saute the salame in a bit of olive oil .
Fill a teaspoon full into the pita pockets.
Mix the guacamole ingredients, season with salt.
To serve, place the guacamole in center of plate,
surround with the stuffed pita pockets, top with
sour cream and sprinkle with cilantro.

While I was eating I watched these two guy’s.
They did not move for about an hour, until the sun was down.
Not very exciting, but pretty and nice to see  🙂

” Breakfast Of Champions ” # 9 – Quesadillas & Scrambled Eggs

Saturday –
Sleeping in, letting Bella out the back door instead of walking around the block at 4.00am, watching the news and a movie at 7.00am, how wonderful.
The crowning moment of the morning, as usual,  is having a “breakfast of champions”,  while watching a good movie and knowing that for two day’s the world consists of joy and tranquility.
This morning I fancied Quesadillas, scrambled eggs with bologna, guacamole, pickled cucumbers and scotch bonnet sauce. (The movie – Blue Velvet)

” Breakfast Of Champions ” # 7 Hearty Sandwiches

School was cancelled today,
Although the message did not reach me, so I got up at 3.00am anyway.
I got to the school at 5.00am. Around 6.00am I was wondering why nobody
showed up, so I called my boss. I was back home at 6.30am, HUNGRY !
So there  I was, hungry and ready for a good breakfast and a movie     🙂

Hot peppermint  tea, , yoghurt, vanilla ice cream;
Grilled rye bread, spicy guacamole, tomato, brie with black pepper;
Grilled rye bread, spicy guacamole, tomato, aged asiago, chili flakes;
Grilled rye bread, spicy guacamole, tomato, genoa salame, chives;

Life is Good !

” Healthy Mac & Cheese and Guacamole “

“Healthy”  mac & cheese ?  Why not, it’s got veggies  🙂
Well, there you have it. It all depends on how you look at things.
But honestly, what’s wrong with a good meal of pasta, cheese, cream
and vegetables ? Nothing ! Just don’t do what I did :
Eating too much of it at one time. ( The pic’s of the individual portion
should indicate a proper portion for the health- and weight- conscious).
Everybody else : Just dig in and enjoy.

Life is too short to feel miserable about thing’s that make you feel good!

Ingredient‘s :
Pasta:

Ziti,                          cooked al dente
Carrots,                   blanched
Broccoli,                 blanched
Celery,                     finely diced
Garlic,                     paste
Whip cream,
Whole egg,            whisked
Salame,                  diced
Sharp cheddar,    shredded
Parmesan,            shredded
Brie,                        finely diced
Salt,                        to taste
cayenne,                to taste
Chili flakes,          to taste
Maggi,                   to taste
Butter

Guacamole :

Avocado,               diced
Lime,                      juiced
Fresh chilis,         finely sliced
Cilantro,                coarsely chopped
Garlic,                    paste
Salt,                        to taste
Cayenne,               to taste

Method :
Pasta :

Butter a ovenproof casserole generously with butter.
Mix all ingredients except the chili flakes and half the parmesan.
Fill casserole to the rim, sprinkle with parmesan and chili flakes.
Bake until set and crust is golden. Serve with Guacamole.

” Whole Sauteed Fish & Guacamole “

Last nights great dinner :

Whole sauteed fish & guacamole

Freshly caught fish, seasoned with salt, pepper and lime juice,
lightly dusted with a mix of AP flour and corn starch,
slowly sauteed in olive oil, some onions and garlic added towards the end.
I had some grape tomatoes laying around, so in the guacamole they went.
Three medium sized fish were just the right portion for Bella and I   🙂

” For Offal Lover’s Only ! “

Friend’s, by now you have probably realized that some of my recipes and / or pictures
are of food which is a bit outside the mainstream. ( Some of my articles as well ? )
Yesterday I came across this article in the huffpost which reminded me again how
far most of our young “colleagues” and their guest’s / client’s in the culinary world
have moved away from the well rounded professionals we oldtimers were trained to be.
It praised the new generation of inventive and adventurous and oh so clever chef’s for
using the whole animal. WOW!
When I apprenticed in the sixties back in Germany, we were used to getting delivered
the whole animal, or if this was impractical because of it’s size and weight, a half  (veal,
pig, stag, boar) or a quarter (beef). Fresh game was always  dropped off whole by
the village hunter, and two four times a year we slaughtered our own pig’s which we
raised mostly on food scrap’s from the restaurant. So, on most restaurant’s menu’s
you wood find cut’s from ALL part of the animals. From snout to huff and tail and just
about  anything in between was used for a well rounded menu, at small country inn’s
all the way up to five star restaurants.
So,  in this spirit, here is my take on Gizzards :

” Fried Spicy Gizzard’s, Guacamole & Totopos ”

Simmer the cleaned gizzards in red wine, garlic, salt and cayenne pepper until tender. Strain, dry.
Season with salt, cayenne pepper and garlic powder and fry until the edges become crisp.
Don’t fry too long or they become dry and tough. Season and fry the onions the same way.
To serve, sprinkle with cilantro and chili flakes.

Because I served these with guacamole, I did not need a dipping sauce .
If you want to use a dipping sauce, try this:
Soy sauce with scallions, lime juice, sriracha and a bit of rice wine and sugar.     🙂

” Pork Belly Tacos “

Híjole ! Que sabroso !    🙂 

This is one of my versions of pork belly tacos. I like the texture and taste better
than the usual carnita preparation. Simmer the belly slowly in salted water until
tender, then saute in olive oil with garlic and onion.
When golden brown, remove from heat and add sour orange juice. I also used
sour orange juice together with olive oil and salt and pepper for the salad dressing.
