Black Pepper

“Saure Nierchen ” ( Sauteed Sour Kidney’s )

Another 
beloved dish from my childhood.
This was a very popular “Gericht” in southern Germany,
available in most  “Gasthaus“,  and  “Restaurant‘s”
Whenever my butcher has them fresh, I buy one and
either cut it lengthwise in half and grill them, simply
seasoned with kosher salt and freshly ground black
pepper, or I make myself  “Saure Nierchen”. Usually
I’d serve them with any type of pasta and any type of salad.
In this case , I made spaghetti and red beet salad to go with
the kidney‘s. Here it goes :

Ingredient’s :

Kidney,                                 beef, veal, lamb or pig
Onion,                                  diced fine
Demi glace,
White wine
White wine vinegar,         to marinade
White wine vinegar,         to taste
Roasted garlic puree,        to taste
Kosher salt,                         to taste
Cayenne pepper,                 to taste
Oil,                                         to saute
Butter, to saute

Method :

Clean kidneys and cut into slices.
Rinse under running water for 20 minutes.
Strain, cover with vinegar and store in refrigerator for
twelve hours, Strain, discard vinegar. Rinse with cold water,
pat dry. Saute kidney’s in very hot oil until golden brown, still
medium inside. Remove onto rack (you don’t want the juices)
Saute onions in butter, deglaze with the white wine. Add the
demi glace, garlic, vinegar, salt and pepper. Simmer until well
combined. Remove from heat, add kidney’s and serve.

Ingredient‘s :

Bologna,                cubed
Asiago cheese,     cubed
Eggs,                       hard boiled, diced
Onion,                    diced
Roasted garlic,     paste
Scallion,                sliced
Salt,                        to taste
Black pepper,       freshly ground, to taste
Dijon mustard,    to taste
Olive oil
Vinegar

” Sauteed Chicken, Potatoes & Vegetables “

Ingredient’s :

Chicken,             boneless, diced
Asparagus,        blanched, halved
Potatoes,            turned, blanched
Red peppers,     cut into triangles
Onions,              diced
Garlic,                 paste
Scallions,           sliced
Peanut oil,         to saute
Salt,                     to taste
Black pepper,    freshly ground

Method :

Saute chicken until golden brown but still juicy.
Remove to absorbent paper, reserve. Saute potatoes
until lightly browned, add garlic, onions, peppers and
scallions and saute until garlic becomes fragrant.
Remove from heat, add chicken and seasoning, mix well.
To serve, sprinkle with chopped parsley.

” Roasted Garlic – The Top Of The Food Pyramide ? “

By now you have probably realized that I add garlic to just about
everything,  maybe with the exception of vanilla pudding and fruit salad   🙂
Here a quick instruction how to quickly and easily do this
wonderful concoction which will enhance so many dishes.

Cut the top of a heads of garlic, drizzle with duck fat or olive oil,
sprinkle with kosher salt and wrap airtight in alu foil.
Roast in a 400 degree oven for one and a half hours. Let garlic cool in foil.
When cool, unwrap and squeeze garlic into bowl.
If you made a large amount to be frozen, mix with some oil so that it does not
freeze rock solid and you are able to remove small amounts at a time.
Pack into sealable bag and freeze.
This can be used in any dish which calls for garlic, but it is also great to just spread on
a grilled bread of any kind and sprinkle with kosher salt and freshly ground pepper🙂

” Mock Pappardelle, Chorizo, Asparagus, Carrots & Gorgonzola “

My dilemma is:
I love pappardelle, but I seldom make fresh pasta
at home and I have never seen pappardelle on a store shelf,
at least not here in South Florida. The solution?
Use lasagna sheets. Break them into irregular shapes before
you cook them. The result was very satisfying for me and I will
resort to this many times to come, if, for whatever reason, fresh
pappardelle are not available or impractical to make from scratch
at the time.  ( For whatever reason ) .
Don’t knock it before you try it !      🙂

Ingredients :

Pappardelle,                  cooked al dente, strained  (or substitute pasta)
Chorizo,                          thinly sliced
Asparagus,                     blanched
Carrots,                           blanched
Gorgonzola,                   coarsely crumbled
Garlic,                              paste
Black Pepper                  freshly ground, to taste
Salt,                                  to taste
Olive oil

Method :

Saute garlic and chorizo in olive oil until garlic becomes translucent,
Add all other ingredients except gorgonzola,  saute until all ingredient’s
are well combined. To serve, top with crumbled gorgonzola.

” Breakfast Of Champions ” # 2

” Rigatone Carbonara “, with tomatoes and Basil

My version of  “Carbonara” :
Wisk 2 egg yolks and 1 whole egg with 1/2 cup milk,
2 tbsp parmesan, kosher salt and freshly ground pepper to taste.
Saute 3 cup’s rigatone in butter (use olive oil if you prefer), until
pasta becomes lightly crispy on a few spots.
Add egg mixture, tomatoes and chiffonade of basil and cook
until egg’s start to set. Share with a loved one .

” Flatbread & Shrimps “

Minutes to prepare         (I used store bought flatbread)
Hours of satisfaction     🙂

Simmer shrimp in water with salt and lemon juice until just done.
Schock in ice water. Remove tails except for 3 shrimps, for decoration.
Dice peppers and chili. Chop cilantro.
Marinate shrimp, peppers and chili with lemon juice, salt and pepper.
Heat the flat bread on both sides under your broiler, adding some more char if you like.
Brush lightly with olive oil and sprinkle with Kosher salt and freshly ground black pepper.
Add shrimp salad to flat bread, drizzle greek yoghurt and sriracha on top.
Sprinkle with cilantro and top with tail-on shrimp.  EAT !
