Sauteed cowboy steak medium rare. Spinach sauteed in duck fat with freshly grated horseradish, bacon, garlic and onion. Very thick cut slice of sourdough bread to soak up all the juices. Scotch bonnet & garlic compound butter to give it a bit of a kick.

Spinach, Potato, Sausage & Cheese Casserole

This  is such a versatile dish. Every ingredient can be replaced with a substitute without losing any of the complexity of texture and taste.

Spinach : Asparagus, cabbage, corn, broccoli, carrots, beets, etc.
Potato : Sweet potato, mashed potato, pasta, rice, etc.
Asiago : Gorgonzola, parmesan, cheddar, brie, pepper jack, stilton, etc.
Sausage : Bacon, chicken, seafood, beef, lamb, game, etc.

Saute onion, garlic and sausage in butter, add spinach, wilt. Add blanched potatoes, cheese, milk, salt and pepper. Bake at 375 F until golden brown, about 45 minutes. Let set for 30 minute before serving.

My Kind Of ” Finger Food “

Sunday night and monday evening was very cold here in Miami, so cold in fact I actually had to turn on the central heating system in order to be comfortable in the house. So, in order to help with the comforting process, I prepared two dishes which aided greatly in the warming of soul and belly :

Sunday afternoon :
Smoked pig’s tail’s”
with fresh horse radish and potatoes fried in rendered duck fat “.

Monday afternoon :
Spinach, Potato, Sausage & Cheese Casserole”
(I’ll post that in the next few day’s).

Simmer the smoked pigs’ tails in salted water with kosher salt, lot’s of garlic and cayenne pepper until very tender but not falling apart. Grate the horseradish very fine and mix with salt and lemon juice. Fry the potatoes in rendered duck fat, starting with cold fat and slowly increasing the temperature to 375 F. The potatoes will be creamy on the inside and crispy on the outside. Add the sliced chilis and onions for the last few seconds of frying. Remove to absorbent paper and sprinkle with sea salt.
Enjoy a great , simple meal;  “Finger food”  at it’s finest  🙂

Breakfast Of Champions # 14 ”Ham & Cheese Sandwich”

Sautéed  Wrap With Ham, Sharp Cheddar, Pecorino Romano, Egg, Spinach & Sriracha.

Saute spinach with onions and garlic paste in butter.
Cook eggs and ham in butter.
Sprinkle grated pecorino on wrap, top with ham,
sprinkle with sharp cheddar, top with spinach,
sprinkle with more pecorino. Top with egg.
Drizzle with sriracha. Roll into tight cylinder,
Enclose tightly with aluminium foil to prevent roll
from opening while sautéing. Cut into thick slices.
Saute slowly in butter until the cheese inside the roll
has melted and a golden, crispy crust has formed on
top and bottom.  Enjoy with a glass of ice cold milk.
What a great way to start the day  🙂

Pork Medallion “Almondine”

Yesterday’s  late lunch, pork medallion in almonds, creamed spinach, sauteed grapes.
I knew it was turkey for dinner at my friend’s house, so no turkey at home. I did make and take the sidings though, creamed spinach, mashed sweet potatoes, gravy and walnut-cranberry stuffing.
Anyway,  here is lunch. Enjoy   🙂

Ingredients :

Pork medallion,
Almond‘s,  slivered
Bread crumbs,  fine
Egg,  whole, whisked
AP flour,
Kosher salt,
Cayenne pepper,
Peanut oil,  to saute

Spinach,  washed, stems removed, chopped
Onions,  diced
Garlic,  paste
Heavy cream,
Kosher salt,
Cayenne pepper,
Nutmeg,  grated
Butter,  to saute

Grapes,
Butter,  to saute

Season pork with salt and pepper. Dipp in flour,
egg and mixture of half breadcrumbs, half almonds.
Saute slowly to make sure almonds don’t get to dark
and bitter. However, oil must be hot enough to prevent
Breading to get soggy.

Saute onion and garlic until translucent, add cream
and reduce until thickened. Add spinach and seasoning,
cover with more cream and simmer until cream has reduced
again and texture is creamy.

When pork is done, remove onto absorbent paper.
Add a bit of butter and grapes to the pan, saute a few seconds
until grapes are warm. Spoon butter and grapes over pork.
