Sauted Scallops & Shrimp In Whole Grain Mustard Cream

Tonight  I wanted to have something comfortable, belly warming, traditional, for dinner.  I realize that seafood in mustard sauce might not sound traditional to some younger folks out there, but when I was a youngster, fish and other seafood in various types of mustard sauce was a commonly found item on many restaurants friday menu. Even at home, “Fish mit Senfsauce” was a typical friday dinner item, usually served with “Salzkartoffeln” (boiled potatoes).

Sauted Scallops & Shrimp In Whole Grain Mustard Cream

Ingredients :

Scallops,
Shrimp,   shelled & deveined, tail on
White wine,
Heavy cream,
Whole grain mustard,   (I prefer Maille)
Butter,   clarified
Butter,   whole
Sriracha ,
Sea salt,
Lemon juice,

Method :

Season scallops with sea salt and saute in clarified butter until halfway cooked. remove from pan, set aside. Season shrimp with sea salt and sriracha sauce and saute in whole butter until halfway cooked, remove from pan, set aside. deglaze pan with white wine, add heavy cream and juices from the cooked shrimp and scallops and reduce until a light sauce has formed. Remove from heat, add mustard and lemon juice, check seasoning. Adjust seasoning if necessary. Return seafood to the pan, return to heat until heated through. Make sure you don’t let the sauce simmer anymore or your seafood will get tough and dry. Serve with basmati rice.

Ingredient’s :

2 cups self-rising flour, plus more for dusting
1 tablespoon sugar
1 dash of salt
1 1/2 cups heavy whipping cream

Method :

Stir together the flour, sugar, salt and cream and knead until the dough forms a ball. Turn the dough out onto a surface dusted with additional flour. Fold the dough in 1/2 and knead 5 to 7 times, adding just enough flour to keep dough from sticking to your hands. Gently roll out dough to 1/2-inch thickness. Using a 3-inch biscuit cutter coated with flour, cut dough into biscuits. Place on baking sheet coated with cooking spray, leaving at least 1-inch between each biscuit. Bake  at 375F for 10 minutes, or until golden brown.

Ingredient’s:

Pasta:   FlourEggSalt

Filling:  Boiled mashed potatoes, cream, egg, grated cheese, salt, cayenne pepper, roasted garlic paste

Sauce:    Butter, diced onions, garlic paste, finely chopped tomato, julienned salame, red wine, heavy cream, blanched baby carrots, salt, black pepper

Method:

Pasta:   Mix all ingredients, then knead into a pasta dough.

Filling:   Mix ingredients lightly without overworking the filling or it will become gooey.

Sauce:   Saute onions in butter until translucent. Add Salame and garlic, saute until fragrant. Add chopped tomatoes, and cream. Simmer until reduced and starting to thicken. Add wine, a bit of grated cheese and carrots, simmer for another few minutes.  Season with salt and black pepper. Add pasta, carefully mix. To serve, sprinkle with grated cheese and chopped parsley.

Pork Medallion “Almondine”

Yesterday’s  late lunch, pork medallion in almonds, creamed spinach, sauteed grapes.
I knew it was turkey for dinner at my friend’s house, so no turkey at home. I did make and take the sidings though, creamed spinach, mashed sweet potatoes, gravy and walnut-cranberry stuffing.
Anyway,  here is lunch. Enjoy   🙂

Ingredients :

Pork medallion,
Almond‘s,  slivered
Bread crumbs,  fine
Egg,  whole, whisked
AP flour,
Kosher salt,
Cayenne pepper,
Peanut oil,  to saute

Spinach,  washed, stems removed, chopped
Onions,  diced
Garlic,  paste
Heavy cream,
Kosher salt,
Cayenne pepper,
Nutmeg,  grated
Butter,  to saute

Grapes,
Butter,  to saute

Season pork with salt and pepper. Dipp in flour,
egg and mixture of half breadcrumbs, half almonds.
Saute slowly to make sure almonds don’t get to dark
and bitter. However, oil must be hot enough to prevent
Breading to get soggy.

Saute onion and garlic until translucent, add cream
and reduce until thickened. Add spinach and seasoning,
cover with more cream and simmer until cream has reduced
again and texture is creamy.

When pork is done, remove onto absorbent paper.
Add a bit of butter and grapes to the pan, saute a few seconds
until grapes are warm. Spoon butter and grapes over pork.

a simple, quick, delicious meal on labor day evening.

Ingredient’s:

Potatoes,                                 diced, blanched
Sharp cheddar cheese,         shredded
Bacon,                                      julienned
Onion,                                     diced
Garlic,                                      paste
Green peas,                             blanched
Heavy cream,
Chicken stock,
AP Flour,
Butter,
Salt,
Cayenne pepper

Method :

Sautee bacon, rendering fat, until crisp. Remove onto absorbent paper, reserve.
Add butter to bacon fat, add onion, garlic and flour. Saute until onion and garlic
are translucent without darkening flour. Add stock, whisk to avoid lumps and
bring to a simmer. Simmer for 10 minutes. Remove from heat, whisk in cheese
and craem until texture is smooth. Add potatoes, green peas, salt and pepper
and, while carefully stirring,  reheat until hot.
( You don’t want to mash up the potatoes and peas)
