“Easy Does It” # 5 – Cucumber, Dill & Sour Cream Salad

Although most of my followers are culinary professionals, there is also a large segment of followers who are just starting to enjoy cooking on a slightly higher than basic level. I have therefore decided to publish, under the moniker “Easy Does It“,  from time to time some very basic recipe variations of dishes which otherwise might seem complicated to some folks. I will break them down to the easiest, most simple instructions, so that those of you who are intimidated by elaborate recipes will be able to prepare these dishes properly, adjusted to your taste and liking, right from the get-go.

Salad made with cucumbers, sour cream or yogurt and dill is served in many countries, of course under  many different names but with basically the same ingredients. I grew up in Swabia in Southern Germany, were gurkensalat was part of many meals, either served as part of a mixed salad (salat teller) or by itself as accompaniment to a main dish. It is made with cucumbers (any type), salt, pepper, a dash of sugar, vinegar and either sour cream or yogurt, .

” Curried Pumpkin Soup With Carrots, Yoghurt & Ginger “

Last week I bought  some pumpkin at the grocery store.
I had planned to use it as side dish, but the days passed and the pumpkin just sat there.
So today when I felt like having a soup, curried pumpkin and carrot cream with ginger and chili oil came to mind. I have done this soup a few times in the past for privat dinners at home, and it was always a success with my friends and family.

“ Curried pumpkin and carrot cream with ginger and chili oil ”

Ingredients:

Pumpkin, peeled and deseeded

Carrots, diced

3  Banana, peeled and diced

Onion, peeled and diced

Ginger, grated

6  Garlic, chopped

Scotch bonnet hot sauce

Greek yoghurt

Curry powder

10 Cinnamon stick
11 Butter
12 Chicken or vegetable stock
13 Salt and cayenne pepper to taste

Method:

Sautee first 6 ingredients in butter until onions are translucent,
add curry and cinnamon and sauté for one minute.
add stock and simmer until vegetables are soft.
Mix in blender until smooth, add yoghurt and salt and Pepper to taste.

To serve, drizzle with more yoghurt and chili oil.

” What Would I find In My Fridge At 2.30AM? “

Well, this morning, I found this:

Perigord pate, frozen bread roll, arugula, greek yoghurt, chili. radishes, avocado, seasoning.
Stuff to make a decent vinaigrette.     🙂

Life is good ! (More so at 2.30 am)

” Corn Meal Crusted Cod Filet “

Tonight’s Dinner :

Cornmeal crusted cod fillet sauteed in butter,
greek yoghurt mixed with thai sweet chili sauce
and israeli couscous with vegetables.
