Coming home from work on a Friday afternoon and being hungry, but way too tired and listless to do much of anything (except lounging 🙂 ), the solution was this very quick, flavor- and texture bursting dish. Beginning to finish – less than 10 minutes.
Then on to enjoying a great meal and a wonderful, funny and sexy movie – John Torturros Fading Gigolo.

Sauteed Skirt Steak, Onion, Tomato & Peppers

Preparation :

cut trimmed skirt into squares

then cut ACROSS the grain, season with kosher salt and fresh ground black pepper

saute in garlic oil until rare, remove meat from pan, reserve

saute onion, scallion and chilies in garlic oil, season with kosher salt and fresh ground black pepper

add grape tomatoes, saute until tomatoes are heated through, add skirt, remove from pan

plate a thick slice of grilled sour dough bread

top with sauteed skirt and vegetables

There Is A Monster On My Plate !!!

My friend Peter was supposed to be here at 4.00pm for a late end of week lunch.
He had “ordered” (nicely requested) chicken cordon bleu and I was happy to oblige.
As soon as I got home, I took care of Bella, took a shower and started with my food prep.
Ten minutes later Peter cancelled. Rather than being upset about the late cancelation,
I welcomed the chance to make a real monster of a cordon bleu out of the ingredients I had prepared for two regular portions. Of course, I omitted the side dishes (fries and salad) after I had a good look of the size of this baby. Bella and I finished the whole thing and we were happy for it. Seems to me after all these year’s I finally figured out the proper size of a cordon bleu 🙂

: Top With Ham And Swiss Cheese

: Bread With Flour, Egg Wash And Bread Crumbs, Saute Until Center Reaches 161 F ( Carry Over Heat will Carry To A Safe 165F )

Sauted Rib Eye with Mushrooms and Taleggio Ca De Ambros stuffed Twice Baked Potato

I have only recently discovered “Taleggio Cheese”, and I feel sorry for myself to have gone 62 years without enjoying this marvel of Italian cheese making. I only know of one shop around here that carries it. It is one of my least favorite stores because it tries to be everything to everybody, which just does not work. But since a friend steered me to their cheese section, I have gone there at least once a week, just to get my fill of “Taleggio Ca De Ambros”
For this dinner, I have sauteed the steak in peanut oil, sauteed the mushrooms with diced onions and garlic paste in butter. I baked the potato until cooked through, then I removed the potato flesh from the shell, added kosher salt, sriracha, butter, sliced scallions, garlic paste and a generous amount of Taleggio. Then I put the mixture for half a minute into the microwave to soften the butter and cheese, mixed it all well and stuffed it back into the potato shell. Baked it in the oven for twenty minutes and – voilà – best twice baked potato ever 🙂

“Breakfast Of Champions # 15 ” – Scrambled Eggs…..

Don’t you just hate it when you go to bed real late because you don’t have to work the next day and you look forward to sleeping-in in the morning, just to have your sweet dreams shattered by your inner alarm clock at your regular get-up time (3.30am). Why does my inner alarm clock not work when I forget to set my electronic alarm or when there is a power-out during the night ??? Anyway, since I was up and was going to watch a movie ( Amour, by Michael Haneke ), a good breakfast was in order :

” Scrambled egg’s with naan, greek yogurt, Argentinian chorizo and sauted grape tomatoes, corn and peppers in herbed garlic butter ”

Good start for the last day of 2012 🙂

P.S.
Make sure you cook your eggs in the rendered chorizo fat after sauteing the sausages.
They’ll loose a bit of their bright color but they gain so much flavor 🙂
