This is my answer to a few request’s I received for unusual potato dishes.
If you use extra large potatoes as I have, I suggest that you bake them for two hours at 410 F. They will have browned slightly inside the skin and have a very different taste and texture than if you cook them only for the usual one hour.
Bon Appetit ! Life is Good !

Hans, you the best, I love your recipe’s, have tried them, I recommend them,
potential for some hotel specialty menu’s! I trust you are doing good, especially
with the loss of your wonderful wife. We have to cope with everyday lives, there are
no guarantees on what challenges we are faced with, each and everyday, and have
to accept what the good lord gives us. I want to believe that when we are gone
ourselves, that we will join our loved ones, where ever they may be, this will be a
gift that we will only realize, when we get there.
All the best,
Your friends in Texas, John & Elli R.Vicente

I will Chef. I guess it’s about time for my own blog. A very dear friend keeps encouraging me to begin blogging about what it is like following my life long dream of pursuing a culinary adventure and going back to school at 59 to do so. I really want to make a difference. I want people to enjoy my food, I want them to say uuuummmm when they taste my food. I want them to smile! It is basic home cooking. Do you think I am to late with my home cooking idea Chef?
