Dear Friends,I am happy to be back, able to post and enjoying to cook, eat and share my humble cuisine with you.
From 9/13th to 10/13th I spent a wonderful month in Germany and Spain, visiting friends and family and having a great time eating and drinking in the company of much-missed friends, most of which I had not seen for many years, as well as making new friends along the way 🙂 .
I also put time to good use to facilitate my return to Germany, where I plan to spend the remainder of my life with good food, good friends and (occassionally) good booze 🙂
I bought a car, started looking for a house, registrered my new address in Germany, etc, etc.
I also spend a long weekend in Spain, where my friends Gaby and Ralf own a Beautiful Spanish villa near the beach.
I had taken many notes and pictures to share my trip with y’all as soon as I’d be back in Miami.
However, the night before I got back, my beloved Bella was attacked and badly mauled by two loose-running rottweilers.
This caused both Bella and I to suffer tremendously, her physically, me psychologically, which eventually morphed into a full-blown breakdown of my well-being.
I was bed-ridden for a week, while trying my best to care for Bella (with the help of two great vet’s 🙂
Well, it has been 10 days now and I am happy to report that both Bella and I are on the way to recovery.
I assume that I am able to start posting my European experience starting this coming week, and that the unfortunate episode of Bellas attack will be but a bad memory soon.

And, on a lighter note:
When I was sick I did not have the strenght nor the will to cook every day. The first two day’s, I lived off apples and dry knäckebröd .
However, that did not provide me with the nutrition I needed to get back on my feet, so, during a spell of light improvement of my strength, I prepared a big pot of what must be the oldest, best-working and best-tasting remedy in the word:

“Chicken Noodle Soup With Veggies And Egg”.

After five days of this for both lunch and dinner (apples for breakfast), I am now feeling better and blessed with enough strength to take on my daily chores, including driving Bella to the vet daily, preparing my usual food, and keeping “ChefsOpinion” up to date.

Preparation :

- rinse 10 ea chicken tighs under cold running water
- add 4 qt of water with kosher salt and cayenne pepper to taste, bring to a simmer and cook until the chicken is cooked through.
- meanwhile, cook 1 lb dry pasta of your choice, drain
- cut 1 medium sixe white cabbage and 8 ea med size carrots into bite size pieces, add to the soup together with 1 tblsp garlic paste and 1/2 tsp dry oregano, simmer until carrots are tender, check/adjust seasoning
- add 1 raw eggyolk, 1/4 cup frozen peas and 1 1/2 cup pasta to a soup bowl
- top the pasta with 1 ea chicken tigh and enough soup to cover the pasta, sprinkle with chopped cilantro and grated parmesan (optional)

Oh … MAJOR sympathies (for you as well). I could never be a vet… I am SO distressed when I see an animal in any sort of pain 😦

Bella, You are one beautiful dog. Made my day just seeing that happy face. I’m so happy you both have survived your ordeal and are healing. The Lord is certainly good through everything.
Going to make some of that great sounding chicken soup later, just what we need on a crisp fall day.

Dear Hans and Bella, I as horrified to learn of you and Bella’s misfortune. Her wounds as shown here, are the worst I have seen on any animal. Most pets would not make it in cases such as this but with Bella and you caring for her, she had the strength to endure this attack, and with your caring and those of the medical professional, both Elli and myself are happy, that you are getting back to normal, and soon, back to Sunny Florida. Take care of yourselves, It would have been devastating if you had lost her, especially being in Europe, on vacation, and seeing the many friends and relatives that you both enjoyed very much. Have a safe trip home, and we all look forward to having you back on line, with your culinary delights, I know Bella will be very happy, to be back home in Miami again. I am so sorry for Bella and for you. You would not have been able to leave for your reconnaissance in “Yurp” had she not been making such a good recovery. Happily, and with good treatment and your care, you were able to leave with a quiet mind, enjoy yourself over here and to plan the next stage of your career and life journey
My apologies for the delay in reply, but I have been in Egypt, enjoying Middle-Eastern food (though not the lack of bacon) and Turkish coffee, drunk under the palm trees with cold water.

last time I was in Egypt was in 1977 for a job interview. I did not take the job (Sheraton Cairo), but I had a few good days there. I was also in Alexandria a few times. Loved the food and the Hukka’s 🙂
