Clean, crisp, colorful, falvorful, fresh and uncomplicated. Escoffier himself would rave about the understated simplicity of it.
I’m thinking of something in Bartlett Pears for dessert Chef, something highlighted by a chilled Creme Fraiche. What do you think?
