Some folks will cry out about the title of this dish, and (maybe) rightfully so.
We don’t all prefer the same version of a dish, and even if we do, sometimes we long for a different rendition. So, pronouncing a dish the best is obviously very biased and only correct when applied to our own tastes and preferences.
Alas, I can truthfully say that this particular combination is my all-time favorite.
As I cut into the egg and its soft yolk mixes with the spinach and the crisp bread while the overall mild flavor gets a kick from the relish, something almost magical happens and I find the result wonderfully delicious with a flavor and texture that’s just heavenly and unique 🙂

Preparation :

- Brush sliced focaccia with garlic confit/paste
- sprinkle with freshly grated asiago cheese
- Gratinated Garlic/Cheese Focaccia
- meanwhile, saute 2 ea medium size onions in 4 oz whole butter
- add 1/2 lb fresh spinach
- season with a pinch of grated nutmeg, 1 tblsp asiago cheese and kosher salt and cayenne pepper to taste, saute until the spinach starts to wilt, add to a warm serving dish
- Caramelized-Onions Spinach
- add the amount of VERY FRESH eggs you want for your meal to simmering water, seasoned lightly with salt and vinegar, cook for 3 minutes (or as you prefer)
- plate the bread on top of the spinach
- add the eggs and sweet chili relish ; serves 1 to 3 🙂

What a beautiful and tempting picture is that of the freshly sliced-open egg! I would certainly go for the onions and spinach. I am not sure that I would go for the focaccia or the relish, or that spinach would bee (for met, anyway) a breakfast dish. I think that, for a light lunch or an evening meal after a long lunch, it would be excellent. As you say, in effect, you pays your money and you takes your choice, so I would be more than open to trying different versions, starring the spiced spinach and onion, with that three-minute egg in the leading rôle!
