Lately, I enjoy a dose of Vitamin T (Tacos) quite often, mostly the soft wheat tortillas rather than the crispy corn variety.
Part of the joy and satisfaction of dining on home-made tacos is the assembly, to use the best and freshest stuff you can afford and have the time to prepare (homemade tortillas vs store-bought, homemade salsa vs store-bought, and so forth) and add to each tortilla exactly the amount of ingredients you fancy at that moment – more or less spicy heat, more or less beans, more or less cheese, more or less protein, etc.
Each taco can be as different or as similar as you feel like while you assemble it; every moment of the meal you are the one in charge and the one who controls the outcome of your choices 🙂

We do this dish with halibut “fingers.” (Even though halibut doesn’t have fingers). 😉

Excellent preparation with Taco’s, living in Texas, we do love our Taco’s, and we can get them in many different variations. Assembly as you say, can be your own variations, and based on your own taste buds. One can be very creative with Taco’s, here in Texas, they take on a flavor of what part of Texas you come from. We make our own at home too, have tasted many through the various food outlets, not the best, some good, some stingy with the make up of the Taco itself, not faulting the many good Taco Restaurants in this great state, just my own opinions. Your Vitamin “T” is excellent, offers some great combinations of ingredients and flavor, I would certainly put your “T” Taco, at the top of my list, and add some good Texas flavours too.
